1 3/4 cups shredded cooked chicken
3 tablespoons hoisin sauce, plus
1/4 cup hoisin sauce
2 teaspoons minced garlic
1 tablespoon minced fresh ginger
1 teaspoon sambal oelek
6 green onions, cut on the diagonal into thin slices (include some green tops)
1 (12 inch) Boboli pizza crusts
1 cup thinly sliced white onion
1 1/2 cups coarsely shredded mozzarella cheese
1/2 cup lightly packed cilantro leaf

Steps:

  • Position an oven rack in the center of the oven; preheat oven to 500°.
  • While the oven is heating, toss the chicken with 3 tablespoons hoisin, garlic, ginger, sambal oelek, and 3 of the green onions.
  • Remove crust from plastic bag and save the packet of tomato sauce for another use.
  • Place crust on a pizza screen, pizza pan, or rimless baking sheet.
  • Top the pizza: spread ¼ cup hoisin sauce evenly over the crust, leaving a 1-inch border.
  • Distribute the white onion over the sauce; arrange chicken mixture in a single layer over the onion.
  • Sprinkle the cheese evenly over the top.
  • Place the pizza in the oven; bake about 10 minutes until the crust is crisp and deep golden brown and the cheese is golden.
  • Sprinkle the remaining green onions and cilantro over the pizza; slice the pizza into wedges and serve immediately.

Number Of Ingredients 16

1 package yeast or 2 teaspoons fresh yeast
2 teaspoons sugar
2 teaspoons salt
1/4 cup warm water
4 cups all-purpose flour
1/4 teaspoon five spice powder
1 1/2 tablespoons canola oil
1/2 tablespoon sesame oil
1 3/4 cups warm water
2 cups sliced scallions, save 2 tablespoons for garnish
2 cups diced dark chicken meat
1/4 cup hoisin sauce
1 tablespoon minced ginger
1 tablespoon sambal oelek
2 cups grated mozzarella
Salt and pepper to taste

Steps:

  • In a small bowl, mix yeast, sugar, salt and 1/4 cup warm water. Let stand 5 minutes until foamy. In a mixer with a dough hook, mix flour and five spice powder. While mixer is running, slowly pour in yeast mixture, oils and the rest of the water; knead on low speed for 8 to 10 minutes. Stop mixer when the dough forms a smooth and firm ball. Divide dough into 6 balls and place on sheet tray lined with parchment paper. Cover with a cloth and place in a warm part of the kitchen; let balls double in size, about 2 hours. Working on a floured surface with floured hands, take one ball and spread out with your fingers to about 5 inches in diameter. Take a floured rolling pin and roll out to a little less than a 1/4-inch thick. The final diameter will be 8 to 10 inches. On a low grill, brush on a little canola oil and mark one side. Brush oil on the raw side and flip. Immediately place toppings and cover with a lid to help retain the heat and assist the cheese melting process. Carefully watch the pizza. If the grill is too hot, the bottom will burn before the pizza is ready. If this occurs, you can place the pizza on a tray and use the broiler of an oven to finish the melting.
  • In a bowl, mix scallions, chicken, hoisin, ginger and sambal. Season with salt and pepper. Top raw pie with mix then top with cheese. Bake at 375 degrees for 15 minutes. (Because of the raw chicken, we bake it for longer at a lower temperature. Make sure the chicken is fully cooked.) Garnish with scallions.

1 store bought flatbread dough
1 c shredded cooked chicken
1/4 c plus 3 tbsp. hoisin sauce divided
1/2 tsp chili garlic sauce
2 scallions fine chopped white and light green parts only
4 oz fresh mozzarella
1/2 c fresh cilantro leaves

Steps:

  • 1. Place a pizza stone in the oven and set the oven at 400 degrees. When the oven is hot place the flatbread on the stone and bake for 10 minutes. Remove the flatbread with a pizza peel.
  • 2. Mix the 1/4 cup hoisin and chili garlic sauce together. Spread the sauce over the flatbread. Tear the mozzarella into pieces and put on top the hoisin mixture.
  • 3. Add the chicken and scallions then place the flatbread back into the oven on the stone. Bake until the cheese is melted and the sauce is warmed. About 10 minutes.
  • 4. Remove from oven and top with the cilantro. Then drizzle the remaining 3 tbsp. hoisin over the cilantro.

The ingredients may seem unusual, but one bite, and you'll keep coming back for more!! Definitely not the traditional American pizza, very nice when you just want something "a little different". The combination of flavors is extraordinary! I use part-skim mozzarella to keep the fat-content low. Usually serve this with a green salad, but as I think of it, egg rolls would also be a great side! Sometimes I add veggies (onions, green pepper, mushrooms, etc.) before baking. MMM!

