1 teaspoon ground cumin

2 cups shredded carrots
1 (14 ounce) can chickpeas (garbanzo beans), drained and rinsed
2 tablespoons chopped fresh parsley
2 tablespoons chopped white onion

Steps:

  • Whisk olive oil, lemon juice, garlic, cumin, salt, and black pepper together in a bowl until dressing is smooth; add carrots, chickpeas, parsley, and onion and toss to coat.

3 tablespoons mayonnaise
2 tablespoons extra-virgin olive oil
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
5 small carrots (about 8 ounces), coarsely grated using the coarse grater disk on a food processor or the largest holes on a box grater
3 small radishes (about 2 ounces), coarsely grated using the coarse grater disk on a food processor or the largest holes on a box grater
1/4 cup coarsely chopped cilantro
1/4 cup coarsely chopped parsley
1/4 cup sliced almonds
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
For the Chickpea Salad:
4 tablespoons mayonnaise
3 tablespoons extra-virgin olive oil
2 tablespoons radish-top salsa verde (optional)
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 shallot, quartered
1 garlic clove, halved
1 (16-ounce) can chickpeas, rinsed
1 medium cucumber (about 1/2 pound), finely chopped
3 tablespoons crumbled feta

Steps:

  • Make the Creamy Carrot-Radish Slaw:
  • Whisk mayonnaise, oil, lemon zest, and lemon juice in a medium bowl until smooth. Add carrots, radishes, cilantro, parsley, almonds, salt, and pepper and stir to combine.
  • Make the Chickpea Salad:
  • Whisk mayonnaise, oil, salsa verde, lemon zest, and lemon juice in another medium bowl until smooth. Pulse shallot and garlic in a food processor until very finely chopped. Add chickpeas and pulse just until coarsely chopped, about 20 seconds. Transfer to bowl with salsa verde mixture. Fold in cucumber, feta, cilantro, and parsley; season with salt and pepper.
  • Assemble the sandwiches:
  • Layer 4 slices of avocado on each bottom bun. Top with a heaping 3/4 cup chickpea mixture and 2 Tbsp. spinach. Top with top bun and serve with carrot-radish slaw alongside.

1 tablespoon olive oil
2 tablespoons ground cumin
400 g chickpeas, drained & rinsed
2 garlic cloves, crushed
1/2 cup orange juice
1/3 cup currants
2 carrots, coarsely grated
3 green onions, sliced diagonally
100 g baby spinach leaves
1/3 cup coriander leaves, chopped
1/4 cup tahini
2 tablespoons toasted salad seeds (sesame & sunflower)

Steps:

  • Heat oil in a non-stick frypan over medium heat, add cumin, chickpeas and garlic, cook stirring often, for 3 minutes Remove from heat.
  • Combine orange juice and currants in a tea cup. Microwave for 1 min until hot, drain & reserve orange juice.
  • Combine currants, chickpea micture, carrots, green onions, spinach & coriander in a large bowl.
  • To make dressing: Combine tahini & reserved orange juice, season to taste, whisk to combine & drizzle over salad.
  • Toss salad through to coat in dressing and sprinkle with seeds to serve.

400g can chickpea , drained
1 garlic clove , chopped
1 large egg
1 tbsp ground almond
2 tsp harissa
1 tsp ground cumin
3 tbsp chopped parsley
2 tsp rapeseed oil , for frying
1 tbsp raisins
1 carrot , shaved into ribbons with a peeler
1 courgette , shaved into ribbons with a peeler
5 radishes , thinly sliced
2 handfuls from a bag of watercress , rocket & spinach
1 tsp each hemp or rapeseed oil and white wine vinegar, or lemon wedges (optional)

Steps:

  • Tip the chickpeas, garlic, egg, almonds, harissa and cumin into a bowl and blitz with a hand blender until smooth. Stir in the parsley. Heat the oil in a non-stick frying pan and dollop in the mixture in 8 big spoonfuls, spaced apart. Cook for 5 mins on each side.
  • For the salad, toss the raisins and all the veg together, but don't dress with the oil and vinegar until you are about to eat. If taking to work, add a wedge of lemon to squeeze over instead of the dressing.

