CASHEW CHICKEN AND ASPARAGUS STIR FRY

I have made this meal without the asparagus but when it is back in season again, I really enjoy the texture and fresh flavor it brings to the recipe.

1 tablespoon soy sauce
1 teaspoon cornstarch
1 garlic clove, minced
4 chicken breast halves, cut into bite size pieces
1 tablespoon cornstarch
1 dash hot pepper sauce
3/4 teaspoon sugar
3/4 teaspoon white wine vinegar
1 teaspoon dry sherry
1 tablespoon soy sauce
1 cup chicken broth
3 tablespoons cooking oil
1/2 cup salted roasted cashews
2 medium green bell peppers, cut into bite size pieces
1 medium onion, cut into 8 wedges
8 ounces fresh asparagus spears, trimmed and cut into 1-inch pieces
1/2 teaspoon minced fresh ginger, or
1/4 teaspoon ground ginger
2 cups cooked long-grain rice

Steps:

  • In a bowl, stir together the first three ingredients and add chicken; coat well and set aside.
  • In another small bowl, mix the cooking sauce ingredients and set aside.
  • Place a wok over medium-high heat; when wok is hot, add 2 tablespoons of the oil. When oil is hot, add the cashews and stir until browned (about 1 minute). Remove with a slotted spoon and set aside.
  • Add the chicken mixture and stir-fry until meat is no longer pink in the center (about 3 minutes). Remove from wok and set aside.
  • Pour the remaining tablespoon oil into the wok. When the oil is hot, add the bell peppers, onion, asparagus and ginger; stir-fry until the pepper is crisp-tender to the bite (about 4 minutes).
  • Return the chicken to the wok. Stir cooking sauce to blend and add to wok; stir until bubbly and sauce has thickened. Stir in the cashews and immediately serve over the rice.

1 lb boneless chicken breast, in 1 inch cubes
1/4 cup soy sauce
2 tablespoons dry sherry
1 teaspoon minced fresh ginger or 1/4 teaspoon ground ginger
1 garlic clove, minced
1 teaspoon sugar
1 tablespoon vegetable oil or 1 tablespoon peanut oil
1/2-1 teaspoon cornstarch
4 cups fresh stir fry vegetables
1 cup frozen pea pods, thawed
1/2 cup cashews, toasted in oven

Steps:

  • In a medium bowl, combine soy sauce, sherry, ginger, garlic and sugar.
  • Add chicken mix lightly.
  • Refrigerate 20 minutes.
  • Remove chicken from marinade, reserving marinade mixture.
  • Heat oil in skillet over medium heat.
  • Add chicken; stir-fry 3 to 4 minutes or.
  • until chicken turns white.
  • Stir in vegetables; stir-fry 3 to 4 minutes or until tender.
  • Dissolve cornstarch in reserved marinade mixture; mixing until well blended.
  • Add to chicken mixture.
  • Stir-fry until sauce is thickened.
  • Stir in cashews.
  • Serve over prepared vegetable fried rice.

1 red bell pepper, chopped

1 1/2 tablespoons finely chopped peeled fresh ginger
1/4 teaspoon dried hot red-pepper flakes
3/4 cup reduced-sodium chicken broth
1 1/2 tablespoons soy sauce
1 1/2 teaspoons cornstarch
1 teaspoon sugar
1/2 cup salted roasted whole cashews

Steps:

  • Chop scallions, separating white and green parts. Pat chicken dry, then cut into 3/4-inch pieces and toss with salt and pepper. Heat a wok or 12-inch heavy skillet (not nonstick) over moderately high heat until a drop of water evaporates immediately. 2 cloves garlic, minced
1 (2-inch) piece peeled fresh ginger, cut into thin matchsticks
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon cornstarch plus 1 teaspoon
1 1/4 teaspoons kosher salt
1 tablespoon dry sherry
3/4 cup chicken broth, low-sodium canned, or homemade or water
2 tablespoons vegetable oil
2 bunches medium asparagus (about 2 pounds), woody stems trimmed, sliced into 1-inch pieces
1 bunch scallions (white and green parts), thinly sliced

Steps:

  • Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.

3 tablespoons soy sauce
2 tablespoons cornstarch
1 1/2 cups water or 1 1/2 cups vegetable stock
1 tablespoon gingerroot, minced
1 teaspoon toasted sesame oil
1/4 teaspoon dry crushed red pepper
1 dash white pepper
2 tablespoons safflower oil
1 lb fresh asparagus, woody and fibrous bits removed, tender part cut into 3" lengths (3 cups)
4 scallions, chopped
1 small sweet red pepper, chopped
1 clove garlic, minced
1 cup unsalted dry-roasted cashews or 1 cup slivered almonds
mandarin orange section (optional)
toasted sesame seeds (optional)

Steps:

  • Cook or reheat brown rice according to package directions.
  • In small bowl, combine soy sauce and cornstarch. Stir in remaining sauce ingredients; set aside.
  • Heat a wok or large heavy skillet over high temperature; when very hot, add the oil ("Hot wok, cold oil, food won't stick!").

2 teaspoons sesame oil
1 tablespoon finely chopped fresh ginger

  • Cut off the tough ends of the asparagus, and then slice diagonally into 2-3 pieces.

Whipped this one up randomly one night and it turned out great. Over did the heat a bit with the pepper flake, but even so it was quite good. I left the extra heat in the recipe, but feel free to halve or more if you don't like too much heat.

1 lb seitan chicken strips or 1 lb chicken breast, strips
1/2 cabbage, sliced in 1/2 inch pieces
1 lb thin asparagus, washed and bottom 2 inches (or more)
1 red bell pepper, diced
2 tablespoons vegetable oil
2 tablespoons finely chopped ginger
1/2 cup soy sauce
1 1/2 tablespoons red pepper flakes
1 tablespoon black cherry jam or 1 tablespoon other jam

Steps:

  • Heat the oil and add add the cabbage, soy sauce, jam and red pepper flake.
  • Cook on high 3-5 minutes until cabbage has started to wilt.
  • Add the chicken, ginger, asparagus and bell pepper.
  • Cook on high heat the entire time and stop once the asparagus is slightly tender, about 10 minutes.
  • Serve with white or brown rice.
