Steps:

  • Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
  • Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.

1 (1/4-ounce) package active dry yeast (2 1/4 teaspoons)
3/4 cup warm water (105 to 115 degrees F)
1 3/4 to 2 cups unbleached all-purpose flour, plus additional for kneading and dredging
1 1/2 teaspoons salt
2 teaspoons olive oil, plus 1 teaspoon for greasing the bowl
8 ounces buffalo mozzarella, thinly sliced
Tomato-Red Pepper Sauce, recipe follows
12 ounces goat cheese, thinly sliced
2 tablespoons chopped fresh basil leaves
Red Chili Oil, recipe follows
2 tablespoons olive oil
1 large Spanish onion, coarsely chopped
3 cloves garlic, chopped
2 roasted red peppers, peeled, seeded and chopped
2 cups canned plum tomatoes, with juice, pureed
Salt and pepper
1/2 cup extra-virgin olive oil
1 teaspoon red chili flakes
1/2 teaspoon salt

Steps:

  • Whisk together the yeast and 1/4 cup of the water in a small bowl and let sit for 5 minutes to proof. Place 1 3/4 cups of the flour in a large bowl with the salt. Add the yeast mixture, the remaining water, and oil and stir until combined. Transfer the dough to a floured surface and knead until smooth. Grease a large bowl with the remaining oil, add the dough and turn to coat. Cover and place in a warm place until doubled in volume, about 1 to 1 1/2 hours.
  • Preheat the grill to high. Once the dough has risen, divide it in half, and divide each half into 2 balls. Roll each ball into an 8-inch circle. Brush with oil and grill on both sides until golden brown.
  • Spread about 1/2 cup of the sauce on each pizza and top with goat cheese and basil. Place pizza on the grill and cook until bottom crust is golden brown and cheese is bubbly. Remove from heat, drizzle with red chili oil, and serve.
  • Heat oil in a medium saucepan over medium heat. Add onion and garlic and cook until soft, about 3 to 4 minutes. Add red peppers and tomatoes and cook until thickened. Season with salt and pepper, to taste. Puree in a food processor until smooth. Let cool slightly.
  • In a blender, combine oil, red chili flakes, and salt; blend for 1 minute. Strain into a small bowl or squeeze bottle.

Coarsely ground black pepper
3 tablespoons cider vinegar
2 tablespoons honey or agave
3 tablespoons vegetable oil
Celery salt and freshly ground black pepper
1/2 pound shredded cabbage slaw salad mix with carrot and purple cabbage
1/2 small red onion, very thinly sliced
2 pounds ground sirloin
1/4 cup grated onion
Montreal steak seasoning (recommended: McCormick) or coarse salt and black pepper
1/4 cup Worcestershire sauce
1 teaspoon dried marjoram or Mexican oregano, 1/3 palmful
1 teaspoon dried thyme
2 tablespoons ancho chili powder, a palmful,
1/2 cup beer (recommended: Brooklyn Ale)
Vegetable oil or olive oil, for drizzling
Sliced yellow sharp Cheddar, optional
Good quality jarred refrigerated pickle slices
12 slider rolls or brioche rolls (recommended: Pepperidge Farm)

Steps:

  • Put all the ingredients for the barbecue sauce in small pot and cook over medium-low heat until the sauce thickens and the flavors combine, about for 20 minutes.
  • Whisk together the vinegar, honey and oil, in a medium bowl. Stir in the celery salt and black pepper, to taste. Add the slaw mix and onions and toss together. Let the salad wilt up to 10 to 15 minutes.
  • Preheat a grill or griddle to medium.
  • Put the meat in a bowl with the grated onion and season with steak seasoning or salt and pepper, to taste. In a small bowl combine the Worcestershire with the herbs, chili powder and beer. Pour the herb mixture over the meat and mix thoroughly. Form the meat mixture into 12 sliders and drizzle with vegetable oil or olive oil. Put the burgers on the grill or griddle and cook for a few minutes on each side. Baste the burgers liberally with barbecue sauce. Top the burgers with Cheddar and let it melt, if you prefer cheese burgers.
  • Serve the burgers on slider rolls topped with pickle slices and the slaw.

