CARAMEL AND CHOCOLATE APPLES

- Insert lollipop sticks into core of apples.
- Heat caramel until it becomes liquid. (Can use stove top or microwave). Roll out caramel in between 2 pieces of plastic wrap to flatten. Cut caramel into long strips, about 4 inches long, to fit around apple. Wrap caramel around apple. Stand upright on waxed paper and let set for 15 to 20 minutes.
- Melt dark, white or milk chocolate. Pour melted chocolate into a metal bowl. Dip apples into chocolate. Sprinkle chocolate covered apple with nuts, M&M's or your favorite topping. - Spray a baking sheet with vegetable spray. Dry the apples well and insert a lollipop stick into the stem end of each apple.
- Combine the caramels and 1/4 cup water in a medium saucepan. Cook over medium heat, stirring constantly with a wooden spoon or spatula, until the caramel is melted and smooth. Holding them by the lollipop sticks, dip the apples in the caramel and roll them around to coat evenly. Lightly shake off excess caramel and set the apples stick-end up on the prepared baking sheet. - Line a baking sheet with a silicone mat or parchment paper. Remove the stem from each apple and press a wooden stick into the top. Put the caramels and milk in a microwave safe bowl. Microwave for 4 minutes, stirring once. Add more time in 30 second increments, if needed.

- Stuff a few oats into the cored bottom of the apple, this will block the filling from draining out.

CHOCOLATE CHIP SOUR CREAM COFFEE CAKE WITH APPLES

- Preheat the oven to 375° F. Butter a springform pan and line the bottom with a circle of parchment paper. Mix together the walnuts, the cinnamon, and 2 tablespoons of the sugar in a bowl and set aside. In the bowl of a stand mixer (or using hand beaters), beat together the butter and 1 1/2 cups sugar until light-colored and fluffy. Add the eggs and the vanilla and beat until combined. Sift the dry ingredients together (you will have sifted the flour twice, which keeps the cake light even with the addition of the sour cream). With the mixer running at low speed, alternate adding the dry ingredients and the sour cream to the butter and sugar mixture. You want 3 additions of each, ending with the sour cream. Be sure not to over-mix! Use a wooden spoon or a spatula to fold in the chocolate chips. Pour half of the batter into the prepared springform pan. Starting on the outside edge, place the apple slices in a concentric circle. Sprinkle half of the cinnamon-sugar-walnut mixture over the apples, then pour in the rest of the batter. Smooth with a rubber spatula. Top the cake with the remainder of the cinnamon-sugar-walnut mixture, then bake it for 40 minutes, or until it's golden-brown and a toothpick inserted in the center comes out clean. Let the cake cool in the pan until the edges start to pull away from the sides.

- Put the chocolate in a heatproof bowl set over a pan of just simmering water, being careful that the bowl doesn't touch the water. Stir frequently for 10 mins until completely melted, smooth and shiny. Remove from the heat. Alternatively, heat the chocolate in short bursts in the microwave, stirring between each burst, until melted.
- Put the apples in a heatproof bowl and pour over boiling water from the kettle. Drain carefully, and wash under hot water to remove any residual wax on the skin. This helps the chocolate stick better. Pat dry with kitchen paper, remove the stalks and push a lolly stick or skewer in its place.
- Line a baking tray or large board with baking parchment. Hold the apples by their sticks and dunk into the melted chocolate. Use a spoon to coat the tops of the apples if you like. Once the apples are completely coated, hold over the bowl for a few seconds for excess chocolate to drip back into it, then place, stick pointing up, onto the prepared tray. Leave to set for a minute or two.
- Tip the decorations into separate bowls. When the chocolate on the apples is just starting to set but not fully firm, sprinkle the decorations onto the apples. Hold them on their side and rotate using the stick to completely cover. Place back on the tray and leave until completely set.
- If using the white and dark chocolate to decorate, heat each separately, as you did the milk chocolate in step 1, then leave to cool slightly. Melt the dark chocolate first, then when the chocolate apples are set hard, use a teaspoon to drizzle this over them, again holding the stick so the apple is on its side and rotating the apple. Have a sheet of baking parchment underneath to catch any drips. Place back on the tray and leave to set, then repeat the process using the white chocolate. Will keep in an airtight container in a cool place for two days.

