WONDERFUL CHICKEN CURRY SALAD
I created this salad for a party last year. It tastes wonderful, and everyone asks for the recipe. Serve on croissants or lettuce leaves. For a fancy presentation, line a platter with red leaf lettuce, and top with cream puff shells that have been stuffed with salad (small shells for appetizers or large shell for main dish).

- In a large saucepan, simmer chicken breasts in water for about 7 to 10 minutes, or until cooked through. Drain, cool, and tear into small pieces with a fork.
- In a large bowl, combine mayonnaise, chutney, curry powder, and pepper. Stir in chicken, pecans, grapes, and onions. Chill.

- Put chicken, onion, and garlic in a large stockpot with enough water to cover; bring to a boil. Cook until the chicken is no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C). Drain and reserve liquid. Set chicken aside to cool. Remove and discard bones from chicken. Chop the chicken meat.
- Put tomatoes in a large stockpot with enough water to just cover; add carrots, potatoes, zucchinis, yellow squash, green bell pepper, yellow bell pepper, red bell pepper, and chayote squash. Bring the water to a boil, reduce heat to medium-low, and cook until the vegetables are tender, about 30 minutes.
- Pour reserved chicken stock into the pot. Stir chopped chicken, cilantro, and tomato bouillon into the liquid. Bring the mixture to a simmer and cook another 15 to 20 minutes.

WONDERFUL CHICKEN PIZZA WITH FRESH BASIL
Use your favorite pizza dough or store-bought crust (I won't tell..). This is easy and quick - perfect for a simple week night dinner. Sauce and topping are enough for a 12" pizza.

- Sauce: Heat olive oil in a saucepan over medium-high heat; fry garlic for 1 minute, until fragrant
- Add tomato paste, coriander, oregano, cumin, salt and pepper flakes; give the mixture a good stir
- Turn the heat down to medium, and add the white wine, ketchup and lemon juice
- Simmer sauce for 1 minute (low heat), then stir in the chopped basil; remove from heat, cover and set aside
- Topping: Make sure the chicken breasts are quite flat, if not, pound them between clingwrap with a meat mallet or rolling pin
- Next sprinkle some salt, black pepper, basil, coriander and oregano over both sides; rub in the seasonings using your fingers
- Lay the chicken on foil-lined baking tray
- Combine lemon juice and olive oil; drizzle over the chicken and bake in preheated oven at 200°C / 390°F for 15mins or until just cooked through
- Remove from oven, cool slightly and slice the chicken, across the grain, into small strips
- Spread the sauce on your favorite pizza crust, scatter the cooked chicken and diced pepper over the sauce
- Top the pizza with mozzarella cheese and bake for approx 10-15mins (depending on your crust)
- Remove from oven, sprinkle with grated Parmesan, and serve immediately
PLUM WONDERFUL CHICKEN
I got this recipe from the Better Homes and Gardens cookbook "Treasured Recipes". This is so delicious and has an amazing sweet and sour flavor without being too cloying. I, know that the frozen lemonade concentrate may put you off but please trust me on this one and you will not be disappointed--or at least I hope you won't be. :-)

- Over medium heat in a large skillet, brown chicken in hot oil for about 10 minutes.
- Remove chicken and place in 3-quart baking dish.
- Reserve some of the drippings.
- Drain off all but 1 tablespoon of the fat drippings left in the skillet.
- Add onion, garlic, and gingerroot.
- Cook until this mixture is tender and soft.
- Combine the rest of the ingredients and carefully add to the onion mixture.
- Bring to boiling and then reduce the heat and simmer, covered, for about 5 minutes.
- Carefully pour this mixture over the chicken in the baking dish.
- Bake, uncovered, at 350°F, spooning sauce over chicken occasionally, for 45-55 minutes until the chicken is done.
- Garnish with the green onions.
- *We like our dark meat chicken to be falling off the bone tender, so I usually depart from the original recipe by lowering the heat and cooking for a much longer time. The meat is so soft then and that's how we like it.
WONDERFUL CHICKEN CASSEROLE
This chicken casserole is so smooth and creamy and I get so many compliments on it and am always requested to bring it to potlucks or make it here at home. The taste is wonderful and can go with any vegetable or salad you want to add with it. Warm rolls or cornbread adds to the mix. Enjoy

- 1. Cover chicken breasts with water that has been salted and bring to boil and allow to cook for approximately one hour. Remove from water and allow to cool, then shred or cut into bite size pieces.
- 2. Meanwhile, preheat oven to 350. In a 2 quart casserole dish, mix soups and sour cream until well blended. Then mix in chicken pieces and mix well again.
- 3. Crush the sleeve of saltine crackers and add to the melted butter and mix well. Then place on top of the chicken mixture and arrange so it covers entire top of mixture. Bake in preheated oven approximately 30 to 45 minutes or until bubbly and the top is golden brown. enjoy

WONDERFUL FRIED CHICKEN

- In a large resealable plastic bag, combine 2-2/3 cups flour, garlic salt, paprika, cayenne pepper, 2-1/2 teaspoons pepper, and poultry seasoning. In a shallow bowl, beat eggs and water; add salt and remaining flour and pepper.
- Dip chicken in egg mixture, then place in the bag, a few pieces at a time, and shake until coated.
- In a deep fat fryer, heat oil to 375 degrees F. Fry chicken, several pieces at a time, for 5-6 minutes on each side or until golden brown and crispy and juices run clear. Drain on paper towels.

- Place chicken breasts in large pot covered with water, bring this to a boil over high and cook for 20 minutes or until the chicken is no longer pink.
- Drain chicken, and finely chop chicken into small bite size pieces. Place in a large bowl and mix in the sour cream, chicken broth and cream of chicken. Mix until combined.
- In a second bowl melt the 1/4 cup butter, then mix in the Petridge Farms stuffing until moist.
- In a 3-5 quart casserole dish layer the two bowls. First a layer of chicken mixture, then a layer of stuffing, repeat and end with stuffing.
- Bake at 350 for 1-1.5 hours. If the top of the crumb layer is browning you can cover the casserole for the remaining time. Since everything is precooked, the goal of cooking is to have the dish heated through, and let the flavors combine.

- First grill chicken breasts till cooked totally through, or until no pink remains.
- While chicken is cooking drain your artichokes and wipe off mushrooms and slice them finely. Remove cooked chicken on to plate.
- Now to make your sauce, empty cream of chicken soup into iron skillet and add the cream. Stir in slivered garlic and artichokes and the sliced mushrooms; let it come to a low boil. Add seasonings. Next, pour sauce over chicken breasts.
- Place chicken in preheated 350°F oven just to melt sliced swiss cheese.
