This chocolate banana breakfast bake is so addicting, you'll have a hard time sharing it. The caramel combined with the banana custard and brioche bread makes for a rich and perfectly gooey bite that'll have you coming back for more.

2 bananas, mashed
3 large eggs
1 cup whole milk
½ cup heavy cream
¾ cup sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
1 tablespoon vanilla extract
12 cups brioche bread, 1 loaf (day old bread)
1 cup chocolate chips
¼ cup pecan, chopped
8 tablespoons unsalted butter, 1 stick
1 cup brown sugar
½ teaspoon kosher salt
1 teaspoon vanilla extract
2 tablespoons pecan, chopped
3 bananas, halved lengthwise and crosswise

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Make the banana custard: In a large bowl, mash the bananas. Add the eggs, milk, and heavy cream and stir to combine.
  • In a medium bowl, combine the sugar, cinnamon, nutmeg, and vanilla and mix with a fork.
  • Add the sugar mixture to the custard mixture and stir to combine.
  • Add the cubed bread, chocolate chips, and pecans to the custard mixture and toss well to coat. Let soak for 10 minutes.
  • While the bread is soaking, make the caramel base: In a medium microwave-safe bowl, microwave the butter for about 2 minutes, stirring every 30 seconds, until melted and hot.
  • Add the brown sugar and stir to combine. Microwave for another minute, stirring halfway, until the sugar is mostly dissolved.
  • Add the salt, vanilla, and pecans and stir to combine.
  • Pour the caramel into the bottom of a 9 (22 cm) x 13-inch (33 cm) baking dish and spread evenly. Arrange the bananas, cut side down, over the caramel.
  • Spoon the brioche-custard mixture evenly over the bananas.
  • Cover with foil and bake for 30 minutes, then uncover and bake for 40-45 minutes longer, until the custard is set. Remove from the oven and let cool for 5 minutes.
  • Run a knife around the edges of the baking dish to loosen the bake, then invert onto a rectangular serving dish. Do not wait any longer than 5 minutes or the bake will stick to the pan.
  • Slice and serve.

1 ripe banana
75g milk chocolate , chopped
4 slices crusty white bread from a round loaf
3 medium eggs
1 tbsp double cream
1 tbsp maple syrup
1 tsp vanilla extract
25g unsalted butter
ground cinnamon , to serve
icing sugar or extra maple syrup, to serve (optional)

Steps:

  • Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine.
  • Lay 2 slices of bread on the work surface. Divide the chocolate and banana mixture between them, spreading it almost to the edges. Top each with a second slice of bread and press together to make a sandwich.
  • In a shallow dish, whisk together the eggs, double cream, maple syrup and vanilla extract. Melt the butter in a large frying pan over a medium heat. Lay one sandwich into the egg mixture to coat one side, then carefully flip it over so that both sides of the sandwich are soaked in the egg. Lower the sandwich into the hot frying pan and cook for about 1 min on each side, until golden brown and the chocolate has started to melt. Repeat with the second sandwich. Cut the sandwiches in half to serve and sprinkle with a little ground cinnamon and either icing sugar or extra maple syrup if you're feeling super-indulgent.

4 slices bread
2 tablespoons peanut butter
3 tablespoons pre-packaged chocolate frosting
1 banana, sliced into 1/2-inch slices
1 egg
1/2 teaspoon vanilla extract
2 tablespoons half-and-half
1 tablespoon margarine
powdered sugar

Steps:

  • Spread 1 tablespoon of peanut butter each on two slices of bread. Spread 1 1/2 tablespoons of frosting each on the other two slices of bread.

Chocolate Sauce
125 ml (1/2 cup) 35% cream, hot
115 g (4 oz) dark chocolate, coarsely chopped
Caramelized Bananas
4 bananas
125 ml (1/2 cup) sugar
30 ml (2 tablespoons) water
French Toast
3 eggs, lightly beaten
375 ml (1 1/2 cups) milk
60 ml (1/4 cup) sugar
8 slices white bread
60 ml (1/4 cup) butter

Steps:

  • Chocolate Sauce
  • In a bowl, pour the hot cream over the chocolate. With a whisk, stir until smooth. Set aside.
  • Caramelized Bananas
  • Cut each banana into two sections and then in half lengthwise.
  • In nonstick skillet, melt the sugar and water and cook until golden brown. Add the bananas and coat them with the caramel. Close the heat. Set aside.
  • French Toast
  • In a large bowl, combine the eggs, milk and sugar with a whisk. Set aside.
  • Spread the banana mixture on four slices of bread and cover with the remaining bread slices. Dip each sandwich, one at a time, into the egg mixture, letting them soak thoroughly.
  • In a large nonstick skillet, brown the sandwiches on both sides in the butter. Cut each sandwich in half diagonally. Drizzle with the chocolate sauce.

4 eggs
2 cups whipping cream
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon orange, zest
2 slices day-old white bread, 1-1/2 to 2 ",thick
1 large banana, mashed
2 tablespoons butter
3 tablespoons semisweet chocolate

Steps:

  • Preheat oven to 400 degrees F.
  • Whisk together eggs, cream, spices and orange zest.
  • Slice bread in half horizontally without cutting all the way through the whole slice of bread.
  • Stuff each pocket with half the mashed banana.
  • Heat skillet over medium heat.
  • Melt butter to cover bottom of pan.
  • Dip bread slices into egg mixture, generously coating each piece.
  • Place in the skillet and fry until browned.
  • Flip over and brown other side.
  • Remove from pan and place in oven for 10 minutes.
  • Melt chocolate in a double boiler.
  • Remove French toast from oven.
  • Cut each piece of French toast on the diagonal and drizzle melted semisweet chocolate over them.
  • Dust French toast with icing sugar and serve with orange slices as garnish or serve with a fresh fruit salad.
