1/2 cup plus 2 tablespoons extra-virgin olive oil
1 onion, finely chopped
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
2 1/2 pounds tomatoes, cored and chopped
Kosher salt
1 cup tomato juice
3 sprigs fresh basil, plus chopped leaves for topping
5 cups cubed day-old country bread (crusts removed)
1 tablespoon red wine vinegar

Steps:

  • Heat 1/4 cup olive oil in a Dutch oven over medium-low heat. Add the onion and cook, stirring, until softened, 8 to 10 minutes. Add the garlic and red pepper flakes and cook until softened, about 1 minute. Increase the heat to medium, add the tomatoes and 1/2 teaspoon salt, and cook, stirring occasionally, until juicy, 2 to 3 minutes. Add the tomato juice, basil sprigs and 3 cups water. Bring to a simmer and cook until the tomatoes are very soft, 15 to 20 minutes.
  • Add 3 cups bread cubes and return the soup to a simmer. Cook, mashing the bread with a wooden spoon, until broken down, 5 to 7 minutes. Discard the basil sprigs. Stir in the vinegar. Working in two batches, puree the soup in a blender until smooth, adding 2 tablespoons olive oil per batch. Refrigerate until cold, at least 2 hours or overnight.
  • Before serving, heat the remaining 2 tablespoons olive oil in a skillet over medium-low heat. Add the remaining 2 cups bread cubes; cook, tossing, until golden, 5 to 6 minutes. Season the soup with salt; top with the croutons and chopped basil.

1 green onion, finely sliced
3 cups very cold tomato juice
2/3 cup very cold sour cream, regular or low fat
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper
2/3 cup chilled seeded, peeled and diced Kirby cucumber
2 cups chilled cantaloupe balls or small dice
Few slices of avocado

Steps:

  • Whisk the green onion, tomato juice, sour cream, lemon zest and juice together. Season with salt and pepper and chill until dinner time. Chill cucumber and cantaloupe dice separately. Right before serving, combine the tomato juice mixture with the cucumber and cantaloupe, adjust the seasoning and serve with slices of fresh avocado.

2 tablespoons olive oil
6 green onions, chopped
1 red bell pepper, chopped
2 garlic cloves, chopped
1 jalapeño chili, seeded, chopped
4 cups tomato juice
1 1/2 pounds tomatoes, seeded, chopped
3 tablespoons plus 2 teaspoons fresh lime juice
2 tablespoons prepared horseradish
1/4 cup sour cream
1 tablespoon minced seeded canned chipotle chilies
1/4 cup whipping cream

Steps:

  • Heat oil in heavy large saucepan over low heat. Add next 4 ingredients. Cover; cook until vegetables are tender, stirring often, about 20 minutes. Add tomato juice, tomatoes, 3 tablespoons lime juice and horseradish. Increase heat to medium-high; boil, uncovered, until flavors blend, about 10 minutes. Cool slightly. Working in batches, purée soup in blender until smooth. Season with salt and pepper. Chill at least 4 hours or overnight.
  • Mix sour cream, chipotles and remaining 2 teaspoons lime juice in medium bowl. Gradually whisk in whipping cream. Season with salt and pepper.
  • Divide soup among 6 bowls. Drizzle generously with chipotle cream.

5 tablespoons unsalted butter
2 large leeks (white part only), well cleaned and chopped
1 tablespoon finely minced fresh thyme, or 1 teaspoon dried
2 bay leaves
2 pounds plum tomatoes, preferably yellow, trimmed and cut in chunks
3 1/2 cups chicken broth, homemade or low-sodium canned
2 teaspoons sugar
1 tablespoon salt
1 teaspoon freshly ground black pepper
1/3 cup olivada (black olive puree) or 1/2 cup pitted imported black olives pureed with 1 tablespoon olive oil
1/4 cup whipping cream
2 red plum tomatoes, trimmed and diced, for garnish

Steps:

  • To make the soup, melt the butter in a large saucepan over low heat. Add the leeks, thyme and bay leaves. Cover, and cook 20 minutes, stirring once or twice. Stir in the tomatoes, chicken broth, sugar, salt and pepper. Bring to a simmer, and cook, uncovered, until the tomatoes are soft and the soup has thickened, about 25 minutes, stirring once or twice.
  • Cool slightly, remove the bay leaves, and puree in a food processor. Place in a bowl, cover, and refrigerate until cold, at least 5 hours. The soup can be prepared to this point up to 2 days ahead.
  • To make the olive cream, put the olivada in a small bowl and whisk in the cream. Taste the soup and adjust seasoning if needed. Ladle into chilled bowls, and drizzle with the black olive cream. Sprinkle with diced red tomatoes, and serve immediately.

My recreation of a Whole Foods soup that they seem to have stopped making that a friend of mine was in love with. You can omit the cream and it will be just a more tomatoey spicy soup.

8 -10 tomatoes, cut into quarters (roma)
1 tablespoon olive oil
2 heads garlic
1 -2 dried chipotle pepper, rehydrated in hot water and minced
1 cup crushed tomatoes, canned
1 cup chicken stock or 1 cup vegetable stock
1 -2 teaspoon balsamic vinegar
1 cup cream
salt and pepper

Steps:

  • Preheat Oven to 400°F and line baking sheet with foil.
  • Put tomatoes on pan skin side down, drizzle with olive oil and sprinkle with salt.
  • Cut tops off the garlic, drizzle with olive oil and wrap in foil.
  • Roast tomatoes and garlic in oven for 50 - 60 minutes (till tomatoes are.
  • brown on the bottom and the garlic is soft).
  • Blend tomatoes, chipotle peppers and canned tomatoesin blender or with hand blender in pot.
  • Squish in roasted garlic and blend.
  • In pot add in stock and vinegar. Heat.
  • Add in cream, season and serve.

1 (14.5 ounce) can Hunt's® Fire Roasted Diced Tomatoes with Garlic
3 cups chicken broth
¾ cup heavy cream

Steps:

  • Heat olive oil in a saucepan over medium heat. Add onion and cook until soft and translucent, approximately 6-7 minutes. Add cumin, chili powder and salt. Stir to combine. Add chipotle peppers and Adobo sauce and stir.

3 pounds ripe tomatoes, peeled and deseeded, coarse chopped*
2 tablespoons olive oil
1 small red onion, chopped
2 garlic cloves, smashed
1/2 cup vegetable stock
1 chipotle pepper (from a can of chipotles in adobo)
3 tablespoons tomato paste
1/2 cup heavy cream
1/2 teaspoon salt
Cayenne pepper, to taste
Chipotle Tabasco Sauce, optional (for garnish)

Steps:

  • Heat the olive oil in a large pan over medium heat. Add the onion. Cook for 7-10 minutes, stirring frequently, until tender and translucent. Add the garlic and cook for another minute or two. Add the tomatoes, vegetable stock, chipotle pepper, and tomato paste. Simmer over medium/medium-low heat for about 25 minutes, stirring frequently. The tomatoes should almost completely break down during the cooking time. Allow the mixture to cool slightly, then transfer to a food processor or blender. Blend until smooth, then return to the pan. Add the cream. Season with salt, to taste (about 1/2 teaspoon should do the trick). Add cayenne pepper, to taste, if additional spiciness is desired. Warm gently over medium-low heat. Garnish with a few dashes of chipotle tabasco and homemade croutons. Makes 2 generous servings * For the homemade croutons, simply toss a few chunks of French bread in a bit of olive oil, season with cajun seasoning or any other seasoning, then bake in a 375 degrees F. oven until toasted, about 10 minutes or so.
