CHILI-LIME CHICKEN KABOBS
I invented this recipe for a quick dinner. I only marinated the chicken for one hour, but I am sure if you marinate longer, it would taste even better.

Steps:
- In a small bowl, whisk together the olive oil, vinegar, and lime juice. Season with chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Place the chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
- Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
- Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.

- place the lime juice, the cut up chicken and the pepper flakes in a bowl or bag and refrigerate and marinate for at least 45 minutes. NOTE: can be marinated longer, but that will intensify the heat. After the chicken is marinated, alternate chicken and vegetables on skewers and grill, usually for about 7 minutes total. serve with white rice that has sauteed garlic in it

Steps:
- 1. In a bowl, whisk the marinade ingredients together.
- 2. Add the chicken and stir to coat. Cover with plastic wrap and refrigerate for 6 hours.
- 3. If you are using wood skewers, soak them in water for 30 minutes before grilling.
- 4. When ready to grill, preheat the grill to high heat.
- 5. Thread chicken, mushrooms, peppers and zucchini on skewers alternately.
- 6. Brush the grill grate with oil.
- 7. Place the kabobs on the grill and cook for 15 minutes turning once, or until chicken is done.