One 3 1/2 to 4-pound trimmed beef tenderloin roast, tied
Salt and freshly ground black pepper
2 tablespoons butter
2 tablespoons olive oil
Olive Oil Mashed Potatoes, recipe follows
Roasted Chili and Olive Ragout, recipe follows
1 bunch watercress
2 pounds large russet potatoes
Salt
1/3 cup extra-virgin olive oil
2 tablespoons pitted and finely chopped olives
1/4 teaspoon freshly ground black pepper
1/4 cup olive oil
1 red onion, thinly sliced
1/2 cup olives, pitted and finely chopped
1 tablespoon chopped fresh parsley
2 jalapeno peppers, roasted, peeled, seeded and finely diced
1 red bell pepper, roasted, peeled, seeded and cut into medium dice
1 poblano pepper, roasted, peeled, seeded and cut into medium dice
1 yellow bell pepper, roasted, peeled, seeded and cut into medium dice
Salt and freshly ground black pepper

Steps:

  • Prepare a smoker using olive branches. Place the beef tenderloin in the smoker and smoke for 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Pat the beef dry and sprinkle with salt and pepper. Heat the butter and oil in a roasting pan over moderately-high heat until the foam subsides. Then brown the beef well on all sides, about 10 minutes. Put the roasting pan with the beef in the middle of the oven and roast until an instant-read thermometer inserted diagonally 2 inches into the center registers 130 degrees F for medium-rare, about 30 minutes.
  • Transfer to a cutting board and let stand 10 minutes. Then cut into 1/2-inch-thick slices.
  • To serve, first place the Olive Oil Mashed Potatoes on a plate. Then lean 2 slices beef tenderloin on the potatoes. Place a large spoonful of the Roasted Chili and Olive Ragout around or on top. Garnish with watercress.
  • Peel and quarter the potatoes. Put the potatoes and 1 tablespoon salt in a 3-quart pot and cover with cold water by 1 inch. Bring to a boil, covered with the lid, and then reduce the heat and simmer, partially covered, until the potatoes are very tender, 20 to 25 minutes.
  • Drain the potatoes in a colander and return to the pot. Add the olive oil and olives, and season with salt and pepper. Mash with a potato masher until smooth.
  • Heat 2 tablespoons olive oil over medium-high heat in a saute pan. Add the red onions and cook, stirring occasionally, until the onions are golden brown, about 6 minutes. Remove from the heat. Add the rest of the olive oil and the olives, parsley and all the roasted peppers. Season with salt and pepper.

BROILED TERIYAKI TOFU WITH BITTER GREENS, CHILI, AND SCALLION OIL



Broiled Teriyaki Tofu with Bitter Greens, Chili, and Scallion Oil image

1 pound very firm tofu sliced into 4 large pieces
4 tablespoons teriyaki sauce
1/4 cup vegetable oil
1 thumb-sized piece of ginger, peeled and halved
3 scallions, white and green parts, sliced
2 garlic cloves, peeled and smashed
2 handfuls of broccolini or broccoli rabe
1 3/4 cup chicken stock
1 tablespoon soy sauce
1 tablespoon sesame oil
1 pinch red pepper flakes
1/2 medium onion, diced

Steps:

  • Heat the broiler and place a rack as close as possible to the flame. Put the tofu pieces on a plate and rub with all over with the teriyaki sauce.
  • Add the vegetable oil, one of the pieces of ginger, half the scallions and the garlic cloves to a small saucepan. Heat to a lively simmer, then turn off the heat and allow the oil to steep for 15 minutes.
  • Bring a large pot of salted water to boil. Add 2 tablespoons salt, then add the broccoli, blanch for 2 minutes, then drain well and shock under cold running water to stop the cooking. Chop into 1-inch lengths and set aside.
  • Heat the chicken stock in a small saucepan over medium heat-add the remaining piece of ginger, the soy sauce and half the sesame oil, and simmer on very low heat.
  • Place the tofu pieces in an ovenproof skillet or on a baking sheet and broil, turning once, until beginning to caramelize all over, about 4 minutes per side.
  • While the tofu is broiling, pick the piece of ginger out of the scallion oil and discard. Heat ½ of the scallion oil in a large saucepan over high heat. Add the chopped broccoli, the red pepper, the onion and the remaining sesame oil and sauté until warmed through.
  • To serve, place a mound of the broccoli in the center of a bowl. Place a piece of broiled tofu over the greens. Ladle some chicken stock around the greens, then add a few spoonfuls of the scallion oil. Repeat with a second bowl, top both bowls with the remaining scallions, and serve.