8 ounces boneless skinless chicken breasts, cut into cubes
2 tablespoons creamy peanut butter or 2 tablespoons crunchy peanut butter (I prefer creamy)
4 cloves garlic, minced
2 teaspoons minced fresh ginger
1/4 cup brown sugar
3/4 cup white wine vinegar or 3/4 cup rice wine vinegar
1/4 cup soy sauce
black pepper, to taste
1/8 teaspoon crushed red pepper flakes (optional)
3 tablespoons water
1/2-3/4 cup shredded mozzarella cheese
1 prepared pizza crust ("12-14-inch")

Steps:

  • Heat oven to 400 degrees.
  • In nonstick pan sprayed with cooking spray, cook chicken just until cooked through and no longer pink; remove from pan.
  • Whisk together next 9 ingredients, and add to pan.
  • Cook over medium-high heat, stirring constantly.
  • When sauce is bubbly and starts to thicken, return chicken to pan.
  • Cook 3-5 minutes, until sauce becomes almost like a syrup.
  • Sprinkle cheese over prepared pizza crust in pizza pan.
  • Spread chicken mixture on top of cheese.
  • Add veggies (if using).
  • Bake at 400 degrees about 15 minites, until crust browns and cheese is melted.
  • Let stand 5 minutes before serving.

4 rhodes frozen texas rolls or 6 dinner rolls, thawed to room temperature
1/4 cup hoisin sauce, divided
2 cups shredded rotisserie chicken

1 prebaked 12-inch pizza crust or flatbread
1 tablespoon sesame oil
3/4 cup hoisin sauce
2 teaspoons chili garlic sauce
1-1/2 cups shredded cooked chicken
4 green onions, chopped, divided
1/2 cup chopped sweet red pepper
1/3 cup shredded carrots
1/2 cup chopped cashews
3 tablespoons chopped fresh cilantro
1-1/4 cups shredded mozzarella cheese

Steps:

HOISIN SAUCE NOODLES WITH CHICKEN

My father would make this super spicy chicken dish ("Hacked Chicken") where the chicken was gently poached without seasonings and then topped with a super spicy sauce. I always loved that dish; the chicken was like a blank canvas and this jarringly spicy topping just woke it up. In college, I created this dorm room hybrid, bulking it up for my roommates with a pound of pasta, and I randomly added hoisin sauce (because I had a jar of it). The dish looks to recreate that contrast of something searching for flavor and a sauce that offers nothing but. The textures of the pasta only amplify the dish. These are really great eaten right out of the bowl or made and left to marinate for a few hours or overnight. To that end, they make great leftovers, if you have any. A note about the chicken stock: I love enriching stock with chicken, so make sure you reserve and use the poaching stock from this recipe for a soup, risotto or pan sauce.

2 tablespoons sesame seeds
2 cups chicken stock
4 small boneless, skinless chicken breasts
Kosher salt
12 ounces dried vermicelli (or angel hair) pasta
1/4 cup hoisin sauce
1/4 cup low-sodium soy sauce
3 tablespoons grated ginger
2 tablespoons sesame oil
1 tablespoon apple cider vinegar
1 teaspoon hot sauce (Tabasco recommended)
6 scallions, thinly sliced

Steps:

  • Place the sesame seeds in a dry skillet over medium heat and toast until lightly browned, 2 to 3 minutes. Remove from the heat and set aside.
  • Cook the chicken. In a medium skillet, bring the chicken stock to a simmer over medium-high heat. Submerge the chicken breasts in the stock, then reduce the heat to low and poach until the meat is completely cooked through and the internal temperature in the thickest part of the chicken breast registers 165 degrees F on a meat thermometer, 8 to 10 minutes. Transfer the chicken to a cutting board and let rest for 5 to 10 minutes. Use a sharp knife to cut the meat into 1/4-inch-thick slices. Set aside. Let the chicken stock cool and reserve for another use.
  • Make the pasta. In a medium pot, bring 4 quarts of water to a boil over medium-high heat. Line a sheet pan with a clean kitchen towel and set aside. Season the water with salt until it tastes like sea water. Plunge the pasta in the water and cook until cooked but still chewy ("al dente"), 4 to 6 minutes. Place a colander in the sink. Reserve a little pasta water, then drain the pasta thoroughly. Shake the colander a few times to remove excess water. Spread the pasta on the towel so it cools more quickly. Gently use a second towel to cover and pat the pasta dry. (Removing the excess moisture assures that the sauce will have a full flavor effect on the noodles.)
  • Make the sauce. In a large bowl, combine the hoisin sauce, soy sauce, ginger, sesame oil, vinegar and hot sauce. Adjust the seasonings. Stir in half of the scallions. Set aside.
  • Add the pasta to the sauce and toss to coat evenly. Add some of the reserved water if necessary. Transfer the pasta and sauce to a large serving bowl. Set aside.
  • Arrange the chicken on top of the pasta. Top the pasta with the reserved sesame seeds and remaining scallions.
