WILD ARUGULA AND CHICKPEA SALAD



Wild Arugula and Chickpea Salad image

12 ounces wild arugula
1 medium head fennel, halved and thinly sliced
One 15-ounce can chickpeas, drained, rinsed and drained again
1 cup grape tomatoes, halved
1/4 cup fresh dill
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
2 ounces thinly shaved Parmigiano-Reggiano

Steps:

  • Combine the arugula, fennel, chickpeas, tomatoes and dill in a large shallow bowl. Whisk together the lemon juice and olive oil and season with salt and pepper. Toss the salad with the dressing and top with the shaved cheese.

1 15-ounce can no-salt added chickpeas beans
1 large ripe avocado, pitted and diced
1/4 cup diced red onion
1 tablespoon lemon juice
Salt and freshly ground black pepper
1 cup arugula
1/4 cup sliced cucumbers
1/4 cup cooked quinoa
1/4 cup sliced strawberries
1/4 cup sliced cherry tomatoes1 tablespoon crumbled feta
Balsamic vinegar, for drizzling, optional

Steps:

  • Rinse and drain the chickpeas. In a medium bowl, combine the chickpeas and avocado, and roughly mash with a fork or potato masher. Add the onions and lemon juice. Season with salt and pepper. Stir to combine thoroughly.
  • Serve 1/2 cup of the chickpea salad on a plate with the arugula, cucumbers, quinoa, strawberries, tomatoes, feta and a drizzle of balsamic vinegar. Enjoy!
  • Reserve the remaining chickpea and avocado salad for another purpose.

We had arugula, grape tomatoes, and greek yogurt in the fridge. It was really hot outside, and I wanted a quick, refreshing, healthy, yet satisfying summer salad. Went to the market and saw that haloumi cheese was on sale. Everything else just sounded good together. And it is good together! The raw ingredients all offer a wide array of textures, which I appreciate in a salad. Regarding spices: those are estimates; I just tossed some stuff in there, but those amounts sound about right. 16 ounces grape tomatoes (1 dry pint)
1 (15 ounce) can chickpeas, rinsed
1 large cucumber, seeded and cubed
8 ounces halloumi cheese, cubed
1 cup Greek yogurt
1 teaspoon olive oil
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon paprika
1/4 teaspoon garlic salt

Steps:

  • Toss tomatoes, chickpeas, cucumber, and haloumi in a bowl.
  • Mix yogurt, olive oil, cumin, coriander, paprika, and garlic salt in another bowl, then toss with above ingredients.

Rustle up a quick salad for two with green beans, chickpeas and tomatoes, topped with decadent fried cheese

100g green bean , trimmed
400g can chickpea , drained and rinsed
zest and juice 1 lime
4 tbsp extra-virgin olive oil
½ red chilli , deseeded and finely sliced
½ red onion , sliced into thin wedges
2 ready-roasted peppers from a jar, drained and sliced
100g cherry tomato , halved
large handful rocket
small bunch parsley , chopped
140g halloumi cheese , sliced

Steps:

  • Cook the beans in a pan of boiling water for 3 mins until just tender, adding the chickpeas for the final min of cooking. Meanwhile, make the dressing: in a large bowl, whisk the lime juice and zest with 3 tbsp of the oil and the chilli. Season. Drain the chickpeas and beans and, while warm, toss with the dressing.
  • Pour boiling water over the red onion, leave for 5 mins to soften, then drain and rinse. Add the peppers, tomatoes, rocket, parsley and softened onion to the bean bowl. Toss to coat everything in the dressing, then divide between 2 plates.
  • Heat the remaining oil in a frying pan, add the halloumi slices and fry for about 1 min on each side until golden. Place a few warm halloumi slices on top of each salad and serve.

Steps:
