With creamy white wine sauce and a medley of chicken, carrots, mushrooms and pearl onions, this chicken fricassee recipe is certain to become a favorite.

Number Of Ingredients 15

1 tablespoon olive oil
3 pounds bone-in chicken thighs and drumsticks
1 teaspoon kosher salt, divided
¼ teaspoon coarse ground black pepper
1 cup pearl onions (about 8 oz)
2 or 3 carrots, peeled and cut in ¾-inch slices
8 ounces mushrooms, washed and cut in half or quartered
1 clove garlic, minced
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
½ cup dry white wine ( such as Chardonnay or Sauvignon Blanc)
1 ½ cups reduced sodium chicken broth
1 tablespoon freshly squeezed lemon juice
½ cup heavy cream
3 tablespoons minced fresh dill (1 or 2 teaspoons dried dill weed)

Steps:

  • Preheat oven to 400ºF.
  • Heat oil in a large, ovenproof skillet over medium high heat. Season chicken with ½ teaspoon salt and pepper and add to hot oil. Brown for 7-8 minutes on each side and then remove to a plate.
  • Discard extra oil/fat in pan, leaving about 1 tablespoon.
  • Add onions, carrots, mushrooms, and remaining ½ teaspoon salt, and cook, stirring, until mushrooms are golden brown.
  • Add garlic and continue to cook 1 minute or until fragrant. Add butter and stir to melt. Add flour and cook for 2 to 3 minutes or until flour is absorbed and smells slightly nutty. Stir in wine and cook for 2 to 3 minutes or until slightly reduced, scraping all the brown bits off the bottom of the pan. Stir in chicken broth and lemon juice.
  • Nestle chicken into pan juices and place in oven. Bake uncovered for 20 to 25 minutes or until chicken is 165ºF when checked with an instant read thermometer.
  • Remove chicken to a clean plate and cover with foil. Place pan over medium heat and simmer until thickened slightly, about 15 minutes.
  • Reduce heat to low and stir in heavy cream and dill. Taste and season with salt and pepper as needed. Return chicken to pan and serve with rice, potatoes, or pasta.

2 tablespoons olive oil
1 tablespoon unsalted butter
8 bone-in, skin-on chicken thighs
Salt and freshly ground black pepper
1 onion, diced
4 stalks celery, diced
4 cloves garlic, thinly sliced
2 cups chopped fresh tomato
1/2 cup vermouth
2 quarts chicken broth
1 tablespoon fresh thyme
2 cups roasted red peppers, julienned
1 roasted pasilla pepper

Steps:

  • Heat the olive oil and butter in a large Dutch oven over high heat. Add the chicken a few pieces at a time and brown on all sides. As they brown, sprinkle with salt and pepper and transfer to a platter.
  • Add the onions to the pot and cook over medium heat to soften. Add the celery and garlic and cook until they turn a rich brown, about 5 minutes. Add the tomatoes and cook, stirring, for 3 more minutes. Deglaze with vermouth, then add the chicken broth and thyme. Return the chicken to the pot and bring to a simmer. Lower the heat, then cover and simmer for 45 minutes. Add the roasted peppers and pasilla, then cover and cook until the chicken is fork-tender and the thigh bones are loose, an additional 30 minutes.

PAN-ROASTED CHICKEN WITH MUSHROOMS AND ROSEMARY

1 (6-ounce) boneless chicken breast with wing attached, with skin
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
5 fresh white mushrooms, halved
2 shallots, halved
2 sprigs fresh rosemary
1/4 cup water
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the chicken on both sides with a generous amount of salt and pepper. Place a cast-iron or regular ovenproof skillet on the stove over medium heat. Drizzle the pan with the oil and lay the chicken in the hot fat, skin-side down. Cook for about 5 minutes until the skin begins to set and crisp. Throw in the mushrooms, shallots, and rosemary. Stick the whole thing in the hot oven and roast for 15 minutes until the chicken is cooked, and the mushrooms and shallots are soft and roasted.
  • The last thing to make is a quick sauce using the flavors left in the bottom of the skillet. Take all the stuff out of the pan and arrange on a dinner plate to keep warm while preparing the pan sauce. Pour out all but 1 tablespoon of the rendered chicken fat and return the skillet to the stovetop. Stir in the water and lemon juice and cook over medium heat, scraping up the flavors with a wooden spoon. Cook the liquid down to a syrup, about 5 minutes. Drizzle the pan sauce over the dish, season with salt and pepper.

Chicken Fricassée is a classic French recipe made with browned chicken thighs cooked in a decadent white wine mushroom sauce flavored with shallots, herbs and cream. A delicious, comforting dish this is perfect for weeknights or cozy weekends at home.

2 tablespoons salted butter
1 tablespoon extra virgin olive oil
4 chicken thighs (bone-in, skin on)
salt and pepper (to taste)
8 ounces white mushrooms (sliced)
2 shallots (minced)
3 sprigs thyme (or ½ teaspoon dried thyme)
½ cup parsley (roughly chopped)
1 tablespoon lemon juice
10 ½ ounces cream of mushroom soup (10.5 ounce can )
½ cup chicken stock
½ cup white wine
½ cup heavy cream
fresh parsley (optional garnish)

Steps:

  • Place the butter and extra virgin olive oil in a large skillet and heat over medium-low heat until butter has melted.
  • Season chicken thighs with salt and pepper and add the chicken, skin side down, and cook for 3-4 minutes on each side until well browned. The chicken will not be cooked through yet. It will finish cooking later.
  • Remove the chicken from the skillet to a plate and cover with aluminum foil. Set aside.
  • In the hot skillet, add the mushrooms, shallots and thyme and saute until the mushrooms just begin to brown, about 2 to 3 minutes. (If the pan is dry, add an additional tablespoon of butter and tablespoon of extra virgin olive oil first.)
  • Add in the parsley and cook for another 30 seconds to 1 minute.
  • Stir in the lemon juice, mushroom soup, chicken stock and white wine until combined.
  • Carefully place the chicken thighs back into the skillet, skin side up in the sauce, and bring everything to a simmer over medium or medium-low heat.
  • Cover the pan and simmer on medium-low heat for 20 to 30 minutes or until the chicken reaches 165°F in the center. If you don't have a meat thermometer, you can remove a piece of chicken and cut into the middle. If there is no pink and the juices run clear, it is done cooking.
  • Take the skillet off the heat and stir in the heavy cream and serve hot with a fresh parsley garnish if desired. Serve with mashed potatoes, rice or even pasta.