  • Place crabs, jalapeno, garlic, lemon zest and parsley in a large bowl. Add 5 tablespoons of olive oil and toss lightly. Marinate for 2 hours. In another large bowl pour the lemon juice and slowly add the extra virgin olive oil whisking constantly. Season with salt and pepper. Toss vinaigrette with lettuce leaves and divide between 4 plates. Place a large non-stick sauté pan over high heat. Add remaining 3 tablespoons olive oil. Dust the crabs with a little flour and place in the hot pan. Cook for 2-3 minutes on each side. Once crabs are crispy on the outside and cooked through, remove from the pan and serve over prepared salad.

2 tablespoons whole sichuan peppercorns
2 dried bay leaves
2 whole cinnamon sticks
2 cups peanut oil, or other neutral, high-heat oil, such as safflower
1 cup Sichuan red chile flakes
1 ½ teaspoons Chinese five-spice powder
1 ½ teaspoons kosher salt
4 tablespoons chili oil
4 large eggs
kosher salt, to taste
2 tablespoons fresh dill fronds, roughly chopped
2 tablespoons scallions, thinly sliced
flaky sea salt, to taste
toasted bread, for serving

Steps:

  • Make the chili oil: Add the shallot, garlic, Sichuan peppercorns, bay leaves, cinnamon sticks, and peanut oil to a small saucepan. Cook over medium-low heat until the temperature reaches 215-225°F (101-107°C). Simmer for 30 minutes, until the aromatics are golden brown, but not burnt. The oil should be gently simmering, with tiny bubbles rising to the surface. If the oil gets too hot or the aromatics start to brown too quickly, reduce the heat to low.
  • Add the Sichuan red chili flakes and Chinese five-spice powder to a medium, heatproof bowl. Place a fine-mesh strainer over the bowl. Carefully pour the hot oil through the strainer over the chili flakes and discard the aromatics left behind. Stir in the salt until dissolved. Let the chili oil cool completely before transferring to an airtight container. The chili oil will keep in the refrigerator for up to 6 months.
  • Make the egg skillet: In a 10-inch cast iron skillet, heat 4 tablespoons of chili oil over medium heat until sizzling. Crack the eggs into the skillet and season with kosher salt. Cook for 2-3 minutes, depending on your preferred yolk doneness. Carefully tilt the skillet to distribute the chili oil around the eggs and use a spoon to baste the eggs with the oil.
  • Remove the skillet from heat and top the eggs with the dill, scallions, and flaky sea salt. Serve with toasted bread.

3 wide strips orange zest, plus 2 tablespoons orange juice
1/4 teaspoon red-pepper flakes

2 bunches asparagus (about 1 pound each), trimmed, cut into 2-inch lengths
1 pound green beans, trimmed, cut into 2-inch lengths
1/2 cup tightly packed fresh basil leaves

Steps:

  • In a small saucepan, bring oil, orange zest, and red-pepper flakes to a simmer over medium-high and cook 3 minutes. Remove chili-orange oil from heat and set aside. (To store, refrigerate cooled oil in an airtight container, up to 3 days.)
  • Working in 2 batches, in a large pot of boiling salted water, cook asparagus and green beans separately until bright-green and crisp-tender, 3 minutes. Transfer to a colander and rinse with cool water to stop the cooking.
  • In a large skillet, heat 1 tablespoon chili-orange oil over high. Add half the vegetables and cook, stirring often, until warmed through and tender, 3 minutes. 3 shallots, diced (about 2 ounces total or 6 tablespoons diced)
6 garlic cloves, minced (1 tablespoon)
1 lb asparagus, trimmed and cut into 2-inch long pieces
1/2 cup chicken broth or 1/2 cup beef broth
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)

Steps:

  • Heat a non-stick wok or skillet over medium-high heat (375-425F / gas mark 5) for 30 seconds.
  • Add chili oil, shallots, and garlic; saute until the shallots are tender and beginning to brown (2-3 minutes).

