1 package chicken breast tenders
2 eggs, beaten
1 cup of milk
1 1/2 cups flour
1 tablespoon all-seasoning mix
1 cup vegetable oil for frying
1 cup orange marmalade
1 cup BBQ sauce
2 tablespoons soy sauce

Steps:

  • For the chicken: cut up the chicken into bite-sized pieces. In a bowl, beat together the eggs and milk. In a separate bowl, stir together the flour and seasoning mix.
  • Dredge the chicken pieces in the egg wash and coat evenly with the flour mixture.
  • Heat the oil in a medium-sized (about 12 inches) cast-iron skillet or frying pan. Cook the chicken pieces until golden brown, about 3 to 4 minutes per side. Transfer the chicken onto a serving plate lined with paper towels.
  • Make the sauce: wipe the pan clean and add orange marmalade, BBQ sauce, and soy sauce. Let the mixture simmer on medium heat, stirring often, for 15 to 20 minutes.
  • Toss the chicken into the sauce until completely coated. Serve with rice. Enjoy!

4 cups chicken broth
4 boneless skinless chicken breasts
1 stalk celery, chopped
1 leek, white part only, chopped
4 kiwi fruits, peeled, cut into 1/4-inch slices
1 orange, washed, dried
1 lemon
1 tablespoon unsalted butter
1 tablespoon granulated sugar
1/8 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • In large saucepan bring chicken broth to boil.
  • Add chicken breasts & simmer 10 minutes, skimming off any scum that rises to top.
  • Add celery & leek & simmer another 10 minutes.
  • Remove chicken from broth & keep warm [Broth can be strained & reserved for some other use.].
  • Arrange kiwifruit in fan-shaped pattern on serving dish.
  • Zest half of orange & sprinkle over kiwifruit.
  • Juice orange & lemon into small bowl.
  • Heat butter in small saucepan & add sugar, stirring until sugar is melted & begins to turn dark, about 5 minutes.
  • Add orange & lemon juices, stirring until incorporated.
  • Boil until sauce is recuded to about 2 tablespoons.
  • Stir in salt & cayenne pepper.
  • Slice ckicken into thin strips, & place on top of kiwifruit.
  • Top with sauce & serve.

4 boneless skinless chicken breast halves
1 tablespoon olive oil
2 tablespoons unsalted butter
1 large egg, slightly beaten
1 teaspoon water
1 teaspoon salt (optional, I don't use)
1/2 teaspoon pepper
1 cup unsweetened flaked coconut, firmly packed
1 teaspoon cornstarch
1/4 cup orange juice
1/2 cup orange marmalade
kiwi, peeled and sliced (optional)

Steps:

  • Pound chicken to 1/4 inch thickness.
  • In a small bowl, place egg, water, salt (optional) and pepper, stir to mix well.
  • Place coconut in shallow dish.
  • Dip chicken first in egg mixture, then in coconut, pressing to coat well.
  • Place oil and butter in nonstick frying pan. Cook chicken about 10 minutes or until brown and juices run clear.
  • Sauce:.
  • Place cornstarch in a small dish. Add orange juice and stir to mix well.
  • Place marmalade in small saucepan. Stir in orange juice mixture and cook over low heat and cook over low heat, stirring to thicken but do not boil.
  • Spoon over chicken, top with kiwi slices (optional).

1 broiler/fryer chicken (3 to 4 pounds), cut up
2 tablespoons vegetable oil
1 large onion, halved and sliced
1/2 medium green pepper, julienned
1/2 medium sweet yellow pepper, julienned
1 garlic clove, minced
1/2 teaspoon grated orange zest
2-1/2 cups water
ORANGE SAUCE:
2 tablespoons cornstarch
3/4 cup orange juice
1/4 cup sherry or chicken broth
1/4 cup teriyaki sauce
3 tablespoons brown sugar
1 tablespoon butter
1/4 teaspoon ground ginger
1/2 cup slivered almonds, toasted

Steps:

  • In a pressure cooker, brown chicken in oil over medium-high heat; drain. Remove chicken to a 30x18-in. piece of heavy-duty foil. Top with onion, peppers, garlic and orange zest. Wrap tightly., Place on a rack in pressure cooker; add water. Close over securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high; cook for 12 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.), Immediately cool according to manufacturer's directions until pressure is completely reduced. 5 tablespoons vegetable oil, divided
2 tablespoons soy sauce
2 garlic cloves, minced
4 boneless skinless chicken breast halves
1/2 cup coarsely chopped walnuts
1 tablespoon butter
4 green onions, thinly sliced
1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons honey
1 to 2 tablespoons grated orange zest
2 to 3 teaspoons grated lemon zest
1/2 teaspoon salt
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • In a small bowl, combine orange juice concentrate, 4 tablespoons oil, soy sauce and garlic. Pour half of the marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2-3 hours. Cover and refrigerate remaining marinade. , Discard marinade from chicken. In a large skillet, cook chicken in remaining oil until juices run clear. Meanwhile, in a small saucepan, saute walnuts in butter until lightly browned; remove and set aside., Set aside 1/4 cup green onions for garnish. Add remaining onions to saucepan; saute until tender. 2 tbsp olive oil
3 tbsp balsamic vinegar
150ml/¼ pint fresh orange juice
150ml/¼ pint chicken stock
2 tsp chopped fresh rosemary leaves
1 tsp light muscovado sugar
knob of butter
orange segments and fresh rosemary sprigs to garnish
boiled rice and green salad to serve

Steps:

  • Put the chicken between pieces of cling film and flatten slightly by bashing with a pan. Unwrap and sprinkle on both sides with pepper. Heat the oil in a pan over a medium heat, then fry the chicken for 5 minutes, turning halfway through.
  • Pour 2 tbsp vinegar over the chicken, add the orange juice and stock and sprinkle with the rosemary and salt. Bring to the boil, lower the heat and bubble gently for 5 minutes until tender, spooning with the sauce frequently and turning chicken halfway through.
  • Stir in the sugar, butter and rest of the vinegar, then sizzle for a few minutes until reduced and glossy.
  • Put the chicken in a serving dish, spoon the sauce over and garnish with orange and rosemary. Serve with rice and a crisp green salad.

2 Tbsp. butter, melted
4 boneless skinless chicken thighs (1 lb.), pounded to 1/4-inch thickness
2/3 cup orange juice

  • Heat broiler.
