½ cup sour cream

Steps:

  • Place potatoes in a large pot with enough water to come up 2 inches from the bottom. Bring to a boil, and cook for 20 to 25 minutes, until fork tender. Drain, and mash. Mix in the milk using a potato masher or an electric mixer until fluffy. Stir in the sour cream and chives, and season with salt and pepper.

I came up with this dish just the other day when my fiancé asked for a ham that night for dinner. I usually make regular old mashed potatoes with ham, but that night I just didn't feel like it. So I scrambled through my kitchen a bit and came up with these bad boys.

4 large baking potatoes, peeled
3 tablespoons butter
2 tablespoons flour
1 (14 1/2 ounce) can low sodium chicken broth
1/2 cup cream or 1/2 cup milk
10 sprigs fresh chives, finely chopped
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces munchee cheese or 8 ounces another white cheese, grated

Steps:

  • Preheat your oven to 350°F and line the bottom of a 9x9-inch square baking pan with foil (I use release foil, but if you're not, grease the foil).
  • With a really sharp knife (if you know how to do it) or a mandolin, cut the potatoes just about paper thin (like potato chips); place slices in a bowl of water and set aside.
  • In a medium sauce pan, over medium heat, melt the butter then add the flour and cook, stirring constantly, for about 3-5 minutes or until it starts to smell nutty.
  • Whisk in the broth and the cream then bring it to a boil.
  • Remove from the heat and add the chives, sour cream, salt, and pepper.
  • Spread a little of the chive sauce on the bottom of the lines pan then place two layers of potatoes on top of that.
  • Spread more of the chive sauce on that, sprinkle with cheese and start again the two layers of potatoes, then the cream sauce, then the cheese (You should get about 4 to 5 layers if the potatoes are really thinly sliced).
  • Cover with foil and bake for 45 minutes then remove the foil and bake for another 15 minutes (the potatoes should fork tender, and if they're not, just cover them and cook them for another 10-15 minutes).
  • Let rest on your counter for at least 10 minutes before cutting.

4 baking potatoes
1 1/4 cups sour cream
1/2 teaspoon whole-grain mustard
1 teaspoon coarse salt
A good grinding white pepper
1/3 cup freshly chopped chives
Special equipment: 4 metal skewers

Steps:

  • Preheat oven to 400 degrees F.
  • Skewer the baking potatoes with metal skewers, so they cook through faster and place them directly on the middle oven baking rack for 1 hour and 15 minutes.
  • Meantime add the sour cream to a bowl with the whole-grain mustard, salt, white pepper and chopped chives, leaving a teaspoon back to sprinkle on top. Stir all the ingredients together and scatter over the remaining chives. If you are not eating it straight away store it covered in plastic wrap in the refrigerator.
  • When the potatoes are ready with a crisp skin and soft inside, remove them from the oven, take them off the skewers and cut a cross in the top of each of them and slightly squeeze them so they open out and place them into bowl. Serve the potatoes with the chive sour cream on the side and have people help themselves.

2 pounds Yukon gold potatoes, peeled, quartered and cut into 1-inch chunks
8 tablespoons unsalted butter, melted
1/2 cup half-and-half
1/2 cup sour cream
1/4 cup chopped fresh chives, plus more for garnish
Kosher salt and cracked black pepper to taste

Steps:

  • Cover the potatoes with 1 inch of cold water in a large saucepan. Bring to a boil, then reduce to a simmer and cook until the potatoes are fork tender, about 20 minutes. In a small pot over low heat combine half-and-half and butter. Heat until hot but not simmering.
  • Drain the potatoes in a colander, tossing to remove any excess water. Wipe the saucepan dry. Add the potatoes back to the saucepan and mash to a uniform consistency (or process through a food mill back into the dry pot). Give it a quick mix with a hand mixer to incorporate some air and ensure a smooth texture. Do not overmix or potatoes will become gummy.
  • Using a flexible rubber spatula, fold in the melted butter and half-and-half mixture until just incorporated. Fold in sour cream and 1/4 cup chives and season with salt and pepper.
  • Transfer to serving bowl and garnish with chopped chives.

  • Spray 13x9-inch pan with cooking spray; set aside. In 4-quart Dutch oven, place potatoes; add enough water just to cover potatoes. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until potatoes are tender; drain. Shake potatoes in Dutch oven over low heat to dry.

1 tablespoon chopped fresh chives
1 tablespoon lemon juice

I love these crispy asparagus spears as a greener alternative to french fries. They are great as an appetizer or served as a side with just about any entrée. Kids might not know the difference, and they're a great way to stealthily get some vegetables into anyone's diet.

1/2 cup sour cream
1/4 cup mayonnaise
1 tablespoon finely sliced chives
1 clove garlic, grated
Zest of 1 lemon
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
Canola oil, for frying
1 bunch large (thick) asparagus, trimmed
2 cups all-purpose flour
3/4 cup cornstarch
2 teaspoons baking soda
1 cup club soda

Steps:

  • For the sour cream and chive dip: Whisk together the sour cream, mayonnaise, chives, garlic, lemon zest and juice and a pinch each of salt and pepper in a medium bowl. You can make this up to 2 days before as it gets better tasting with time.
  • For the asparagus tempura: Fill a 9- to 11-inch saucepan, large pot or large Dutch oven with about 4 inches of oil. Heat over medium-high heat until a deep-fry thermometer inserted in the oil reaches 350 to 360 degrees F. Set a wire rack inside a rimmed baking sheet.
  • Whisk the flour, cornstarch and baking soda together in a large bowl. Transfer half of the of the flour mixture to a second large bowl. Keep the club soda nearby, but don't make the batter until you're ready to fry.
  • Create an assembly line from left to right: the asparagus, one bowl of flour mixture for dredging and the second bowl of flour mixture that will become your tempura batter.
  • When you're ready to fry, stir the club soda into the second bowl of flour.
  • To fry, use your fingers to dip 2 to 3 asparagus spears into the dredging flour, shake off the excess, then dip in the batter. Lay or slide the coated asparagus into the hot oil and deep-fry until golden, about 3 minutes, turning it in the oil for even cooking. Lift the cooked asparagus with tongs or a spider and let excess oil drip back into the pan before transferring to the prepared wire rack. Skim the surface of the oil occasionally to keep it clean and to fish out stray crispy tempura bits.
  • Bring the oil back to 350 to 360 degrees F between batches. Stir the batter to keep it from separating, then repeat with the remaining asparagus. Serve the fries immediately with the dip.