5 to 6 Fresno chili peppers, roughly chopped
1 1/2 cups extra-virgin olive oil
1 1/2 teaspoons dry yeast
1/2 teaspoon sugar
1 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
2 tablespoons extra-virgin olive oil, plus more for coating bowl and grill
2 tablespoons extra-virgin olive oil, plus more for coating bowl and grill
Extra-virgin olive oil, for coating pan
8 ounces sweet Italian sausage, casings removed
1 cup ricotta
1/2 cup grated Parmigiano-Reggiano
1 sprig fresh oregano, leaves removed and gently chopped
1 bunch of arugula, trimmed

Steps:

  • For the chili oil: Bring the chilies and oil to a simmer in a small saucepan; remove from the heat and let the peppers steep in the oil for at least an hour or until the dough has risen and you're ready to make the pizzas. This can be done way in advance.
  • For the dough: In a small bowl, add 1/2 cup warm water (if the water is too hot the yeast will die and if the water is too cold the yeast will not activate). Add the dry yeast and sugar, stir to combine and let sit for 15 minutes. The top of the water will bubble and it will smell very yeasty; this is what you want.
  • In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour and add the olive oil and the yeast/water mixture. Using a fork, gradually stir the flour into the yeast/water mix. Once most of the flour has combined, turn the dough out to a smooth, clean work surface dusted with flour and use your hands to knead the dough to a smooth consistency.
  • Lightly coat the mixing bowl with oil, return the dough to the bowl, cover with plastic wrap and set in a warm place until the dough has doubled in size, at least 1 hour.
  • For the pizza topping: Coat a large saute pan with oil, add the sausage and bring to medium heat. Cook the sausage until brown, 10 to 15 minutes. Remove with a slotted spoon and reserve.
  • While the sausage cooks, mix together in a medium bowl the ricotta, Parmigiano-Reggiano and oregano.
  • Preheat the oven to 425 degrees F and preheat a grill.
  • When the dough is ready, portion it into six golf-ball-size pieces. (If you're not using the dough right away, wrap each ball individually in plastic and refrigerate until ready to use.) Dust a work surface with flour and roll each piece of dough into a rectangle (or whatever shape you like; I like irregular shapes).
  • Brush the grill with oil and arrange each piece of dough on the grill; you might need to work in batches here. Grill until the dough is stiff and crisp and has lovely grill marks on it, then flip and repeat on the second side, moving occasionally so the bottom doesn't burn.
  • Put the pizzas on baking sheets, smear each with some of the ricotta mixture, top with sausage and put as many pizzas as will comfortably fit in the oven; bake until the cheese has melted, 3 to 4 minutes. Again, you may have to work in batches. Remove the pizzas from the oven, top with arugula and drizzle with the deliciously spicy chili oil!

4 scallions, whites and greens separated, thinly sliced
1/2 cup vegetable oil
1 tablespoon crushed red pepper flakes
2 teaspoons sesame seeds
2 teaspoons Sichuan pepper, coarsely chopped
12 ounces thin ramen noodles or spaghettini
Kosher salt
1/4 cup tahini (sesame seed paste)
1/4 cup unseasoned rice vinegar
3 tablespoons reduced-sodium soy sauce
2 teaspoons toasted sesame oil
1 teaspoon sugar
ingredient info: Sichuan pepper is available at Asian markets and some specialty foods stores. If you can't find it, add an extra teaspoon each of red pepper and tahini.

Steps:

  • Cook scallion whites, vegetable oil, red pepper flakes, sesame seeds, and pepper in a small saucepan over low heat, stirring occasionally, until oil is sizzling and scallions are golden brown, 12-15 minutes; let chili oil cool in saucepan.
  • Meanwhile, cook noodles in a large pot of salted boiling water until al dente; drain. Rinse under cold water and drain well.
  • Whisk tahini, vinegar, soy sauce, sesame oil, sugar, and 2-3 tablespoons chili oil (depending on desired heat) in a large bowl; season with salt. Add noodles and toss to coat. Top with scallion greens and drizzle with more chili oil.

8 cups thinly sliced mushroom caps (like portobello, shiitake or oyster mushrooms), about 2 pounds
olive oil
3 garlic cloves, minced
1/4 cup finely sliced shallots
Salt and pepper
1/2 teaspoon dried chile de arbole (sold in Hispanic markets)
1 teaspoon ancho chili powder (sold in Hispanic markets)
8 ounces goat cheese, cut into 8 slices
2 dried New Mexico chili peppers (sold in Hispanic markets), stemmed and seeded
3 tablespoons fresh thyme leaves

Steps:

  • Preheat oven to 425 degrees. In a large bowl, combine mushrooms, 3 tablespoons olive oil, garlic and shallots, and salt and pepper to taste. Mix until the ingredients are lightly coated with oil.
  • Arrange evenly in one layer in a large, heavy roasting pan and roast until tender, about 15 minutes. Remove from pan, and let cool.
  • Prepare chili oil: in a blender, combine 1 cup olive oil, the New Mexico chilies, the chile de arbole and ancho powder. Puree. Strain through a fine strainer, and reserve. (Recipe to this point can be made a day ahead.)
  • To serve, preheat the oven to 425 degrees. Place the mushrooms in a large baking dish, drizzle with 1/2 cup chili oil and top with cheese slices. Bake until hot, 5 to 8 minutes. Remove from oven, garnish with thyme, and drizzle with a little more chili oil (any remainder will keep for three days). Serve hot.

