Sloppy Joe Cornbread Bake - comfort food at its best! Sweet cornbread crust topped with sloppy joe meat, and cheese. A weeknight favorite. Everyone always cleans their plate! Jiffy mix, creamed corn, eggs, milk, cheese, ground beef, and Manwich sloppy joe sauce. Super easy to make and tastes great!

1 (8.5oz) pkg cornbread mix
1 (14.75-oz) can creamed corn
2 eggs
½ cup milk
2 cups shredded cheddar cheese, (divided)
1½ lb ground beef
1 (15-oz) can Manwich sloppy joe sauce

Steps:

  • Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add sloppy joe seasoning. Cook for an additional 5 minutes.
  • Spread beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
  • Allow to cool for 5 to 10 minutes and cut into squares.

Open Face Mexican Sloppy Joes over Cornbread image

Another comfort food. Open face sloppy Joes on corn bread (with a few additions). It has a bit of a Mexican flare but still very mild. I also love to serve this with Mexican coleslaw, but the sloppy Joe's are great on their own. I even make this with ground turkey which has less fat, but that it is up to you. I like to serve over a spicy cornbread and top with some monterey jack cheese. It makes a great Saturday or Sunday dinner.

1 lb ground turkey
1/2 cup green pepper, diced
2 teaspoons minced garlic
1 celery rib, diced
1 small onion, diced
14 1/2 ounces diced Mexican tomatoes
8 ounces tomato sauce
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 pinch sugar
1 teaspoon cumin
1 teaspoon chili powder
salt
pepper
2 teaspoons olive oil to saute the vegetables and turkey
1 cup monterey jack cheese
3 scallions, fine chopped
2 (14 ounce) boxes Jiffy cornbread mix (or your favorite mix along with eggs and milk according to directions)
1 teaspoon cumin
1 teaspoon chili powder
1/4 cup diced green chilis
1 cup monterey jack cheese

Steps:

  • Vegetables -- In a large saute pan, add the oil and bring to medium heat. Saute the celery, garlic, onion and green pepper until lightly sauteed.
  • The turkey -- once the vegetables are soft, add the turkey inches Saute until golden brown and vegetables are soft.
  • Add the tomatoes, sauce, and paste, seasoning, Worcestershire, salt and pepper to taste. And just let simmer 30-40 minutes.
  • Cornbread -- Mix the cornbread mix, the milk and eggs according to the box directions. Add the green chilies (lightly drained, I keep a little juice), seasoning and cheese. Bake according to directions. I like to use a 13x9" pan.
  • Cut the cornbread into squares and then serve Sloppy Joe sauce over the top. Garnish with grated cheese and scallions.
  • I love to serve with this with coleslaw or black beans or a simple green salad.

A hearty cornbread topping creates the "bun" for this delicious Sloppy Joe casserole.

1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1 can (15 oz) tomato sauce
1 tablespoon packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon yellow mustard
1 pouch (6.5 oz) Betty Crocker™ golden corn muffin and bread mix
1/3 cup milk
2 tablespoons vegetable oil
1 egg
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. Stir in tomato sauce, brown sugar, Worcestershire sauce and mustard. Cook 2 to 3 minutes, stirring frequently, until boiling; keep warm.
  • In small bowl, stir corn bread mix, milk, oil and egg just until moistened (batter will be lumpy).
  • Spoon hot beef mixture into 8-inch square (2-quart) glass baking dish. Sprinkle with 3/4 cup of the cheese. Spoon corn bread batter evenly over top.
  • Bake 25 to 35 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle remaining 1/4 cup cheese over hot casserole.

1 pound ground beef
1 red onion (diced)
1 red bell pepper (diced)
3 Tablespoons brown sugar
3 Tablespoons red wine vinegar
1 Tablespoon BBQ seasoning
1 Tablespoon Worcestershire Sauce
15 ounces tomato sauce
8.5 ounce Jiffy Corn Muffin Mix
1 egg
1 Tablespoon vegetable oil
1/3 cup milk
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat large skillet on medium-high heat. Add ground beef. When meat is browned, add onions and peppers.
  • In a medium-sized bowl, prepare BBQ sauce by mixing together brown sugar, vinegar, BBQ seasoning, Worcestershire sauce, and tomato sauce.
  • When vegetables are tender, add BBQ sauce to skillet, reduce heat to medium and cook for 5 minutes. Reduce heat and simmer for 5 more minutes and let the mixture thicken up a little bit.
  • During that time, stir together corn muffin mix, egg, oil, and milk. It will be a little lumpy.
  • Once the beef mixture has thickened up a little bit, spoon it into an 8 x 8 inch baking dish. Pour the cornbread mixture evenly on top.
  • Bake for 25-35 minutes or until a toothpick inserted into the center of the cornbread comes out clean. Remove from the oven and immediately sprinkle with cheese. Let cheese melt for a couple of minutes and then serve.

CHILI CORNBREAD SLOPPY "JOES"



Chili Cornbread Sloppy

This recipe is from Hormel® but it could be made with any commercially prepared chili or your own favorite recipe.

1 package(s) cornbread mix - 8 1/2 oz.
1 - egg
1/3 cup(s) sour cream, light
1 can(s) prepared chili - with or without beans
1 can(s) corn - 14 oz approximately - drained
1 cup(s) cheddar cheese, shredded

Steps:

  • Prepare cornbread mix with egg and sour cream. Spread in greased 8x8 inch pan and bake for 15-20 minutes at 400ºF. Let cool for 10 minutes.
  • Remove cornbread and cut into 4 squares. Cut each square into a triangle, then split each triangle horizontally into halves.
  • Meanwhile, cook chili and corn in saucepan until completely heated.
  • To serve: spoon chili mixture onto bottom half of cornbread triangle, sprinkle with cheese, top with remaining cornbread triangle.
