CHEESE-GREEN CHILI STRATA
This was in the food section of our local newspaper. It sounds like a nice breakfast or brunch dish. It has all kinds of possibilities, too, like changing the type of cheese, bread, and meat. This is a make ahead dish, great for when you have overnight company. Time to make doesn't reflect overnight refrigeration. Let me know what you think!

Steps:
- Place cubed buttered bread in a 9X13 greased baking pan.
- Sprinkle with 3/4 of the cheese, all of the bacon, parsley and green chilies.
- Mix eggs, milk, onion and seasonings.
- Pour egg mixture over other ingredients and mix lightly with fork.
- Sprinkle with remaining cheese on top.
- Refrigerate overnight.
- Next day, bake uncovered at 350*F for 45 minutes.

This is yummy comfort food and a great way to use up leftover ham. I don't know where this recipe came from, it's one that my mother made a lot when I was a child.

Steps:
- Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
- Top with 6 cheese slices, half of the onions, and half of the ham.
- Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
- Top with 6 slices of bread.
- Combine eggs, milk and seasonings.
- Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
- Bake at 300° for 1 1/2 hours.
- Top each cheese stack with a tomato slice during the last 20 minutes in the oven.

This strata, from my favorite new casserole cookbook, can be rustic down home comfort food or dressed up for a sophisticated brunch dish. The gruyere cheese with the touch of pear, apple and raisins makes this traditional dish something special.

Steps:
- Lightly butter 1 side of each bread slice using the 2 tablespoons of softened butter or omit this step if desired.
- Top 4 slices of bread, buttered side up, evenly with ham and place the other 4 slices of bread buttered side down on top of ham.
- Quarter each sandwich forming 4 triangles and place in a buttered 2-quart baking dish, arrange triangles pointed sides up.
- Sprinkle chopped onion, pear or apple, and cheese over triangles.
- In a medium bowl, add milk, eggs, mustard, Worcestershire sauce, and pepper. Whisk together and carefully pour over triangles in baking dish.
- Cover with plastic wrap and chill for at least two hours or overnight.
- In a 350 degree oven, bake covered for 20 minutes. Uncover and bake approximately 25 minutes longer or until puffed and golden brown and a knife inserted in the middle comes out clean. Prep and Cooking time does not include 2-24 hour chilling time.

From Betty Crocker I think. Could also use ciabatta bread, or whatever bread like that you might have on hand. Could also play around with whatever cheese you have on hand. Time listed does NOT include sitting time in fridge.

- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add spinach, bell peppers and leeks; cook 4 to 5 minutes, stirring frequently, until crisp-tender. Remove from heat.
- In baking dish, layer the ham, the spinach mixture, 1 cup of the Cheddar cheese and the bread. In large bowl, beat eggs, milk, mustard and pepper with wire whisk until blended and pour over bread. Sprinkle with remaining Cheddar cheese and the Italian cheese blend. Cover with foil; refrigerate at least 4 hours but no longer than 24 hours (overnight is great).
- Heat oven to 325°F Bake loosely covered 40 minutes. Uncover; bake about 30 minutes longer or until top is golden brown and knife inserted in center comes out clean.

This recipe comes from Food & Wine magazine (1997). The recipe is credited to Diana Sturgis. I don't usually add the sun dried tomatoes, but I included them since they were in the original recipe. We usually have this for dinner, but it could be a great brunch recipe as well. The left overs are fantastic served cold. This is a delicious use of left-over ham.

- Preheat the oven to 450 degrees.
- In a large bowl whisk together the eggs, milk, salt, and pepper.
- Stir in the bread cubes until evenly moist.
- Stir in the cheese, ham, tomatoes, and 1/4 cup of the chives.

CHEESY CHILE STRATA

- Preheat the broiler. Arrange the poblanos skin-side up on a baking sheet. Add the spring onions and broil until the poblano skins are charred and the onions are blackened around the edges, 7 to 8 minutes. Transfer the poblanos to a large bowl, cover with plastic wrap or a plate and let cool 10 minutes. Rub off the skins with your fingers, then pat dry. Roughly chop the poblanos and onion bulbs, then toss with the masa harina in a medium bowl; set aside while you fry the tortillas.
- Line a baking sheet with paper towels. Heat about 1 inch of vegetable oil in a high-sided skillet or Dutch oven over medium-high heat until a deep-fry thermometer registers 350 degrees F. Working in batches, fry the tortillas, stirring, until stiff but not browned, about 5 minutes. Transfer to the paper towels to drain.
- Spread half of the fried tortillas in a 3-quart baking dish. Top with half of the poblano-onion mixture and half of each cheese. Layer the remaining tortillas, poblano-onion mixture and cheeses on top.
- Whisk the eggs and milk in a large bowl; whisk in 1 1/2 teaspoons salt, pepper to taste and the chili powder. Pour the egg mixture into the baking dish. Cover and refrigerate 8 hours or overnight.
- Remove the dish from the refrigerator about 30 minutes before baking and uncover. Preheat the oven to 350 degrees F. Bake until the strata is lightly puffed and golden on top and just set in the center, 50 minutes to 1 hour. Let cool 10 minutes before serving. Top with sour cream, jalapenos and/or cilantro.
KATHY'S HAM STRATA
This is a quick and easy one-dish meal that comes from the recipe collection of Bird's sister Kathy. Stratta or strata is a brunch casserole dish, similar to a quiche, made from a mixture which mainly consists of bread or hash browns, eggs and cheese. It may also include meat or vegetables.

- Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Since the whole family gathers at Mimi's for Christmas Eve and morning, this strata, from Mulberry Inn & Gardens (B&B) has become the favorite. It bakes nicely while presents are being opened. Remove from frig. when you get up to turn on the tree lights and flip the coffee pot on, about 30 minutes before baking.*** While the original recipe lists American cheese, we replace that with sliced cheddar for more flavor.
