My husband introduced me to this recipe when we were engaged. It's become our family's favorite dish for birthday meals, informal get-togethers and everyday dinners.

1 pound boneless pork, cut into 3/4-inch cubes
1 tablespoon olive oil
1 can (10 ounces) diced tomatoes and green chilies, undrained
2 garlic cloves, minced
1 cup water
1 cup diced fresh tomato
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
5 teaspoons cornstarch
2 tablespoons cold water
1 can (16 ounces) refried beans
10 flour tortillas (6 inches), warmed

Steps:

  • In a skillet over medium heat, brown pork in oil; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until pork is tender. , Combine cornstarch and water until smooth; gradually stir into pork mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. , In a small saucepan, cook refried beans until heated through; spread evenly on tortillas. Spoon pork mixture down the center of each tortilla. Fold sides and ends over filling and roll up.

2 tablespoons olive oil
2 pounds ground beef
3 cloves garlic, minced
2 tablespoons tomato paste
Two 14-ounce cans kidney beans, drained and rinsed
One 14-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
1/4 cup chili powder
Kosher salt and freshly ground black pepper
8 large flour tortillas, lightly warmed
2 cups grated Cheddar
1 yellow onion, diced small
2 cups corn chips
1/2 cup sour cream
Olive oil, for toasting

Steps:

  • For the chili: Place a skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef and brown, crumbling as you go, until cooked through, 7 to 8 minutes. Add the garlic and tomato paste. Stir and cook for 1 minute. Add the kidney beans, tomato sauce, tomatoes and green chiles, chili powder, salt and pepper, then bring to a simmer. Continue to simmer and thicken, stirring occasionally, for 10 minutes.
  • For the burritos: Add about 1 cup chili to a tortilla, then top with grated Cheddar and some diced onion. Add a handful of corn chips and a dollop of sour cream. Tuck the sides of the tortilla and roll tightly, then set aside. Repeat with the remaining tortillas.
  • Heat a large skillet over medium heat. Add a little olive oil. In batches, toast the burritos until golden, about 1 minute per side.

1 can (14-1/2 ounces) beef broth
2 cups green enchilada sauce
1 can (4 ounces) chopped green chilies
1/2 cup Mexican-style hot tomato sauce

1/2 teaspoon garlic powder
1/2 teaspoon pepper
12 flour tortillas (12 inches)
Optional toppings: shredded lettuce, chopped tomatoes, shredded cheddar cheese and sour cream

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. Add broth. Cover and cook on low for 8-9 hours or until meat is tender. , Remove beef. When cool enough to handle, shred meat with 2 forks. Skim fat from cooking liquid; reserve 1/2 cup liquid. Return shredded beef and reserved liquid to the slow cooker. Stir in the enchilada sauce, green chilies, tomato sauce, salt, garlic powder and pepper. , Cover and cook on low for 1 hour or until heated through. 1 medium onion, chopped
3 medium jalapeno peppers, seeded and chopped
3 garlic cloves, sliced
3 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon sodium-free seasoning (optional)
1 cup reduced-sodium beef broth
24 (8 inch) fat free tortillas, warmed
chopped tomato
shredded lettuce
reduced-fat cheddar cheese

Steps:

  • Trim fat from roasts; cut meat into large chunks. Place in a 5-qt slow cooker.
  • Top with the chilies, onion, jalapenos, garlic, chili powder, cumin and seasoning blend if desired. Pour broth over all. Cover and cook on low for 8-9 hours.
  • Remove beef; cool slightly. Shred with two forks. Cool cooking liquid slightly; skim fat.

3 cans chili or 3 cups homemade chili
3/4 cup oil (for deep frying)
2 cups grated cheddar cheese
2 cups chopped lettuce
1 cup chopped tomato
1 cup chopped onion
1 jar salsa (your favorite brand)
1 (8 ounce) container sour cream
sliced jalapeno

Steps:

  • Heat the oil in a large skillet.
  • Add the burritos and fry on each side until golden brown and crispy.
  • Drain on a paper towel.
  • While burritos are frying, heat the chili on stove or microwave.
  • To serve:.
  • Plate the burrito, top with a ladle of chili, add a handful of lettuce, cheese, tomatoes, and onion.

