SUZANNE'S INSTANT POT® CREAMY CHICKEN NOODLE SOUP



Suzanne's Instant Pot® Creamy Chicken Noodle Soup image

This variation on crack chicken noodle soup cooked in the pressure cooker or Instant Pot® has just a few changes and some extra cheese. Still as quick and easy as the original and even more delicious. This soup also freezes very well in resealable plastic bags!

1 pound chicken breast, diced
6 slices bacon, cut into small pieces
1 cup chopped carrots
1 small onion, diced
4 cups chicken broth
1 cup chopped celery
1 (1 ounce) package ranch seasoning mix
1 (8 ounce) package spaghetti
1 cup Cheddar cheese
1 cup grated Parmesan cheese
1 cup heavy whipping cream
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add chicken, bacon, carrots, and onion. Cook and stir frequently until onions are tender, chicken and bacon are cooked, and carrots are semi-tender, 5 to 7 minutes. Add broth, celery, and ranch seasoning.
  • Break spaghetti into thirds and add to the pot; stir to be sure all pasta is coated with broth. Close and lock the lid and set vent to sealing. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Stir in Cheddar cheese and Parmesan cheese until melted. Stir in cream until combined. Season with salt and pepper.

I love this recipe because it is so easy, and melts in your mouth! My aunt used to make this many years ago, and I retrieved this recipe from her a few years ago. I usually serve this chicken (and sauce) over rice, or noodles, with green beans or a salad. It makes a great meal for company, too! They will think you've been slaving...

4-6 chicken breasts, salted and peppered
1 stick butter, softened
1/2 c sour cream
1/2 c sherry
1 can(s) cream of mushroom soup

Steps:

  • 1. Preheat oven to 350 degrees. Sear chicken breasts in hot butter, until crust forms. Place in a Pyrex pan big enough to hold the breasts.
  • 2. Mix together, in a small bowl, the sour cream, sherry, and cream of mushroom soup. Pour this over the chicken, and cover tightly with foil.
  • 3. Bake in 350 degree oven for 1- 1 1/2 hours, until chicken is done.

5 lb. hen, diced and stock
3/4 cup shortening
1 303 can tomatoes
1 cup mushrooms
2 green peppers
4 medium onions
24 oz. #6 spaghetti(not fine)
1 lb. shredded american cheese
salt, pepper, garlic salt

Steps:

  • Melt shortening, saute peppers and onion. Add tomatoes and mushrooms. Cook spaghetti. In roaster, mix cooked spaghetti, diced chichen, stock and grated cheese. Add any other ingredients. Mix well. Cook in slow oven at 300 degrees in covered pan for one hour. ENJOY!

6 (8-ounce) boneless chicken breasts halves
1 cup flour
1 egg, beaten with 1 cup milk
3 cups good quality fresh bread crumbs
1/2 - 1 cup light cooking oil

Herb Butter:
1/2 cup chopped green onions
1/2 cup chopped fresh parsley
2 cloves garlic
1 teaspoon basil (2 tablespoons fresh)
1/2 teaspoon oregano (1/2 tablespoon fresh)
1 teaspoon marjoram (1 tablespoon fresh)
1 teaspoon tarragon (1 tablespoon fresh)
1 teaspoon dill weed (1 teaspoon fresh)
1 teaspoon black pepper
dash of Tabasco
1 pound unsalted butter

Steps:

  • Dip chicken breasts in flour, dip in egg/milk mixture, then thoroughly coat in bread crumbs. Sauté in hot oil until well browned on each side. Cook until done (do not overcook). Serve with a dollop of herb butter. Herb Butter: Mix all above thoroughly in food processor. The herb butter is delicious on toasted French bread, or toast triangles. Can also be used on steaks, hamburgers, veal scaloppini or steamed vegetables. Fun Fact: History students know that Betsy Ross sewed the first American flag, but did you know it was designed by a New Jersey congressman? Francis Hopkinson, a signer of the Declaration of Independence, designed the first American flag, which was adopted by the Continental Congress in 1777.
