Creamy spinach garlic Parmesan chicken is a delicious, fast and easy dinner recipe. Perfect served over pasta or with a simple side salad.

4 chicken breasts
1 onion (finely chopped)
3-4 garlic cloves (crushed (amount depends on how strong the cloves you are using are) )
6 cups (approximately 200g/7 oz) baby spinach (washed and roughly chopped )
1 cup cream
1 tbsp sour cream
1 tsp lemon juice
salt and pepper (to taste )
½ cup Parmesan cheese (grated )

Steps:

  • Place boneless, skinless chicken breasts between two sheet of parchment paper and thin out with a meat mallet or a rolling pin. Season the chicken generously with salt and pepper.
  • Brown chicken in a large pan or skillet for 5-6 minutes per side. Remove from the pan and set aside.
  • Add the onions and garlic to the pan and cook until soft and translucent.
  • Add the spinach and cook until wilted.
  • Pour in the cream, sour cream and lemon juice. Season to taste. Allow the sauce to simmer for 5-7 minutes until thickened then add the Parmesan and chicken back to the sauce.
  • Reduce the heat and allow to simmer for 5 minutes or until the chicken is fully cooked.
  • Serve with pasta or rice.

2 tablespoons olive oil
1 ½ pounds boneless, skinless chicken breast, thinly sliced
1 ½ cups heavy whipping cream
¾ cup chicken broth
1 ½ teaspoons garlic powder
1 ½ teaspoons Italian seasoning
¾ cup grated Parmesan cheese
1 ½ cups chopped fresh spinach
¾ cup sun-dried tomatoes, drained and chopped

Steps:

  • Heat olive oil in a large skillet over medium-high heat and cook chicken until no longer pink in the middle, 5 to 10 minutes. Transfer to a plate and set aside.
  • Pour cream and chicken broth into the skillet. Add garlic powder, Italian seasoning, and Parmesan cheese. Whisk over medium-high heat until sauce starts to thicken, about 5 minutes. Add spinach and sun dried tomatoes and simmer until spinach starts to wilt, 3 to 5 minutes.
  • Return chicken to sauce in the skillet and heat through, about 3 minutes. Season with salt and pepper.

2 chicken breasts
3 tablespoons butter, divided
Salt and pepper to taste
1 teaspoon oregano
1 medium onion, minced
4 cloves garlic, minced
1 small jar sun-dried tomatoes, drained from oil and chopped
1/2 cup chicken broth
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1 cup spinach (or more if you like)

Steps:

  • 1. Thoroughly season chicken with salt, pepper, and 1/2 teaspoon oregano on both sides. 2. In a large skillet, melt 2 tablespoons butter with a bit of oil from the tomatoes over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Once done and no longer pink, transfer to a plate and set aside. 3. To make the sauce, add the remaining tablespoon butter to the same pan. Cook onion, garlic, 1/2 teaspoon oregano and sun-dried tomatoes. Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper. 4. Add spinach to the mixture and continue cooking until wilted. Add the chicken back to the pan and reheat for 2-3 minutes. Serve immediately, garnished with fresh chopped parsley. Enjoy!