4 teaspoons fresh lemon juice
1/4 teaspoon salt
1/2 cup finely chopped fresh chives
For fish
6 (5-oz) pieces striped bass fillet with skin
1 1/2 tablespoons vegetable oil
1 lemon, cut into 6 wedges
2 oz onion sprouts or garlic chive sprouts (2 cups)*
Accompaniment: Spicy garlic potatoes and zucchini

Steps:

  • Make sauce:
  • Blend sour cream, water, juice, salt, and chives in a blender until mixture just turns pale green. Season with pepper.
  • Prepare fish:
  • Preheat oven to 450°F.
  • Remove any pin bones from fish with tweezers or needle-nose pliers and pat fish dry with paper towels. Score skin in several places with a thin sharp knife to prevent fish from curling (do not cut through flesh) and season fish with salt and pepper.
  • Heat oil in a 12-inch nonstick skillet over high heat until hot but not smoking, then sear fish, skin sides down, in 2 batches until skin is golden brown and crisp, 3 to 4 minutes (fish will not be fully cooked). Transfer, skin sides up, to an oiled shallow baking pan.

4 large baking potatoes
1/2 cup bacon bits (real Bacon)
1/2 cup sour cream
1/3 cup Miracle Whip or 1/3 cup salad dressing
1/2 cup sweet onion (diced very fine)
1/2 cup shredded cheddar cheese
1/2 teaspoon roasted garlic (or you can use Garlic Salt)
1 tablespoon chopped chives
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Wrap potatoes in foil and bake in a 400* oven for 45-60 minutes. When potatoes are done, unwrap and let them cool.
  • When potatoes have completely cooled, slice them in half, and with a small spoon; gently remove the center and you should have a potato boat.
  • Place scooped out potatoes in a bowl and add the rest of the ingredients, mixing well.
  • Reserve a handful of shredded cheese for the topping.
  • Using a spoon fill the boats with the mashed mixture and top with the reserved cheese.
  • Bake on 375* for 10-15 minute then on broil, watching closely so they do not burn until the cheese is slightly browned.
  • Top Potato Boats with sour cream and more chives (optional of course), and Enjoy!

3/4-1 lb salmon fillet
1 tablespoon fresh lime juice
1 1/2 teaspoons butter, melted
salt and pepper
1 1/2 teaspoons butter
2 jalapeno chiles, seeded and julienned
1/3 cup sour cream
3/4 teaspoon fresh lime juice
to taste salt
to taste white pepper
to taste fresh chives, snipped
to taste lime wedge

Steps:

  • Preheat oven to 500 degrees.
  • Butter baking dish. Place salmon in dish skin side down.
  • Mix lime juice and butter. Brush over salmon.
  • Sprinkle with salt and pepper. Let stand 15 minutes.
  • Bake until fish is almost opaque, about 9 minutes per inch of thickness.
  • Meanwhile prepare sauce:
  • Melt butter in heavy small saucepan over medium-low heat. Add chilies and cook until tender, stirring occasionally, about 3 minutes.
  • Add sour cream and stir until heated through; do not boil.
  • Mix in lime juice. Add salt and pepper.
  • Transfer fish to platter. Spoon sauce over.
  • Sprinkle generously with chives.
  • Garnish with lime wedges.

2 large russet potatoes
1 tablespoon butter
seasoning salt
pepper
1/4 tablespoon chives
1/2 tablespoon imitation bacon bits or 1/2 tablespoon cooked bacon
4 tablespoons sour cream

Steps:

  • If baking in the oven preheat to 400°F.
  • Scrub the potatoes well with a vegetable brush and water, then dry.
  • Poke potatoes with a fork several times so they won't explode, and, if desired, dust with salt while still wet.
  • Bake directly on oven rack until tender (for one hour) or wrap in tin foil and bake in campfire or on the grill (over high heat) for 45 minutes, turning once.
  • In a small bowl, combine chives, bacon bits and sour cream; mix well.
  • Let potatoes cool for several minutes, open, spread with butter and sprinkle with salt and pepper and serve with sour cream topping.

2 cups bread crumbs
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon ground paprika
½ cup butter, melted
1 pound chicken breast tenders
1 red onion, sliced, or more to taste
1 tablespoon all-purpose flour
8 ounces sour cream
¼ teaspoon ground black pepper
2 tablespoons chopped chives
2 tablespoons milk, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir bread crumbs, salt, 1/4 teaspoon black pepper, onion powder, and paprika together in a shallow bowl. Pour melted butter into a separate bowl.
  • Dip each chicken piece into melted butter, press into bread crumb mixture to coat, shaking off any excess. Place coated chicken pieces and onion in a 9x13-inch baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chick to a plate and pour any pan drippings into a saucepan.
  • Place saucepan with pan drippings over medium-high heat and stir in flour. Add sour cream and black pepper; cook and stir until heated through, 1 to 2 minutes. Stir in chives and enough milk to reach desired consistency. Top chicken and onions with sour cream mixture.
