Number Of Ingredients 10

4 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon pepper
3/4 teaspoon salt, divided
1 tablespoon canola oil
1 medium sweet potato (about 3/4 pound), peeled and cut into 1/2-inch pieces
1/2 cup plus 3 tablespoons water, divided
1 medium ripe pear, cut into 1/2-inch pieces
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon

Steps:

  • Pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with pepper and 1/2 teaspoon salt., In a large nonstick skillet, heat oil over medium heat. Add chicken; cook until no longer pink, 3-4 minutes on each side. Remove from pan; keep warm. , In same pan, combine sweet potato and 1/2 cup water; bring to a boil. Reduce heat; simmer, covered, 5 minutes. Stir in pear; cook, covered, until potato is tender, 4-5 minutes longer. Add vinegar, mustard and tarragon; stir in remaining water and heat through. Serve with chicken.

4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1 medium red onion, halved and thinly sliced
2 medium pears, thinly sliced
2 teaspoons brown sugar
1/2 cup balsamic vinaigrette
1/2 teaspoon dried thyme
2 packages (8.8 ounces each) ready-to-serve long grain and wild rice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken in butter; remove and keep warm. In the same skillet, saute onion until tender. Add pears and brown sugar; cook 3 minutes longer. Stir in vinaigrette and thyme., Return chicken to skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until chicken juices run clear. Meanwhile, cook rice according to package directions. Serve with chicken.

Sauteed Chicken With Sweet Potatoes and Pears image

This is a healthy, light, and tasty recipe that I modified from a realsimple.com recipe. You can use Pork tenderloins or skinless Salmon, if desired. You can also serve the finished product right away, or, as I did, refrigerate and let all the flavors blend for awhile. I made it in morning and heated it up for our evening meal. When heating in oven or microwave, be careful not to overcook. Hope you enjoy it.

2 tablespoons olive oil
1 yellow onion, medium, chopped
2 garlic cloves, crushed (or sliced)
4 boneless skinless chicken breasts (or 1-1/2 to 2-lbs. Pork tenderloins or skinless Salmon fillets)
1/4 teaspoon kosher salt (optional)
2 large sweet potatoes, peeled and cubed
2 large pears, ripe but firm-not soft-peeled, cored, and cubed
2 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
1 1/2-2 tablespoons tarragon leaves, fresh, finely chopped
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add chopped onion and garlic and saute for about 5 minutes.
  • Sprinkle both side of meat with kosher salt (optional), add to skillet and saute over medium heat until cooked through: about 8-10 minutes per side for chicken; 12-15 minutes per side for pork; 5-7 minutes per side for fish. Be careful not to overcook.
  • Meanwhile, whisk together red wine vinegar, dijon mustard, tarragon leaves, fresh ground black pepper, along with 2 tablespoons of water. Mix together well.
  • Remove meat from skillet, cover, and set aside.
  • Clean up the skillet, if needed, and add 1/2 cup water and sweet potatoes. Cook for 5 minutes or until sweet potato is slightly tender.
  • Add the pear cubes and cook for 5 more minutes. Keep an eye on the water level and ensure it doesn't completely evaporate.
  • Transfer meat, potato and pear to a large bowl.
  • Sprinkle with freshly ground black pepper and toss with vinegar, dijon, tarragon, mixture. At this point you can serve immediately, or, refrigerate and give flavors time to blend and heat through later. I would very loosely cover a baking dish and bake at 325 degrees for around 15-20 minutes.

This busy diva does not have time for a complicated side dish -- so out of my kitchen came these mashed sweet potatoes and pears. I may never make sweet potatoes any other way ever again.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.