This is a dish my mom taught me, it's really quick and easy and my family loves it.

1 lb ground beef
24 oz can of chili with no beans
1 pkg taco seasoning mix
10 burrito sized flour tortillas
1-16oz pkg mexican blend shredded cheese
3/4 c water
13x9 baking dish

Steps:

  • 1. Preheat oven to 350 degree.
  • 2. Cook ground beef until brown, drain, rinse and return to skillet.
  • 3. Add taco seasoning to meat and add the amount of water specified on the seasoning package.
  • 4. Let meat and taco seasoning simmer on low heat while you heat the tortillas.
  • 5. Add 2-3 spoonfuls of meat to tortilla, top with 1 tbsp of cheese. Roll tortilla and put into 13x9 pan seam side down.
  • 6. Once all 10 tortillas are added to the 13x9 pan top with can of chili. Add remaining cheese to the top of the chili.
  • 7. Put dish into heated oven and bake for 10-15 minutes or until cheese is bubbly.

I like to make a big pot of chili up and freeze it in meal-sized portions for later. We don't always like to eat chili plain, so I doctored up some chili and made burritos for a quick dinner. It's easy and doesn't require all the fresh ingredients that tacos would. If your chili is pretty soupy, you might have to cook it down a little longer than called for in the recipe. You can heat your tortillas in the oven if you wrap them in tinfoil, but the microwave is just so much easier, in my opinion.

6 cups chili, leftover
1 (4 ounce) can green chilies
1 tablespoon taco seasoning
1/2 cup rice, uncooked
1 cup water
10 flour tortillas
2 cups cheddar cheese, shredded (to taste)
1 cup salsa (to taste)
1/2 cup sour cream (to taste)

Steps:

  • Combine chili, green chilies, taco seasoning, rice, and water in a medium sized pot.
  • Heat uncovered over low heat about 20 minutes, stirring occasionally to keep from sticking to bottom of pan. Near the end of cooking time, you will have to stir nearly constantly as the chili will have cooked down to a nice thick consistency.
  • Taste and make sure rice is cooked to your preferred softness and check thickness of chili to be sure it will stay in a tortilla.
  • Warm tortillas for several seconds in microwave, spread several tablespoons of chili mixture in center of tortillas, add cheese, salsa, and sour cream to taste, and fold into burrito.
  • Serve with chips and salsa or green salad.

CHILI VERDE FOR BURRITOS

My DH taught me how to make Chili Verde (one of his favorites), but over time, we both thought the recipe was kinda blah. So I looked up recipes here on Zaar, and in various cookbooks, and the result is what I'm posting. It's sort of a combination of Chili Verde *and* Salsa Verde recipes. If you wanted to have a green chili stew, just cut up a couple of potatoes, and double the tomatoes. Anyway, DH loves this version much better than what we started with, and so do I.... hope you do to :) PS: I used pork tenderloin, because it's boneless, has less fat, and is really easy to work with, and in my area, frequently on sale for a 1.99 a pound. But you can use whatever cut you prefer.

2 1/2 lbs pork tenderloin
1 (28 ounce) can tomatillos
2 (7 ounce) cans diced green chilies
3 ounces slivered almonds
1 medium onion, diced
1 garlic clove (diced or crushed)
1 cup chicken broth
cumin
chili powder
1 jalapeno (fresh or canned)
1 tablespoon oil (olive, canola or if you prefer, bacon drippings.)
12 flour tortillas (we use the huge ones)
cheese
sour cream
whole black beans
refried guacamole
Mexican rice

Steps:

  • Place pork loin in freezer for about 30 minutes - this will make it easier to cut. Trim all visible fat, and cut into cubes - about 1 inch or so.
  • Heat oil in dutch oven, and add pork. Cook til all sides are lightly brown. Remove pork with a slotted spoon, onto a plate or small bowl.
  • Add onion to pan and cook until lightly browned and add garlic.
  • While onion is browning, put the almonds in a blender or food processor and pulse until almonds are the consistency of meal (don't go to far or you'll have almond butter). Add tomatillos, 1 can of the green chilis, and the jalapeno. Puree for about 1 minute.
  • When onions and garlic are done, add tomatillo mixture to pan.
  • Season mixture with cumin and chili powder. I probably use about 4 to 5 tablespoons cumin and 1 tablespoon chili powder. It's really just up to you and what you prefer.
  • Return pork to pan, add chicken broth and bring to a slow boil. Cover and reduce heat to simmer.
  • Cook covered for about 1 hour. Uncover and continue cooking until liquid reduces to your preference.
  • Make burritos with the condiments you and your family prefer.

SMOTHERED CHILI VERDE BURRITOS

2 seeded and chopped jalapenos
1 diced green bell pepper
2 diced small tomatillos

3 cups cheddar cheese
8 flour tortillas (or wheat tortillas for all of you health cautious people)

Steps:

  • Heat oil in large skillet.
  • Add diced onions and sauté until onions are translucent.
  • Add cubed meat salt and pepper to taste and cook until done.
  • Add chopped jalapenos, diced green bell pepper, and tomatillos. Sauté for 4 minutes.
  • Add chicken stock. Combine corn starch with one cup water and stir into mixture. Simmer up to 30 minutes or until it starts to thicken.
  • Separate half of mixture in a separate bowl and set a side. Combine beans to mixture still in skillet and heat through.
  • Warm tortillas.
  • Add mixture plus a large pinch of cheese to the inside of each tortilla. Roll tortillas and place in large Pyrex pan.
  • When all tortillas are filled cover with mixture that was set aside and then with the remaining cheese.
  • Heat in a 350 degree oven until cheese is melted.

I'm addicted to Tex Mex, and it's slowly but surely clogging my arteries. I'm told these are called "wet burritos," although I have yet to find a Tex Mex restaurant that calls them that. Anyhow, here's my lower in fat version of a dish I simply can't live without. You can use pre-prepared beans and rice or give it your own flair by making them from scratch. Add or omit ingredients as you like to create your own perfect burrito!

3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
1 teaspoon ground cumin
1 (14 ounce) can fat-free chicken broth
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 cups fat-free refried beans
1 1/2 cups Spanish rice
1 1/4 cups low-fat cheddar cheese (separated) or 1 1/4 cups Mexican blend cheese (separated)
2 large flour tortillas (12-inch or larger)
diced onion (optional)
shredded lettuce (optional)
diced tomatoes (optional)

Steps:

  • Preheat oven to 350F.
  • Prepare sauce: Heat canola oil in saucepan; stir in flour and chili powder to form thick paste; cook 30-60 seconds.
  • Add chili powder, cumin, broth, tomato sauce, salt, & garlic powder. Bring to a boil, reduce heat, & simmer 8-10 minutes. Set aside.
  • Assemble burritos: Lay out one tortilla. Spoon 3/4 c refried beans, 3/4 c spanish rice, and 1/2 c cheese down center of tortilla.
  • To roll , fold one side over filling, parallel to filling. Fold up bottom & top then fold over other side to make a wide burrito.
  • Place seam side down in large baking dish. Repeat steps 3 & 4 for second burrito.
  • Pour sauce over burritos and top with 1/4 c cheese.
  • Bake 25-30 minutes.
  • Remove from oven and pile on the desired toppings.
  • Burritos can be cut in half and serve 4 people, or can be served whole to two *really* hungry people.

PORK CHILI VERDE BURRITOS

I had left over pork roast and was looking to transform it into something different. These turned out so amazing that iI want to make another pork roast just to have these again.

