Loaded Chicken or Tuna Salad with Greek Yogurt Garlic Ranch

Number Of Ingredients 21

2 to 3 cups shredded chicken (I use a roast chicken and a mix of white and dark meat) or 4 cans of white albacore tuna, drained
2 green onions, both the light and dark green parts, sliced
1 red bell pepper, roasted, peeled, seeded and diced
1 yellow bell pepper, roasted, peeled, seeded and diced
1 small carrot peeled and grated or shredded (sometimes I steam the carrot shreds, about 1 to 2 minutes, for more flavor)
2 large stalks of celery, peeled (this is the best way to add it to salads, no strings), thick white end cut off, split vertically three or four times, finely diced
1 very small red onion or one-quarter of a large red onion, diced (or 1 large shallot, diced)
1 to 3 avocados, depending on how many sandwiches, each half slightly mashed
Garlic Greek Yogurt Ranch Mayo (recipe follows). the amount depending on how 'wet' you like your chicken salad
Kosher salt and fresh ground black pepper, if needed.
GREEK YOGURT GARLIC RANCH 'MAYO'
2/3 cup Greek Yogurt (Use all mayonnaise instead of yogurt, if desired)
2 to 3 tablespoons mayonnaise (if using all mayonnaise, just 2)
1/4 cup chopped, fresh parsley
2 tablespoons chopped, fresh chives
1 tablespoon chopped, fresh dill weed
1 garlic clove chopped and smashed into a paste with a pinch of kosher salt
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 cup buttermilk (more or less, taste as you drizzle it in and stir, or 2 teaspoons buttermilk powder**) You can omit all the buttermilk, if you like. It's great without it too, since yogurt is already tangy. If using all mayo, you need to use it.
Salt and pepper to taste

Steps:

  • Make the Salad Combine the first 7 ingredients in a large bowl. Mix in as much of the Greek Yogurt ranch mayo as you desire. The Secret - Cover the bowl with plastic wrap and refrigerate for at least 2 hours (I refrigerate it overnight) before serving to allow the flavors of the chicken salad and yogurt ranch to really blend or shall I say 'sing'? Because it really does sing! You'd be amazed at the difference it makes, not unlike beef stew eaten the day after it's cooked. Season it with extra salt and pepper after letting it chill, if need be. Serve as sandwiches, slightly mashing an avocado on top or spreading the avocado on one or both slices of bread, then layering boston or butter lettuce and tomato, if desired, or roll into whole wheat flour tortilla wraps or flatbread. Keep it low-carb and gluten-free by serving as is on a salad plate or spooned into a ripe avocado half. Make The Greek Yogurt Garlic Ranch: Place Greek yogurt in a strainer lined with cheesecloth (or a paper towel) over a bowl. Cover the strainer and allow excess liquid to drain for about 1 to 2 hours. You'll be replacing the liquid with buttermilk to make it 'ranch'. (While it's draining, start roasting the peppers and prepping the rest of the vegetables for the salad). If you're using all mayonnaise, obviously you can skip the above step. In a medium bowl, stir together strained Greek yogurt, mayonnaise, parsley, chives, dill, garlic paste,, garlic powder, and onion powder. Stir in buttermilk. Add more or less buttermilk for desired taste and consistency. I like it thick, like, well..mayo. Season to taste with salt and pepper. Wrap and refrigerate for several hours before adding it to salad, if you have the time. Even more flavor! Notes: *Double or add another half of the Garlic Ranch recipe for more 'mayo' ** You can usually find buttermilk powder in the baking or dried milk aisle in supermarkets. If not, you can order it online.

  • In a large bowl, combine the mayo, lemon juice, salt and tabasco sauce; blend well.

If you like Indian flavors, this is a fun twist on an old favorite. I was in the mood to make tuna salad but wanted something different, and when I didn't find a recipe that interested me, I made one up based on bhel puri chaat. The chutneys called for might not be standard issue in your pantry, but the store-bought ones do keep a long time and add a lot of flavor with no fat. The key to this recipe is the balance of flavors and textures. You need sweet and spicy, crunchy and soft. It's delicious and of course, it was easy. Serve on toasted naan, in sandwich wraps, tortillas, open-faced on toasted bread, or over greens as a salad.