2 tablespoons fresh lemon juice
1 garlic clove, minced
2 tablespoons vegetable oil
1/2 cup slivered almonds
2 packed cups cilantro leaves and stems
1 teaspoon ground cumin
1 teaspoon sweet smoked paprika
1/4 teaspoon cayenne pepper
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
Two 15-ounce cans chickpeas, drained and rinsed
1 pound carrots, peeled and coarsely shredded

Steps:

  • In a food processor, combine the lemon juice with the minced garlic and let stand for 15 minutes. In a large skillet, heat the vegetable oil. Add the almonds and toast over moderate heat, stirring, until golden, about 5 minutes. Drain the toasted almonds on paper towels and let cool. Transfer half of the almonds to the food processor. Add the cilantro, cumin, smoked paprika and cayenne pepper and pulse until chopped. Add the olive oil and process to a chunky paste. Season with salt and pepper; transfer to a large bowl. Add the chickpeas and carrots and toss. Garnish with the remaining almonds and serve.

CHICKPEA-CARROT SALAD



Chickpea-Carrot Salad image

This recipe is a tribute to the chickpea salad they sell at the prepared-foods counter at Zabar's market in New York City, which my wife, Beverly, and I have always enjoyed. The key to this recipe is letting the beans soak after they've cooked. Rather than seasoning the beans while they're cooking, which keeps them from softening, you season them after they've cooked and then give them time to absorb the salt and garlic. Ideally, this recipe should be made a day or so ahead of time to let the flavors develop even further. Alot of people use parsley as a "default herb" to garnish a dish without really thinking about whether another herb might work better. But the flavor of parsley here truly matters; it completes the balance of the salad.

One 1-pound bag dried chickpeas, soaked overnight in cold water to cover
1 tablespoon crushed red pepper flakes
2 quarts vegetable stock or water
Salt
1/4 cup freshly squeezed lemon juice
2 tablespoons red wine vinegar
3/4 cup extra-virgin olive oil
2 cups grated carrots (from 2 large or 4 medium carrots)
1 cup red onion, cut into 1/4-inch dice
1/2 cup chopped flat-leaf parsley
1 teaspoon minced garlic

Steps:

  • 1. Drain the chickpeas and transfer them to a pot. Add the red pepper flakes and stock and bring to a boil over high heat, then lower the heat and let simmer until tender, about 1 hour. Season with salt and let them rest, off the heat, for 20 minutes.
  • 2. Drain the warm chickpeas (you should have 5 cups) and transfer them to a bowl. Add the lemon juice, vinegar, and olive oil. Season with more salt, cover with plastic wrap, and chill.
  • 3. When ready to serve, remove the chickpeas from the refrigerator and stir in the carrots, onion, parsley, and garlic. Let rest for 1 hour so the flavors have a chance to develop. Taste and adjust seasoning if necessary.

Here is truly a delicious Mediterranean salad inspired by Sally and Martin Stone, authors of The Instant Bean (Bantam). Serve it warm or at room temperature with grilled chicken or fish kebabs and crusty bread.

1 1/2 pound(s) carrots, about 8 medium
2 tablespoon(s) golden raisins
2 tablespoon(s) olive oil
2 - onions, sliced
1/2 teaspoon(s) hot red pepper flakes
1/2 teaspoon(s) caraway seed
1/2 teaspoon(s) paprika
1/2 teaspoon(s) ground cumin
1/2 teaspoon(s) salt
19 ounce(s) canned chickpeas, drained and rinsed
1 pinch(es) cayenne pepper or 1 pinch black pepper

Steps:

  • Cut carrots lengthwise into quarters. Then, slice crosswise 1/4 inch (0.5 cm) thick. Place carrots in a saucepan and cover with water. Bring to a boil, uncovered, over high heat. Reduce heat to low and simmer until barely tender, from 3 to 5 minutes. Reserving 1/2 cup (125 mL) of cooking liquid, drain carrots and set aside. Meanwhile, cover raisins with hot tap water. Let stand 10 minutes to plump, then drain.
  • Heat oil in a large frying pan set over medium heat. Add onions and cook, stirring often, until softened and golden, about 10 minutes. Add raisins, reserved carrot water, red pepper flakes, caraway seeds, paprika, cumin and salt. Increase heat to medium-high and bring to a boil. Add carrots and boil gently, uncovered, until liquid is reduced slightly, from 3 to 5 minutes.
  • Stir in chickpeas. Sprinkle with cayenne, if you wish. Stir until chickpeas are heated through, about 2 minutes. Serve warm or at room temperature. Squeeze lemon juice over top just before serving.