2 c pork roast, cooked and coarsly chopped
2 c brown rice, cooked
1/2 onion, chopped
1 jalapenos, fresh, chopped
1 chipotle pepper with adobo, diced
2 clove roasted garlic, chopped
1 1/2 c salsa verde (green salsa), divided
1 tsp chili powder
1/2 tsp ground cumin
1/4 c water
2 Tbsp cilantro, fresh, chopped, divided
1 Tbsp tomato paste
8 oz cheddar cheese, shredded, divided
10 tortillas, flour.
1/2 c sour cream

Steps:

  • 1. In a large skillet, saute onion in butter till it starts to soften. Add jalepeno and garlic and cook another few minutes. Add pork and 1 cup of salsa. Stir in cumin and chili powder.
  • 2. Add chipotle pepper and stir well. Add water, tomato paste, 1/2 of the cilantro and rice. Let simmer for 8-10 minutes.
  • 3. Add 1/2 of the cheese and stir till melted. Let mixture cool slightly. Put 1/2 cup of mixture in each tortilla and sprinkle with a bit more cheese. Roll burrito style and place in a 9x13 pan seam side down. Bake at 350 degrees for 20 minutes.
  • 4. Mix remaining salsa and cilantro with sour cream. Pour over burritos and sprinkle with remaining cheese and bake 5 minutes more.

4 1/2 cups chicken chilli (Can use prepared chili if you don't make)

  • Heat oven to 350 F degrees.
  • Grease 15 X 10 X 1 in.
  • jelly roll pan.
  • Wrap tortillas in damp paper towels: microwave until warm and flexible about 1 minute, or wrap tortillas in foil, heat in 350 oven for 10 minutes Spread 1 tortilla on work surface; keep remaining tortillas warm.
  • Top tortilla with 3/4 cup chicken chili.
  • Sprinkle with 1/2 cup cheddar cheese, Wrap up tortilla envelope fashion, to enclose filling.

  • Repeat with the remaining tortillas, chili and cheddar cheese Bake in 350F degree oven until tortillas are crispy, filling is heated through and cheese is melted, about 30 minutes.

CHILI POTATO BURRITOS

You can use any kind of chili pepper you like - I like poblano or chipotle the best. Buy them dried and put them in your blender to make powder! Serve warm with a dollop of sour cream if desired. You can substitute taco sauce for enchilada sauce.

1/2 cup shredded cheddar cheese
3 eggs, beaten with
1 tablespoon water
salt and pepper, to taste
1 teaspoon butter or 1 teaspoon margarine
2 flour tortillas
chopped onion (optional)

sour cream (optional)
salsa (optional)

Steps:

  • Make sure all your ingredients are ready - chili hot, cheese grated, optional ingredients chopped, eggs beaten.
  • Heat nonstick skillet over medium high heat. Add butter to pan.
  • When butter is melted, add beaten eggs and scramble.
  • When eggs are done, remove pan from heat and quickly heat tortillas over open flame, a few seconds on each side.

2 Tablespoons chipotle pepper sauce
1 teaspoon cumin
1/2 teaspoon oregano
Salt and pepper, to taste
1 (16 ounce) can refried beans
8 burrito-size flour tortillas
2 cups shredded Colby Jack cheese

Steps:

  • Put beef, chicken broth, enchilada sauce, bouillon cubes, onion, green chiles, chipotle pepper sauce, cumin, oregano, and salt and pepper into Instant Pot.
  • Lock the lid in place and turn the knob to sealing, not venting. Press the Manual or Pressure Cook button and set for 25 minutes.
  • When it is done cooking, natural release and then carefully remove the lid. The beef will be very tender and flake when stirred.
  • Turn oven on broil.
  • On an oven-proof plate or baking pan, lay out a tortilla. Place about 1/2 cup of the meat (drained by using a slotted spoon) on the tortilla. Add a spoonful or two of beans. Roll into a burrito.
  • Pour some of the remaining sauce from the Instant Pot over the burritos to cover them and top with cheese.
  • Broil until cheese is bubbly, about 2-4 minutes.
  • Makes 6-8 burritos, depending on how full you make them.

