FRIED CHILI PEPPER CHICKEN

1 cup sugar
2 cups chopped garlic
1 cup fish sauce
1 tablespoon salt
2 pounds boneless skin-on chicken thighs
1 quart small diced apples
1 quart small diced onions
1 cup minced ginger
1 cup minced garlic
2 quarts oil
2 cups tomato paste
1 cup chipotles in adobo
1 cup sambal oelek
3 tablespoons red chile flakes
Salt and pepper
6 cups soy sauce
4 cups sugar
3 cups mirin
1 cup sambal oelek
1/4 cup chile pepper flakes
1/4 cup minced garlic
1/4 cup minced ginger
1 tablespoon cornstarch
2 quarts oil
2 cups all-purpose flour
2 scoops cooked white rice
Pinch chopped green onions
Pinch furikake seasoning

Steps:

  • For the chicken marinade: Dissolve the sugar in 3 cups warm water. Add the garlic, fish sauce and salt and mix well. Cool completely. Add the chicken to the marinade and refrigerate for 1 day.
  • For the sofrito: Place the apples, onions, ginger and garlic in a pot, then add just enough oil so that everything is submerged. Cook on low heat until everything is brown, 2 1/2 hours.
  • For the chili paste: Cook the tomato paste and 3 cups sofrito in a pan until it develops a deep red color. Add the chipotles, sambal, chile flakes and salt and pepper. Puree the mixture in a food processor.
  • For the chili pepper sauce: Add the soy sauce, sugar, mirin, sambal, chile flakes, garlic, ginger, 3 cups water and 2 cups chili paste to the pot and bring to a boil.
  • Meanwhile, mix the cornstarch together with 1 tablespoon water in a bowl.
  • When the pot comes to a boil, add the cornstarch mixture and cook until thickened, 3 more minutes.
  • For the chili pepper chicken: Preheat the oil in a deep-fryer to 350 degrees F.
  • Remove the chicken from the marinade and coat in the flour. Dust off any excess and fry in batches until cooked through, about 8 minutes. Transfer to a bowl and toss with 1 cup chili pepper sauce until thoroughly coated.
  • Plate with rice and finish by sprinkling with green onions and furikake.

4 boneless, skinless chicken breast halves, 8 ounces each
Kosher salt
Freshly ground black pepper
1 5-inch-long piece fresh ginger root, peeled
8 fat garlic cloves
4 jalapeño peppers
1 quart chicken broth
3 tablespoons soy sauce
2 tablespoons dark brown sugar
2 teaspoons fish sauce
2 teaspoons freshly squeezed lime juice, more to taste
Cooked rice, for serving
Sesame oil, for drizzling
1 bunch roughly chopped basil, for serving
1 bunch roughly chopped cilantro, for serving
1 bunch thinly sliced scallions, for serving
1 European cucumber, thinly sliced, for serving

Steps:

  • Cut each chicken breast in half crosswise and season with salt and pepper.
  • Slice about an inch of ginger root into thin rounds and place in a large pot. Coarsely chop remaining ginger and place in a blender. Thinly slice 2 garlic cloves and add to pot. Coarsely slice remaining garlic and add to blender. Thinly slice 2 jalapeño peppers and add them to pot. Halve remaining peppers, discard seeds and coarsely chop flesh; place in blender.
  • Add chicken broth to pot and bring to a simmer. Let cook for 10 minutes. Add chicken pieces to broth and let liquid come back to a simmer. Immediately turn off heat, cover pot and let sit for 10 minutes. Cut into a piece of chicken to test for doneness. If it is not done, bring broth back to a bare simmer, then turn off heat, cover and let sit for an additional minute or two.
  • In a small bowl, stir together the soy sauce and brown sugar until sugar mostly dissolves. Set aside. To the mixture in blender add fish sauce and lime juice along with 1/4 cup broth from pot. Puree, if necessary adding a little more broth to help mixture move in blender. Taste and add a pinch of salt and more lime if needed.
  • When chicken is done, transfer to a cutting board and slice. Remove garlic and pepper from broth and discard, if you like. To serve, heap rice in 4 shallow bowls and top with chicken slices. Spoon several tablespoons broth over chicken and rice, then drizzle with sweet soy sauce and sesame oil. Sprinkle on the herbs, scallions and cucumber. Serve garlic-chili-ginger sauce on the side; have additional sesame oil and sweet soy sauce on table for more drizzling.

1 tablespoon cornflour (Cornstarch)
55 ml light soy sauce
1 tablespoon honey
1 teaspoon sweet chili sauce
2 tablespoons vegetable oil
1 tablespoon sesame oil
1 chili, seeded and thinly sliced (Red for colour)
1 clove garlic, finely chopped
1 large red pepper, cut into strips
1 onion, thinly sliced
1 piece fresh ginger, peeled and cut into strips.
2 chicken breasts, cut into strips

Steps:

  • Combine cornflour with 55ml water in a small jug or bowl.
  • Stir in the soy sauce, honey and chilli sauce, mix well and set aside.
  • Heat Vegetable Oil in wok, and stir fry chicken for 5 minutes until cooked, remove and keep warm.
  • Add Sesame oil to wok with chopped chilli and garlic, stir fry for 30 seconds.
  • Add peppers, onions and ginger and stir fry for a further 2- 3 minutes.
  • Return chicken to wok, add cornflour mix and stir until the sauce begins to thicken and chicken is hot.
  • Serve immediately with noodles.
  • If you want to save a few calories you could grill (broil) chicken or steak.
  • This should save 1.5 tbsp of Vegetable Oil.

2 tbsp Shaohsing wine or dry sherry
1 tbsp cornflour
2 tbsp soy sauce
3 chicken breasts, cut into large chunks
3 tbsp sunflower oil
2 red peppers, deseeded and cut into large chunks
small bunch of spring onions, whites cut into finger lengths, greens finely sliced
4 garlic cloves, finely sliced
thumb-sized piece of ginger, peeled and finely sliced
1 red chilli, sliced
½ tsp caster sugar
2 tsp malt vinegar
80g roasted peanuts or cashews
rice or noodles, to serve (optional)

Steps:

  • Mix together the wine, cornflour and half the soy sauce in a large bowl, then tip in the chicken pieces and toss to coat. You can do this up to a day ahead and keep covered and chilled until needed. Heat half the oil in a wok over a high heat and fry the chicken for 4-5 mins, stirring occasionally, until golden on all sides. Scoop out onto a plate.
  • Heat the rest of the oil in the same wok and fry the peppers and spring onion whites for 1 min. Add the garlic, ginger and chilli, and stir-fry for another minute. Add the sugar, vinegar and the remaining soy. Let everything sizzle for 30 seconds, then tip the chicken and any juices into the wok along with the nuts. Stir-fry for another 1-2 mins until the chicken is cooked through. Stir through the spring onion greens and serve with rice or toss through some cooked noodles, if you like.

1 bunch green onions, thinly sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 fresh jalapeno peppers, seeded and minced

½ teaspoon ground ginger
½ teaspoon salt
½ teaspoon dried sage
½ teaspoon ground cumin

1 tablespoon olive oil
3 tablespoons butter
¼ cup all-purpose flour

Steps:

  • In a large skillet, heat olive oil over medium heat. Add chicken, and saute until cooked through. Remove the chicken from the pan.
  • Saute the onion, red bell pepper, yellow bell pepper, jalapeno chile peppers and garlic in the same skillet. Return the chicken, along with the ginger, salt, sage, cumin and white pepper. Mix thoroughly.
  • In a separate small saucepan or skillet, melt butter or margarine over medium heat. Stir in flour to make a roux. Whisk in the chicken broth and mix all together. Stir this mixture into the sauteed chicken and vegetables.
  • Stir in the beans with can liquid, and simmer all over low heat for 15 to 20 minutes or until cooked and heated through.