Here's a recipe I whipped up to jazz up the usual tuna or chicken salad. Instead of the usual 'tuna' I actually use a can of chunk solid white albacore. The resulting salad can be used in a wrap, on bread, on lettice leaves, and various other ways! Very tasty!

1 (6 ounce) can solid white tuna
1/3 cup mayonnaise
2 tablespoons honey mustard
1/4 cup apricot preserves
3 tablespoons sweet pickle relish
1/2 red apple, cored, chopped
1 cup dark raisin
1/8 teaspoon pepper

Steps:

  • Drain the chicken & albacore & shred them in a bowl.
  • Add the mayonnaise, mustard, preserves & pickle relish.
  • Quarter the unpeeled apple & get rid of the core.
  • Stand each quarter apple on its edge and slice each in half lengthwise, keeping the red halves.
  • Dice these red halves & add to chicken/albacore mix, along with the raisins.
  • Mix well & season with pepper to taste.
  • Refrigerate.

An easy combo of chicken and tuna that's not too fruity, sweet or spicy, but packed with flavors that really compliment each other. Tonight, DS told me he wasn't going to be home for dinner so I planned on just splitting one leftover chicken breast between DH, our toddler & myself. Then at the last minute DS said he was going to be home after all, but now I had nothing thawed to make! I got into creative mode, scrounged the fridge & pantry & came up with this unusual take on the chicken sandwich. I didn't expect great things, but my boys raved over it, I impressed myself & even my toddler ate it! In the future I will probably add green onion to the mix, as I usually would, but just didn't have it on hand this time. I'm posting my creation here so we can enjoy it again and in hopes that you'll find it as pretty and tasty as we did. :)

1 large can chunk chicken or tuna
2 Tbsp dill pickle relish
1 small onion, finely diced
1/2 c celery, finely chopped
1/2 c bell pepper, finely diced (any color)
1/2 c black or green olives, chopped
3 hard boiled eggs
3 Tbsp salad dressing or mayo
2 small roma tomatoes, diced
2 c shredded lettuce

Steps:

  • 1. In medium bowl, combine chicken or tuna, pickle relish, onion, celery, bell pepper, olives,and tomatoes. . Stir gently to combine.
  • 2. Peel and roughly chop the hard boiled eggs into the mixture.
  • 3. Add the salad dressing and gently fold all ingredients together
  • 4. If serving immediately, fold in the lettuce; if not, fold it in just before serving.
  • 5. This is great served in a hollowed out tomato, on your favorite bread or wrapped in a lettuce leaf. Use your imagination.

1 cup diced celery

1 tablespoon mayonnaise
1/4 tablespoon paprika
1/4 sweet green pepper, chopped into cubes

your favorite bread (I like baguette)
1 teaspoon cinnamon (I like to grind it myself in a mortar and pestle) (optional)
1/2 tablespoon Dijon mustard

  • Open can of tuna and drain water.
  • Cut green peppers and chicken.
  • Mix tuna and mayonnaise in a bowl with the paprika (if you added the cinnamon and Dijon, add those in this step).

400g chicken breast
2 tbsp olive oil
2 green chillies
4 tbsp garam masala

  • Chop the onion, tomatoes, pepper and avocado. Mix well in a large bowl with the mixed leaves and the tuna.

This all-purpose dressing from "Cook's Illustrated" is fabulous on all three types of sandwich fillings. Listed are the variations suggested for each filling. Recipe makes 1/4 cup (enough for one 6 ounce can tuna) but can be doubled or tripled.

I got this recipe from a friend. Its a very easy and light main dish, great for summer evenings. I serve it with a spinach salad and bread. 1 can(s) (6 ounces) water packed tuna, drained and flaked
1 cup(s) drained and sliced ripe olives

1 jar(s) (12 ounce size) marinated artichoke hearts, drained
2 tablespoon(s) chopped onion
1 tablespoon(s) capers, drained
