6 pork chops, 3/4 inch thick
16 oz. jellied cranberry sauce
15 oz. French dressing
1 dry onion soup mix packet

Steps:

  • Mix together cranberry sauce, French dressing and onion soup mix.
  • Add the pork chops to the sauce, and either cook immediately or refrigerate overnight.
  • Bake uncovered in a greased baking dish for 75 to 80 minutes at 325 degrees F. Pork chops should be cooked to an internal temperature of 145 degrees F to 160 degrees F.
  • Be sure the chops are completely covered with the sauce. Baste occasionally if desired.
  • Serve over rice.

1/4 teaspoon salt
1/4 teaspoon pepper
1 cup fresh or frozen cranberries, thawed

  • Sprinkle pork chops with salt and pepper. Heat a large skillet over medium heat. Add pork chops; cook 4-6 minutes on each side or until a thermometer reads 145°. 1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

Steps:

  • In a small bowl, mix salsa verde, green enchilada sauce and cream of chicken until smooth.
  • Line crock pot insert with a liner or spray with nonstick cooking spray.
  • Arrange pork chops in bottom of insert, pour sauce over top. Add another layer of chops and more sauce, continue until the all the chops are in the insert and be sure the top is completely covered with the green sauce.
  • Cook on high for 1.5 hours or low for 3-4 hours.

3 teaspoons olive oil
1 medium onion, diced
1/2 red pepper, diced
1 large carrot, diced or shredded
1 clove garlic, minced
1/2 tablespoon chili powder
1 teaspoon ground cumin
1 (15-ounce) can whole or chopped tomatoes
1 cup broth (vegetable, chicken, tomato juice or water)
1 (28-ounce) can black beans
1 ear corn, kernels removed
Coarse salt and freshly ground black pepper
Perfect Microwaveable Rice, recipe follows
2 cups long grain rice
3 1/2 cups water or stock
1 1/2 teaspoons butter or oil
Salt and freshly ground black pepper

Steps:

  • In a large pot, heat the olive oil over medium high heat. Add the onions, peppers, carrot, and garlic, cook stirring often, until vegetables are tender, about 5 minutes. Add chili powder and cumin, and cook 1 to 2 minutes more or until they smell delicious.
  • Add the tomatoes, broth, black beans and corn to the pot with the vegetables. Bring to a boil, reduce to a simmer. Cook 10 to 20 minutes, until flavors are well combined. Taste and adjust seasonings with salt and pepper.
  • Serve over rice.
  • Place all ingredients in a large glass measuring or any microwave safe bowl. The rice expands during cooking, so be sure to choose a container that is large enough. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.

1 (1 1/3 ounce) envelope dry onion soup mix
1/2 teaspoon cumin powder
1 (16 ounce) can jellied cranberry sauce
1 -2 teaspoon dijon-style mustard

Steps:

  • Melt butter in 12-inch skillet until sizzling, add pork roast and cook over medium-high heat, turning occasionally, until browned (4 to 6 minutes).
  • Place in slow cooker.
  • Sprinkle with dried soup mix and cumin, spread cranberry sauce on top of the dry ingredients.
  • Cover, cook on Low heat setting for 4 to 6 hours or until roast is fork tender.

I got this recipe in a newsletter, but it's actually from a cookbook by Donald Link called "Real Cajun". This dish was so delicious that I bought the book, and it was well worth it!

6 -7 lbs boneless pork roast (shoulder or butt)
kosher salt
ground black pepper
2 large onions, thinly sliced
8 garlic cloves, thinly sliced
3 tablespoons fresh thyme leaves
1 tablespoon dried rosemary, crumbled
2 tablespoons vegetable oil
8 tablespoons butter
1/2 cup all-purpose flour
4 cups chicken broth
1/2 lemon, juice of (optional)

Steps:

  • Preheat the oven to 275ºF. Season the pork very generously with salt and pepper, rubbing the seasonings into the fat and flesh of the meat. Set the roast aside for at least 30 minutes or up to 1 hour to bring to room temperature.
  • Combine the onions, garlic, thyme, and rosemary in a medium mixing bowl and toss to combine. Heat the vegetable oil in a Dutch oven over medium-high heat. When the oil is very hot, sear the meat on all sides until deeply browned and crusty, 10 to 12 minutes total.
  • Transfer the meat to a plate, reduce the heat to medium, and then stir in the butter. When the butter has melted, stir in the flour to make a roux and continue to cook, stirring, until the roux turns a dark peanut butter color, about 10 minutes.
  • Add the onion mixture and cook, stirring, until all the ingredients are well coated and the mixture is thick. Whisk in the chicken broth and bring to a simmer, stirring constantly. Return the pork to the Dutch oven, spoon some of the onion mixture over the meat, cover, and roast for about 3 hours, turning and basting the pork every 30 minutes or so, until the meat will break apart when pressed gently with a fork.
  • At this point, you can serve the roast right out of the pan, or transfer it to a plate, then simmer the pan drippings, skimming off excess fat, until reduced by about one-third, or until it coats the back of a spoon. Add the lemon juice and taste for seasonings.
  • Before serving, sprinkle the roast with some additional salt, to taste. Serve the roast smothered with a generous amount of sauce over hot steamed rice.

CRANBERRY ROAST PORK

This dish has been one we have often made during the Christmas holidays. It is a family favorite. The recipe came from the Frugal Gourmet - Jeff Smith The only thing we changes is to double the amounts for the Cranberry sauce as we love having extra sauce on the side to serve over the roated pork.

4 lbs pork roast
salt & pepper
1 (16 ounce) can whole sweetened cranberries
1/4 cup peeled and chopped yellow onion
3/4 cup orange juice
ground cinnamon and ginger

Steps:

  • Rub the roast with salt and pepper, and place on a rack in a baking pan. Roast at 325 deg. for 2 1/2 to 3 hours, or until an inserted meat thermometer registers 175 deg.
  • In the mean time, combine all the remaining ingredients in a stainless-steel saucepan and bring to a boil. Remove from the heat.
  • Halfway through the roasting process, begin basting the roast every 15 minutes with the cranberry mixture. The remaining sauce can be served on the side with the thinly sliced pork.
  • Serve along with Wild Rice with mushrooms and onions for a wonderful meal.