- Preheat the oven to 350 degrees F. Bake the Chocolate Sable dough on a small baking sheet for 5 minutes. Let cool completely. Place a Lemon Chocolate Feuilletine layer on top of sable layer. Put in the oven for 15 seconds, just to adhere the crisp layer to the sable layer. Let cool again. Spread the Apple Custard evenly over the crisp layer. Sprinkle the Apple Dice over the custard, gently smoothing it with a spatula so it lays flat in the custard. Freeze. Pour the Apple Mousse over and smooth it out. Refreeze. Cut the frozen palette into the desired shapes. Refreeze. Heat the Chocolate Glaze and pour it over the frozen palette to coat. Top with a quenelle of Chestnut Ice Cream.
- In a medium bowl, cream together the butter, confectioners' sugar, brown sugar, and lemon zest. Add the lemon juice, kosher salt, and sea salt. In a small bowl, sift together the flour and cocoa powder. Add the flour mixture to the creamed butter mixture in intervals, mixing well; don't overmix or the dough will become dry. Roll out the dough between two sheets of parchment until it's 1/8-inch thick.
- Gently melt the chocolates and butter together in a mixing bowl set over a pan of hot water. Stir in the salt, praline paste, and lemon zest. Gently fold in the feuilletine. Roll the mixture between two sheets of parchment paper until it's 1/8-inch thick.
- Heat the cream and apple puree in a small saucepan to just below a boil. In a small saucepan, mix together the yolks and sugar. Stir in the cream mixture very gradually to temper the yolks. Cook over medium heat until the mixture thickens, being careful not to overheat; it should be thick enough to coat the back of a wooden spoon. Let cool slightly. Add the bloomed gelatin. Strain through a fine mesh sieve into a bowl. Stir in the Apfel Korn and salt. Cool on ice, stirring often, until cold but not set.
- Heat the apple puree in a saucepan. Add the bloomed gelatin and stir until dissolved. Stir in the liqueur and salt. Let cool. In a small saucepan, heat the sugar to 244 degrees F. Meanwhile, beat the egg whites to soft peaks in a bowl. When the sugar syrup reaches temperature, beat the whites to stiff peaks, and then reduce the mixer speed and carefully pour the sugar syrup over the whites. Beat until the meringue is stiff but still slightly warm. Add the meringue to the apple puree and fold in the whipped creme fraiche.
- In a saucepan, heat the honey, wine, water, sugar, and vanilla bean and bring up to a boil. Strain. Let cool until just warm. Add the lemon juice and Apfel Korn to the honey mixture. Preheat the oven to 175 to 200 degrees F. Put the apples and 4 cups of the Apfel Korn-honey syrup in a baking dish and cover. Bake until fully cooked but still firm. Let cool. Cut the apples into small dice.
- Bring the simple syrup, cream, milk, and glucose to a boil in a saucepan. Add the lemon zest, cover, and let steep for 10 minutes. Bring back up to just below a boil, let cool just slightly, and add the bloomed gelatin. Strain. Put the chocolate and pate a glace in a bowl and pour the syrup mixture on top. Buzz with a hand blender. Cool the glaze over a bowl filled with ice.
- In a large saucepan, combine the chestnut puree, milk, cream, 1 1/4 cups of the sugar, trimoline, and stabilizer. Bring to a boil and then strain. In a bowl, mix together the remaining 1 1/4 cups sugar and the yolks. Add the chestnut liquid gradually to the yolk mixture to temper it. Pour the mixture back into the saucepan and cook over medium heat until it reaches 175 degrees F. Strain again. Put immediately over ice to cool. Add the salt and lemon juice and freeze in an ice cream machine.
BAKED APPLES WITH MEXICAN CHOCOLATE
Mexican chocolate is a solid disk of bittersweet chocolate flavored with cinnamon. It's commonly labeled "hot chocolate" or "drink mix" and is available at most major supermarkets.

- Preheat oven to 400 degrees. Halve each apple lengthwise. Using a melon baller or grapefruit spoon, scoop out seeds, forming a small crater in center of each half.
- Fill each crater with 1 marshmallow quarter and 1/4 of the chocolate. Cut 2 tablespoons butter into small pieces, and divide among apples, placing over chocolate.
- Place water and remaining 2 tablespoons butter in a baking dish. Place filled apples in dish. Bake until a paring knife inserted into apples meets no resistance, 20 to 30 minutes.
- Set oven to broil. Top each apple half with 2 marshmallow halves. Broil until golden brown. Drizzle with juices.
