This easy recipe for low carb dark chocolate almond bark with sea salt is suited for both paleo and keto diets. It's also a great treat for diabetics.

Steps:
- Melt cocoa butter in a chocolate melter or double boiler.
- Stir in cocoa powder, sweetener, and salt.
- Keep on heat until dry ingredients have been well incorporated into the melted cocoa butter.
- Remove from heat. Stir in vanilla extract and chopped almonds.
- Pour out on prepared pan or chocolate mold.
- Sprinkle with additional salt and chopped almonds if desired.

Steps:
- Line a 9x13 inch baking pan with parchment paper. Set aside. Put chopped almonds In a skillet. Cook, stirring often over medium high heat, until golden brown. Remove from heat.
- In a metal bowl over a pan of simmering water, melt chocolate chips and shortening until smooth. Remove from heat and stir in 1/2 the toasted almonds. Spread onto the prepared baking pan. Sprinkle with remaining almonds, and chill 30 minutes, or until solid. Break into bite-size pieces to serve.

HOMEMADE BARK THINS
Steps:
- Place almonds in a plastic bag and seal. Using a sturdy wood spoon or an ice mallet, pound the almonds until they are chopped into small pieces mixed with crumbs.
- Set almonds aside.
- In a medium mixing bowl, add chocolate chips. Microwave in 25 second increments, stirring each time. Continue until melted--the key is not to overdo it. When almost all of the chips are melted, stirring a bit extra will get the rest and not overheat the chocolate.
- Pour crushed almonds, vanilla and all of the sea salt except for a pinch into the bowl and stir to combine.
- Line a 9x13inch baking sheet with parchment paper and pour the mixture over top and spread evenly with a spoon or spatula. Sprinkle with remaining sea salt.
- Allow to set in the freezer for about 30 min.
- Remove from the freezer and break into pieces.
- Store in the freezer of refrigerator.

I love to mix sweet and salty and this candy does just that. A treat for all palates from the most sophisticated on down. Found this on the Nestlé web site. 1 hr cooling time.

Steps:
- Line 8" baking pan with wax paper.
- Microwave chocolate in uncovered, microwave-safe bowl on HIGH(100%)power for 1 minute; STIR.
- The sections may retain some of their original shape.
- If necessary, microwave at additional 10-15 second intervals, stirring just until smooth.
- Stir in 1/4 cup almonds.
- Pour into prepared baking pan.
- Sprinkle with remaining almonds.
- Tap pan several times to spread chocolate & settle nuts.
- Sprinkle with sea salt.
- Refrigerate for about 1 hour or until firm. Break into pieces.
- Store in air-tight container at room temperature.
