ROASTED LEMON CHICKEN WITH SPRING ONION CHIMICHURRI



Roasted Lemon Chicken with Spring Onion Chimichurri image

2 lemons
One 4- to 5-pound whole chicken
Kosher salt and freshly ground black pepper
4 sprigs fresh tarragon
3 cloves garlic
1 tablespoon unsalted butter, melted
1 1/2 cups loosely packed fresh flat-leaf parsley leaves
2 tablespoons fresh tarragon leaves
3 spring onions, dark green parts trimmed off and bulbs roughly chopped
1 small clove garlic
1/2 cup olive oil
2 tablespoons champagne vinegar
1 pinch crushed red pepper flakes
Kosher salt

Steps:

  • For the chicken: Preheat the oven to 425 degrees F.
  • Finely grate the zest of one of the lemons and cut that lemon in half. Rub the chicken with salt and pepper inside and out, then rub the lemon zest all over the outside. Stuff the cavity with the halved lemon, tarragon and garlic. Put the chicken in a baking dish or small roasting pan. Cut the remaining lemon in quarters and add it to the dish along with 3/4 cup water. Brush the outside of the chicken with the butter.
  • Roast until golden brown and an instant-read thermometer inserted into the center of the thigh registers 165 degrees F, about 1 hour. Transfer the chicken to a cutting board and pour the pan juices into a small bowl. Let the chicken rest 10 minutes. Use a small ladle to remove the fat that rises to the top of the pan juices.
  • For the chimichurri: Meanwhile, finely chop the parsley, tarragon, onions and garlic and add to a bowl. Stir in the olive oil, vinegar, red pepper flakes and 1/4 teaspoon salt.
  • Carve the chicken and serve with the pan juices and chimichurri.

1 chicken leg (drumstick and thigh)
10 sprigs fresh thyme
1 shallot, diced
2 tablespoons Jerk Spice Rub, recipe follows
6 tablespoons grapeseed oil
3 ounces cauliflower florets
5 cherry tomatoes
Kosher salt and freshly ground black pepper
1/3 teaspoon fresh rosemary
1/3 teaspoon fresh tarragon
3 ounces quinoa
2 tablespoons Garden Chimichurri, recipe follows
2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon cayenne powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon kosher salt
2 teaspoons coarse black pepper
2 teaspoons dry thyme
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 tablespoons fresh cilantro, chopped
1 tablespoon fresh mint, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon red wine vinegar
1 teaspoon olive oil
1 teaspoon minced shallot
1/3 teaspoon minced garlic
A large pinch of red pepper flakes

Steps:

  • Rub the chicken with the thyme, shallots and 2 tablespoons of the Jerk Spice Rub and refrigerate overnight in a baking dish.
  • Preheat the oven to 350 degrees F.
  • Combine 2 tablespoons grapeseed oil and 2 tablespoons of the Jerk Spice Rub in a small bowl to make a wet sauce.
  • Heat 2 tablespoons grapeseed oil in a skillet over medium-high heat. Add the chicken and sear to brown on all sides, 4 to 5 minutes. Remove from the heat and coat with the jerk wet sauce. Transfer to the oven and roast until the internal temperature is 165 degrees F.
  • Cook the quinoa according to the package directions.
  • Heat 1 tablespoon grapeseed oil in a second skillet over medium-high heat. Add the cauliflower and cook, without stirring, for 2 minutes. Then add the cherry tomatoes and toss in the heat. Season with salt and pepper, then the rosemary and tarragon.
  • Remove from the heat and splash with 1 tablespoon water to steam. Add the remaining 1 tablespoon grapeseed oil to make sauce.
  • Put the steamed quinoa and Garden Chimichurri on a plate. Add the chicken.
  • Transfer the cauliflower mixture to the skillet with the chicken drippings. Cook over high heat until thickened.
  • Pour the vegetables over the chicken before serving.
  • Combine the coriander, ginger, brown sugar, cayenne, garlic powder, onion powder, salt, pepper, thyme, allspice, cinnamon and cloves in a small bowl.
  • Combine the cilantro, mint, parsley, vinegar, olive oil, shallot, garlic, red pepper flakes and salt and pepper to taste in a small bowl and refrigerate overnight.

This chimichurri roasted chicken recipe is prepared by roasting a whole chicken or individual pieces with chimichurri butter or sauce made with fresh herbs, garlic, vinegar, lime juice, butter or oil. This is fantastic when roasted with assorted vegetables under the chicken.

4-5 pound(s) whole chicken
1 cup(s) butter, room temp
1 bunch(es) flat-leaf parsley, leaves only
5-6 sprig(s) fresh oregano, leaves only
- handful of basil leaves
6-8 clove(s) garlic, crushed
4-5 - green onions
1-2 teaspoon(s) chili pepper flakes
3-4 tablespoon(s) red wine vinegar
1 tablespoon(s) fresh lime or lemon juice
- salt and pepper to taste

Steps:

  • For the chimichurri butter: Place all the ingredients expect for the butter in a small food processor and pulse until the herbs are finely chopped. Add the butter and continue pulsing until you have smooth creamy mix. Can be made ahead of time, but should be brought back to room temperature before using to prepare the roasted chicken.
  • Preheat the oven to 425F. Rub about half of the butter chimichurri all over chicken, including under the skin. Save the rest of the chimichurri butter for basting and for serving.
  • Place vegetables (onions, potatoes, etc) in a roasting pan. Place the chicken over the veggies. Bake the chicken, uncovered, at 425F for 30 minutes.
  • Reduce heat to 400F, baste chicken and bake for another 50-60 minutes, basting every 15-20 minutes, until cooked through. During the last 5-10 minutes, add additional chimichurri butter or chimichurri sauce over the top.
