A Tex-Mex like twist on traditional sloppy joes, paired with a cool, crunchy coleslaw topping. As a personal preference I leave out the cilantro, but recipe is posted as written.

1 lb 95% lean ground beef
1/4 cup onion, chopped
3/4 cup ketchup
1/2 cup frozen corn
1/2 cup canned black beans, rinsed, drained
1/2 cup tomato sauce
1 -2 teaspoon chipotle chile in adobo, minced
1/2 teaspoon ground cumin
1/4 cup fresh cilantro, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
4 whole wheat hamburger buns, split
1/4 cup plain nonfat yogurt
1 tablespoon light mayonnaise
2 teaspoons cider vinegar
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
1 1/2 cups packaged coleslaw mix
1/2 red bell pepper, cut into 1/8-inch thick strips
black pepper, to taste

Steps:

  • To prepare Crunchy Coleslaw:.
  • Combine yogurt, mayonnaise, vinegar, pepper sauce and salt in small bowl.
  • Add coleslaw mix and bell pepper; toss to coat. Season with black pepper, as desired. Refrigerate, covered, until ready to serve.
  • Brown ground beef with onion in large nonstick skillet over medium heat 8 to 10 minutes or until beef is no longer pink, breaking beef up into 3/4-inch crumbles. Pour off drippings.
  • Stir in ketchup, corn, beans, tomato sauce, chipotle peppers and cumin; bring to a boil. Reduce heat; simmer 5 minutes, stirring often.
  • Stir in cilantro, salt and black pepper.
  • Place beef mixture on bottom half of each bun; top with coleslaw.

1 -2 tablespoon oil
1 1/2 cups chopped onions
1 (7 ounce) can chipotle chiles in adobo (will not use whole can)
1 lb ground chuck or 1 lb sirloin
1 teaspoon minced garlic
2 tablespoons tomato paste
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1 (8 ounce) can tomato sauce
hamburger bun, toasted

Steps:

  • Heat oil in pan over medium-high heat.
  • Add onion and cook for 4 minutes until turning soft, stirring frequently.
  • Remove 1 teaspoon adobo sauce from can and set aside.
  • Remove 1 chipotle chile from can; chop and set aside. Reserve remaining chiles and adobo sauce for another use.
  • Add hamburger to pan with onions. Cook until brown, stirring to crumble. Drain grease from pan.
  • Add garlic and continue to cook another 2 minutes.
  • Add reserved adobe sauce, reserved chile, tomato paste, salt, cumin and tomato sauce, stirring to mix. Cook 3 minutes, stirring occasionally.
  • Serve on buns.

1 pound lean ground beef (90% lean)
1 cup finely chopped sweet onion
1/2 cup finely chopped green pepper
1 jalapeno pepper, seeded and finely chopped, optional
1/2 cup chili sauce
1/2 cup water
1 to 2 chipotle peppers in adobo sauce, finely chopped
1 tablespoon packed brown sugar
1 teaspoon yellow mustard
6 kaiser rolls or hamburger buns, split
2 tablespoons butter, softened
Pickle slices, optional

Steps:

  • Preheat broiler. In a large skillet, cook beef, onion, green pepper and, if desired, jalapeno over medium heat until beef is no longer pink, breaking up beef into crumbles, 5-7 minutes; drain., Stir in chili sauce, water, chipotle peppers, brown sugar and mustard; bring to a boil. Simmer, uncovered, until slightly thickened, 8-10 minutes, stirring occasionally., Lightly spread cut sides of rolls with butter; arrange on a baking sheet, buttered side up. Broil 3-4 in. from heat until lightly toasted, about 30 seconds. Fill with beef mixture and, if desired, pickles. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Prepare sandwiches as directed.
