Potato Chip Crusted Grilled Corn image

Grilled corn on the cob coated in a spicy mayonnaise and sour cream mixture, then rolled in sour cream and onion potato chips for added flavor and crunch.

3/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1 teaspoon lime juice
1 tablespoon vegetable oil
6-8 ears corn on the cob, husks removed
1 cup finely crushed sour cream and onion potato chips

Steps:

  • Preheat grill for medium high heat.
  • In a small bowl, whisk together mayonnaise, sour cream, cilantro, spices and lime juice. Set aside. Place crushed potato chips in a large, shallow dish.
  • Brush corn with vegetable oil. Season with salt and pepper, if desired. Place corn on preheated grill and cook, covered, for 12-15 minutes, turning often, until tender.
  • When cool enough to handle, spread corn cobs with mayonnaise mixture, then roll in potato chips. Serve immediately.

6 large ears sweet corn in husks
1/2 cup mayonnaise
1 chipotle pepper in adobo sauce, finely chopped
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
1-1/2 teaspoons grated lime zest
1 garlic clove, minced
1/2 cup grated Asiago cheese

Steps:

  • Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Rewrap corn in husks and secure with kitchen string. Place in a stockpot; cover with cold water. Soak for 20 minutes; drain., Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning often., In a small bowl, combine the mayonnaise, chipotle, cilantro, lime juice, lime zest and garlic; spread one heaping tablespoon over each ear of corn. 1 pound small red-skinned potatoes, quartered
Kosher salt
1 head broccoli, florets and tender stems chopped (about 4 cups)
3 cups corn chips (about 6 ounces)
4 skinless, boneless chicken breasts (about 8 ounces each)
Freshly ground pepper
3/4 cup sour cream
1/2 cup grape tomatoes, halved
1 tablespoon extra-virgin olive oil
1 scallion, thinly sliced
1 tablespoon finely chopped fresh cilantro
Juice of 1/2 lime

Steps:

  • Preheat the oven to 425 degrees F. Put the potatoes in a saucepan, cover with cold water and season with salt. Bring to a boil and cook until the potatoes are tender, 6 to 8 minutes, adding the broccoli halfway through. Drain and transfer the potatoes and broccoli to a large bowl; set aside.
  • Meanwhile, set a wire rack on a rimmed baking sheet. Pulse the corn chips in a food processor until finely ground. Transfer the crumbs to a shallow bowl. Season the chicken on both sides with salt and pepper. Spread the chicken with 1/4 cup sour cream, coating both sides, then press into the corn chip crumbs to coat; transfer to the rack. Bake until crisp and cooked through, about 18 minutes.
  • Add the tomatoes and olive oil to the potatoes and broccoli; season with salt and pepper and toss. Mix the remaining 1/2 cup sour cream, the scallion, cilantro, lime juice, 1/2 teaspoon salt and 2 tablespoons water in a small bowl. Drizzle over the vegetables and serve with the chicken.

This quick nibble is like self-contained nachos, except each chip gets its own heaping spoonful of topping before going in the oven.

2 ears of corn, husked
Extra-virgin olive oil, for brushing
Coarse salt and freshly ground pepper
1 to 2 jalapeno chiles
1 scallion, thinly sliced
2 tablespoons minced fresh cilantro, plus sprigs for garnish
1 tablespoon fresh lime juice
4 ounces cheddar cheese, grated (1 3/4 cups)
24 tortilla chips, preferably lime-chili flavor

Steps:

  • Preheat grill to medium-high heat. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for 3 to 4 seconds.)
  • Brush corn with oil, and season with salt and pepper. Grill corn and chiles, turning occasionally, until grill marks appear and both are tender, about 10 minutes. Let cool slightly.
  • Cut kernels off cobs, and transfer to a medium bowl. Peel, stem, and seed jalapenos. Cut into 1/8-inch dice, and add to corn. Add scallion, cilantro, lime juice, and 1 1/4 cups cheese to corn mixture. Toss until well combined.
  • Preheat broiler. Arrange chips in a single layer on a rimmed baking sheet. Top each chip with a tablespoon of corn mixture. Sprinkle remaining 1/2 cup cheese over chips. Broil until cheese is bubbly, about 30 seconds. Garnish with cilantro sprigs, and serve immediately.
