CHILI CHEESE ROLLS RECIPE
These Chili Cheese Rolls are an absolute GAME CHANGER for entertaining. The flavor is so unique (and SO delicious) that your guests will be begging you for the recipe.

Steps:
- Grate cheese in a food processor and set aside. (If you don't have a food processor, you can grate with a normal box grater. It will just take a bit longer.)
- Chop pecans and garlic with the steel blade in the food processor.
- Add softened cream cheese and pulse a couple of times.
- Add grated cheese and blend all together until smooth.
- Pour chili powder on a sheet of parchment paper (Wax paper will work also.)
- Form cheese into 2 logs and roll in the chili powder.
- Chill at least 24 hours. These rolls can also be frozen and used at a later date.
- Serve with crackers. A thick cracker, like Triscuits, works well here.

THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
CHILI CHEESE STUFFED SWEET POTATO
Stuff sweet potatoes with an easy-to-make beef chili and top with sour cream, Cheddar and scallions.

- Poke each sweet potato a few times and microwave until fork-tender, about 10 minutes, rotating halfway through. Set aside and keep warm.
- Meanwhile, put the carrots, garlic, tomato and onion in a food processor; add the vinegar, cumin, oregano, cayenne, 1 teaspoon salt and a few grinds of black pepper and pulse until coarsely chopped. Heat the oil in a large nonstick skillet over medium-high heat, add the vegetable mixture and cook, stirring constantly, until dry, 3 to 4 minutes. Add 1/4 cup water and cook, scraping up any brown bits with a wooden spoon, until the water evaporates, about 1 minute. Add the ground beef and cook, stirring and breaking it up into smaller chunks, until browned and cooked through, about 4 minutes. Remove from the heat.
- Split the potatoes in half, scoop out some of the warm flesh and add it to the beef mixture; stir to combine. Divide the potato halves among 4 plates and generously fill each half with the beef-potato mixture. Top each with sour cream, Cheddar and scallions.
CHILI CHEESE CUBES
This is an hors d'ourve that makes a marvelous snack or even lunch entree, as well. This is much like a crustless quiche, It is nutritious and not too picante -- a delicious and satisfying blend of 2 kinds of cheese with chilies and other things, all of which make a happy mouth. - Preheat oven to 350 degrees. Grease a 13- x 9- x 2-inch baking dish.
- In a large mixer bowl, beat eggs with electric mixer until light -- 4 to 5 minutes.
- Stir together flour, baking powder and salt; add to eggs and mix well.
- Fold in the cheeses and chilies (and olives, if used).
- Turn into prepared baking dish. Bake in preheated oven for 40 minutes.
- Remove from oven; let stand 10 minutes. Cut into small squares; serve hot as appetizers. Leftovers are good cold, also. Serve as a snack or as part of a luncheon dish.

CHEESY CHILI
Steps:
- In a large saucepan, cook the beef, onions and garlic until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, chiles and pepper; bring to a boil. , Reduce heat; simmer, uncovered, for 10-15 minutes. Stir in cheese until melted. Serve immediately. If desired, top with sour cream, jalapenos, tomatoes and cilantro. , Freeze option: Freeze cooled chili in freezer containers; it may be frozen for up to 3 months. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

CHEESY GREEN CHILI SNACKS
These are terrific little cheesy flat biscuit like snacks. Some people call them crackers. I do not remember where I got this recipe, but I make it quite often and they always go fast at our church gatherings. I use Louisiana hot sauce in mine, but I think any kind of hot sauce would work. I hope you like them as much as we do. They are good right out of the oven or a day or two later. I like to cook them until they are good and brown so they will get a little bit of a crunch along with the chewy. I am not sure about the serving size because these are an appetizer or snack.

- Pre-heat oven to 350.
- beat butter & cheese until well blended. add green chilis, worcestershire sauce and hot sauce. graduallly add flour, you may have to use your hands at this point. mix well.
- shape heaping teaspoonfuls of dough into balls, place onto a cookie sheet and flatten to about 1/4 inch thick. you want them pretty thin.they can be put close together because they do not spread much. bake for 18 to 20 minutes or until golden brown.