6 ounces water chestnuts
1/2 cup cilantro leaves, chopped

1/4 cup crushed red-pepper flakes
2 tablespoons Szechuan peppercorns
2 cinnamon sticks, broken in half
1 star anise
1 cup safflower or other neutral oil

Steps:

  • Place red-pepper flakes in a small heat-resistant bowl or pint-size jar. In a small saucepan fitted with a candy thermometer, combine peppercorns, cinnamon, star anise, and oil over medium-low heat. Heat mixture until it registers 325 degrees on the thermometer, 10 to 12 minutes. Turn off heat and let steep 8 to 10 minutes until temperature reaches about 240 degrees. Pour through a strainer into bowl or jar with pepper flakes and let cool completely. Transfer to an airtight container or seal lid if using a jar. The chili oil can be stored in the refrigerator for up to 4 weeks.

1 1/2 cups arborio rice
1/2 cup dry white wine
1 cup white rice flour
6 T canola oil, divided
24 large uncooked shrimp, peeled, deveined, butterflied
RED CHILI OIL
4 chiles de arbol
1/2 cup olive oil
CHIVE OIL
1/2 cup olive oil
1/3 cup chopped fresh chives

Steps:

  • combine 4 1/2 cups broth and saffron in medium saucepan;bring to boil. Remove from heat;cover to keep warm. Heat olive oil in another med saucepan over med heat. Add onion and sute until tender. Add rice;stir 1 min. Add wine;stir until absored. Ad 1/2 cup saffron broth;stir until absorbed. continue adding brotha cup at a time until rice is just tender, stirring frequently. Season. Spray rimmed baking sheet with nonstick spray. Spread risotto on sheet. cover with plastic;refrigerate until cold nad firm, about 2 hours. Preheat oven to 300. Place rice flour in med bowl. Season. Using 2" cookie cutter cut out 24 rounds from risotto, dredge in rice flour nad place on clean baking sheet. Heat 4 T canola oil over med heat. Add risotto cakes and cook until golden brown. Transfer to another sheet and place in oven to keep warm. Sprinkle shrimp with salt and pepper. Heat remaining 2 T oil in skillet over high ehat. Saute shrimp until opaque in center. Top risoltto cake with 1 shrimp. Drizzle with red chili oil and chive oil

2 teaspoons dried crushed red pepper flakes
4 garlic cloves
2 slices gingerroot (1/4 inch thick)

Steps:

  • Place cooking oil, chilies, garlic cloves and gingerroot into an ovenproof glass bowl with lid.
  • Bake in 300 oven for 1 hour until garlic cloves and gingerroot are golden brown.
  • Remove to wire rack to cool for 30 minutes.
  • Line strainer with coffee filter or several layers of cheesecloth, strain oil into glass jar. Chill.
  • Oil should be clear. Chill makes about 7/8 cups.

RED HOT CHILI AND SESAME OIL POPCORN

I got a little creative one day and came up with this variation on my favorite snack, and I've made it frequently since. I make this on the stove top in an ordinary pan, but you could use an old-fashioned stove top popper. Don't use a Teflon coated pan or one with a shiny interior that you want to keep pretty.

2 teaspoons vegetable oil
1 teaspoon toasted sesame oil
1/2 cup unpopped popcorn
1/2 teaspoon red-hot chili oil (or to taste)
salt (to taste)

Steps:

  • Put vegetable and sesame oils in a large pot with a lid, and begin to heat on high heat.
  • When the oil is warmed, but not yet hot, add the unpopped popcorn, and immediately shake red hot chili oil onto the popcorn kernels.
  • Cover the pan and begin shaking immediately, holding the lid down and protecting your hands with potholders. Shake the pan until the popping slows. (I like to slightly raise the pan off the burner, shake the pan in a swirling motion, set it back down, then about two seconds later pick it up and shake it again, and so on.).
  • Transfer the popped corn to a bowl right away and salt to taste.
