Pan-Fried Cumin-Chile Crusted Fish image

This only serves 2 but can easily be increased to serve how many servings you need. Although the original recipe suggests using snapper, other white fish such as Tilapia or Grouper can be used. When I made this I used Tilapia, as it is more readily available where I live. As there is not much oil used to cook the fish, it best to use a bit of Pam in the skillet or a non-stick pan, as the fish tends to stick. Recipe source: local newspaper

2 tablespoons flour
1 teaspoon ground cumin
1 teaspoon chili powder
salt
pepper
1 egg white
3/4 lb white fish fillet (see note in description)
1 tablespoon canola oil

Steps:

  • In a pie pan or shallow bowl combine first 5 ingredients (flour - pepper).
  • In a second pie pan or shallow bowl beat egg white.
  • Dip fish in egg white and then into flour mixture, coating well and shaking off excess.
  • Heat oil in skillet (see note in description) over medium high heat.
  • Saute fish for 3 minutes and then flip fish and saute for 5 minutes of other side or until fish is done.

2 lbs fresh cod fish fillets
1 teaspoon chili powder
1/2 teaspoon dried parsley or 1/2 teaspoon dried cilantro
1/2 teaspoon salt
2 tablespoons butter
1/4 teaspoon cumin
1 lime, juice of

Steps:

  • Heat oven to 450°F.
  • Coat oven safe pan with oil or cooking spray.
  • Place cod in pan.
  • Sprinkle chili powder, herb and salt.
  • Roast 5-7 minutes until opaque.
  • Melt butter in small saucepan.
  • Add cumin and lime juice and cook for 1 more minute.
  • Before serving drizzle butter mixture over cod.

One of my family's favourite dishes. A bit hot but, you can alter how hot it is. Very tasty and very morish.

500 g fish fillets
1 cup plain flour
1/3 cup cornflour
1 egg white
3/4 cup water
oil (for deep-frying)
1 tablespoon oil
1 tablespoon grated green ginger
3 garlic cloves
1/2 cup tomato sauce
1/3 cup chili sauce
2 teaspoons sugar
1 tablespoon soy sauce
2 teaspoons dry sherry
1/2 cup water

Steps:

  • The strength of the chili sauce will effect how hot this dish is.
  • I recommend a sweet chili sauce for those who don't like it too hot.
  • Place oil, ginger, garlic, tomato sauce and chili sauce in a pan on medium heat for 5 minutes.
  • Add remaining ingredients and let it simmer on low for a few more minutes.
  • Leave the sauce to sit while you prepare the fish.
  • Chop the fish into approximately bite-size pieces.
  • Sift the flour and cornflour into a bowl.
  • Make a well in the flour and add the egg white and water.
  • Mix to a smooth batter.
  • Coat the pieces of fish with the batter.
  • Heat oil in large pan and dip the fish into the oil.
  • Cook the pieces for a few minutes each (cook many at a time).
  • Heat the sauce back up.
  • Once the fish is all cooked add the sauce to the fish in a large frying pan.
  • Serve when hot.
  • Enjoy.

2 pounds white fish fillets (such as sea bass, orange roughy or red snapper), each about 1 inch thick
Coarse salt
3 large eggs, beaten to blend
1 cup unsalted matzo meal
4 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon coarse salt
1/4 cup (or more) vegetable oil
Lemon wedges
Fresh cilantro sprigs

Steps:

  • Sprinkle fish fillets generously on all sides with coarse salt; let stand 30 minutes. Rinse fish to remove salt and pat dry with paper towels.
  • Place eggs and matzo meal in separate large shallow bowls. Mix chili powder, cumin, black pepper and 1/2 teaspoon coarse salt in small bowl to blend. Sprinkle fish generously with chili powder mixture. Dip fish into eggs, then into matzo meal, coating completely. Transfer fish to waxed paper.
  • Heat 1/4 cup oil in heavy large skillet over medium-high heat. Working in batches, fry fish in single layer until just opaque in center and golden brown, adding more oil if necessary, about 5 minutes per side. Transfer fish to paper towels and drain.
  • Arrange fish on platter. Garnish with lemon wedges and cilantro sprigs.
