Salsa de Tomate con Chile Chipotle: Tomato Sauce with Chipotles image

Number Of Ingredients 7

2 tablespoons lard, preferably home-rendered or vegetable oil
1 medium-sized white onion, sliced into thin half-moons
2 garlic cloves, minced
1 (28-ounce) can tomatoes, preferably San Marzano
2 to 3 canned chipotle chiles in adobo, with the sauce that clings to them
1 teaspoon dried crumbled Mexican oregano
1/2 teaspoon salt

Steps:

  • In a medium-sized heavy-bottomed saucepan, heat the lard to rippling over medium-high heat. Add the onion and garlic; cook, stirring occasionally, until the onion is translucent, about 3 minutes.
  • Break up the tomatoes coarsely with your fingers. Add the tomatoes and their juices to the sauteed onion. Stir in the chiles and oregano. Reduce the heat to medium and cook, covered, stirring occasionally, for 15 minutes or until slightly concentrated.
  • Remove from the heat and let cool to lukewarm, about 15 minutes. Puree the mixture in a blender or food processor. Taste for salt (the tomatoes will have some) and add a little if needed. Serve hot at once or store tightly covered in refrigerator for up to 4 or 5 days and reheat before serving.

¾ cup heavy cream
3 tablespoons pureed chipotle peppers in adobo sauce

  • Crumble blue cheese into a bowl, and mash with a fork. Pour in cream, and stir until smooth. Then transfer to a saucepan, and gently cook over low heat until warmed through. Remove from heat, and stir in pureed chipotle peppers and chives.

12-15 wooden skewers
1/2 lb ripe tomatoes cut in 1/2 lengthwise
1 unpeeled white onion (about 1 cup) cut in 1/2 lengthwise
10 garlic cloves
1 7oz can chipotle chiles in adobo sauce
1 tbsp cumin
1 tbsp coriander
1/2 cup Kahlua coffee liqueur
4 tbsp light brown sugar
3 tbsp olive oil
1/2 cup lime juice
salt to taste
1 1/2 pounds deveined shrimp with shells on rinsed and drained
1/4 cup cilantro
lime wedges

Steps:

  • Soak skewers in water for 30 minutes. Preheat the oven on a high broil. When hot, place tomatoes, onions (cut side down) and garlic on an oiled cookie sheet. Broil until charred, about 5 to 6 minutes for onions and tomatoes. Core tomatoes and cut into chunks. Peel onions and garlic coarsely chop all and add to blender with the next 5 ingredients. Blend until smooth. Pour corn oil into a 10-inch frying pan over medium high heat; when hot, add tomato mixture and stir until it simmers. Lower heat to medium and cook about 8 minutes. Add lime juice and stir until glaze is thick. Add salt, to taste. Reserve 1/4 to 1/2 cup glaze. Thread shrimp on skewers, then set on a barbecue grill over high heat. Sear 1 to 2 minutes on each side, basting with glaze before you flip the shrimp. Continue to flip and coat each side until shrimp is barely opaque, about 4 to 6 minutes. Serve with reserved glaze, chopped cilantro and lime wedges.

1 (2-lb.) boneless beef top round steak (1 1/2 inches thick)
1 tablespoon brown sugar
2 tablespoons ketchup
2 tablespoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)
1 garlic clove, minced
2 Italian plum tomatoes, chopped
1/2 medium green bell pepper, cut into thin bite-sized strips

Steps:

  • Spoon soup into 4 to 5-quart slow cooker. Top with beef round steak, cutting into pieces if necessary to place in single layer. In small bowl, combine brown sugar, ketchup, chiles and garlic; mix well. Spread over beef. Top with tomatoes.
  • Cover; cook on Low setting for 8 to 9 hours.
  • About 10 minutes before serving, add bell pepper. Cover; cook an additional 10 minutes.
  • To serve, remove beef from slow cooker; place on cutting board. Cut into serving-sized pieces. Serve beef with sauce from slow cooker.

4 fresh poblano chiles
1 tablespoon olive or vegetable oil
1 medium yellow onion, diced
2 cups quinoa, rinsed
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 ounces shiitake mushrooms, stems discarded and remainder julienned
4 tablespoons unsalted butter
1 cup grated asadero cheese
6 egg yolks
Leaves from 2 sprigs fresh thyme
Salt and freshly ground black pepper
12 ripe tomatoes, preferably Roma
1 small yellow onion, julienned
5 cloves garlic, peeled
3 tablespoons canola oil
Salt
Freshly ground black pepper
Leaves from 3 sprigs fresh thyme
3 tablespoons chipotle chiles in adobo or 5 re-hydrated dried chipotles
3 cups heavy cream

Steps:

  • To make the Chile Relleno: Preheat oven to "broil" and roast the chiles until skin blackens, making sure to turn frequently. Remove chiles from the oven and place into a stainless steel mixing bowl. Peel the outer skin, being careful not to tear the flesh of the chile. With a sharp paring knife, make a long slit the length of each chile and then gently remove and discard all of the seeds. Set the chiles aside while you make the filling.
  • Heat the oil in a 4 quart saucepan over medium high heat and saute the onion until translucent. Add quinoa and toast for 3 to 5 minutes, stirring constantly. Add salt, pepper, and water to cover about 2 inches over quinoa. Bring to a boil and then reduce heat and simmer, uncovered, until water is absorbed and quinoa is tender. Turn out onto a baking sheet and allow to cool. In a clean pan, saute the mushrooms in butter over high heat. Season lightly with salt and freshly ground black pepper and allow to cool. In a bowl, combine the cooled quinoa and mushrooms with asadero cheese, eggs, thyme leaves, salt and freshly ground black pepper. Stuff each of the chiles with the filling mixture until they are very full and then set aside while you make the sauce.
  • To make the Asado Sauce: Preheat an oven to 400 degrees F.
  • Quarter the tomatoes and then place into a stainless steel mixing bowl and combine with the onions, garlic, oil, salt, pepper, and thyme. Turn onto a baking sheet and roast in the preheated oven about 15 to 20 minutes or until the tomatoes and onion start to turn black. Remove from the oven and process mixture in a food processor, working in batches if necessary. In a 4-quart saucepan, combine the processed onion-tomato mixture with the chipotles and heavy cream and heat over medium heat for about 10 minutes. Reduce heat to low and keep the sauce warm until you're ready to serve.
  • To serve: Preheat an oven to 350 degrees F.
  • Place the stuffed chiles into the oven and roast for 20 minutes or until heated through. Ladle enough of the warm asado sauce on 4 dinner plates to form large pools and then place 1 chile relleno on each plate and serve.

In addition to being a filling for soft tacos, this chicken dish can be served with rice and a salad for a light meal.

4 whole chicken breasts, on the bone
2 large onions
3 tablespoons vegetable oil
2 pounds ripe red tomatoes, chopped
2 chipotle chiles, chopped
Salt

Steps:

  • Place chicken in a large saucepan and cover with water. Halve one of the onions and add to water. Bring to a simmer and cook for 20 minutes, or until chicken is cooked through. Remove chicken from liquid and let cool. Discard cooking liquid and onion halves. When chicken is cool, shred with your fingers and set aside. Discard skin and bones.
  • To make sauce, chop remaining onion. In a large saute pan over medium-low heat, cook onion in oil for 5 minutes. Add tomatoes, chiles, and salt to taste, and cook for about 15 minutes, or until a thick sauce is formed.
  • Add shredded chicken and cook for 5 more minutes. Serve hot.
