BROWN-SUGAR BUTTER
Alex Porter, chef at Norma's at Le Parker Meridien Hotel, concocted an incredible Chocolate Banana Waffle Napoleon. In his recipe, bananas are sauteed in this sweet butter and layered onto waffles; the whole creation is then topped with chocolate.

- In a small bowl, combine butter and brown sugar with an electric hand-mixer until light and fluffy. Add cream, and whisk until creamy and well combined.
COCONUT WAFFLES WITH CHOCOLATE MAPLE SYRUP AND BANANA
Steps:
- For the waffles: Whisk together the flour, sugars, baking powder and salt in a medium bowl. Whisk together the milk, coconut milk, butter, oil, vanilla and eggs in a medium bowl. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the coconut. Cover and let rest in the refrigerator for 30 minutes.
- For the syrup: Meanwhile, bring the syrup to a simmer over low heat in a small saucepot. Add the chocolate and salt and remove from the heat. Whisk it until it becomes smooth. Keep warm.
- Heat a waffle iron according to manufacturer's directions. Brush the grates with melted butter. Ladle about 1/3 cup of the batter onto each grate. Close the cover and bake until golden brown. Serve the waffles topped with the bananas, drizzled with syrup and garnished with a sprinkling of toasted coconut.
BANANA CHOCOLATE CHIP WAFFLES
Eat for breakfast sprinkled with powdered sugar, or top it with a scoop of ice cream for dessert. Recipe came with my Cuisinart waffle maker. Recipe called for 1 2/3 cups milk, but I ended up adding at least another 1/3 cup.

Steps:
- Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.
- Let batter sit 5 minutes before using.
- Preheat waffle iron.
- Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).
- Serve immediately.

CHOCOLATE-BERRY NAPOLEONS

- Roll out 1 puff pastry sheet into a 10-inch square; cut into 2 1/2-by-5-inch rectangles (8 total). Sandwich between 2 unlined rimmed baking sheets and bake at 400 degrees F until golden, 30 minutes. Brush with melted butter and sprinkle with granulated sugar. Cool. Cook 1/3 cup milk, 2 tablespoons sugar and 1 tablespoon cornstarch in a small skillet over medium heat, whisking, until thick. Stir in 2 ounces chopped semisweet chocolate; cool. Fold in 1 1/2 cups whipped cream. To assemble, layer 2 pastry rectangles with the chocolate cream and raspberries. Dust with confectioners' sugar.