2-3 c leftover chili (homemade, any recipe)
2-4 flour tortillas
5-6 eggs
1 1/2 c cheddar cheese, shredded (medium or sharp)
sour cream
tomatoes (optional)
green onions, chopped (optional)

Steps:

  • 1. Scramble up some eggs, mix with a little water or milk to make them fluffy. Or, just scramble them and season with salt and pepper.
  • 2. In a saucepan or microwave, heat your leftover chili.
  • 3. Zap the flour tortillas in the microwave for about 20 seconds to make them soft.
  • 4. Place a tortilla on a microwave-safe plate. Spoon some chili onto the middle of the tortilla being careful to leave enough tortilla edge to fold up into your burrito. (I would suggest using a slotted spoon. You don't want too much soupiness or it will soak right through the tortilla and make it doughy and fall apart.)
  • 5. Layer some scrambled eggs on top of the chili. Then top with shredded cheese. Dollop with sour cream.
  • 6. Roll up into burrito.
  • 7. Put into microwave for about 30 seconds or long enough to melt the cheese.

This recipe gets rave reviews every time I make it. The shredded beef has a luscious, slow-cooked flavor that you canâ??t get anywhere else.

Number Of Ingredients 10

1 boneless beef chuck roast (3 pounds)
1 can (14-1/2 ounces) beef broth
2 cups green enchilada sauce
1 can (4 ounces) chopped green chilies
1/2 cup Mexican-style hot tomato sauce
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
12 flour tortillas (12 inches)
Optional toppings: shredded lettuce, chopped tomatoes, shredded cheddar cheese and sour cream

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. Add broth. Cover and cook on low for 8-9 hours or until meat is tender.
  • Remove beef. When cool enough to handle, shred meat with two forks. Skim fat from cooking liquid; reserve 1/2 cup liquid. Return shredded beef and reserved liquid to the slow cooker. Stir in the enchilada sauce, green chilies, tomato sauce, salt, garlic powder and pepper.
  • Cover and cook on low for 1 hour or until heated through. Spoon beef mixture down the center of tortillas; add toppings of your choice. Roll up.
  • Yield: 12 servings.
  • Editor's Note: This recipe was tested with El Pato brand Mexican-style hot tomato sauce. If you cannot find Mexican-style hot tomato sauce, you may substitute 1/2 cup tomato sauce, 1 teaspoon hot pepper sauce, 1/8 teaspoon onion powder and 1/8 teaspoon chili powder.

-Pork roast
-PLENTY of garlic cloves
-Crushed red pepper flakes
-Cumin
-6 Green chilis, diced up
-1 can of pinto beans
-about 1/4 cup water
-salt to taste
-flour tortillas

Steps:

  • Cover the bottom of your crock pot with water... you don't want much, because the roast will make its own juices. Cut most of the fat off your pork roast. Cut slits all over your roast and put garlic cloves down into each slit. I love garlic so I usually cut a LOT of slits. I usually use at least 8 cloves for this process. Sometimes I press a few cloves of garlic and rub it over the surface of the roast as well. Take your cumin and rub it all over the surface of your roast. Do the same with the crushed red pepper. I like it on the spicy side, so my roast usually ends up pretty red from all the crushed pepper and cumin. I also add salt to give a little extra flavor. I usually cook my roast on medium heat and just let it go most of the afternoon. After the roast has cooked for a few hours, it'll be swimming in juice... go ahead and add in the green chilis now (I don't cook it all day with the chilis because I find the longer you cook the chilis, the milder they become). Also add your pinto beans. I usually shred the pork up with two forks at this point, mix everything together, and let it cook for another half hour. I don't drain the liquid until I'm ready to serve the meal - it helps to keep the pork from drying out. I serve on flour tortillas that have been warmed up on a pan on the stove. Enjoy!
