4 boneless, skinless chicken breasts (about 3 lbs. total)
8 ounces (about 1 cup) French, Russian or Catalina salad dressing
1 (14 ounce) can whole berry cranberry sauce
1 (1 ounce) packet dry onion soup mix seasoning
Zest from ½ of an orange

Steps:

  • Preheat oven to 375 degrees. Spray a 2-quart baking dish with cooking spray. Season chicken with salt and pepper, to taste.
  • Place chicken in the prepared dish. In a separate bowl, stir together salad dressing, cranberry sauce, dry onion soup mix seasoning and orange zest. Pour sauce over chicken.
  • Cover tightly and bake for 30 minutes. Remove the cover and return to the oven for 15 more minutes, or until the chicken reaches an internal temperature of 165 degrees F. Spoon sauce over chicken and serve.

2 cups cubed boneless chicken breast
1 cup Italian salad dressing, or as needed
½ teaspoon garlic powder
¼ teaspoon lemon pepper
1 (8 ounce) package fresh spinach
2 (8 ounce) packages cream cheese, softened
½ cup chopped fresh chives
¼ cup olive oil
1 clove garlic, minced
1 pinch salt and ground black pepper to taste
2 cups chicken broth
1 cup shredded mozzarella cheese

Steps:

  • Place chicken in a bowl and pour in enough Italian salad dressing to coat. Marinate in the refrigerator, 2 to 3 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Drain and discard marinade from chicken and season chicken with garlic powder and lemon pepper. Transfer seasoned chicken to a casserole dish. Layer spinach over chicken.
  • Mix cream cheese, chives, olive oil, garlic, salt, and pepper together in a bowl. Slowly pour chicken broth into cream cheese mixture, stirring until mixture is smooth; pour over chicken and spinach. Cover casserole dish with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove foil and top chicken mixture with mozzarella cheese; cook until chicken is no longer pink in the center and cheese is melted, 15 to 20 minutes.

This is my own variation of a dish my mom passed down to me. It can be used with turkey, too... which makes it perfect for THANKSGIVING leftovers!!! I have made this several different ways so please read the extra note at the bottom of the directions. This is my kind of comfort food!

1/2 lb cooked and pulled chicken (i usually use 2 chkn breasts)
10 oz frozen chopped spinach, thawed and drained
1 can(s) cream of mushroom soup
1 box stuffing mix
1 c dried cranberries
1 c shredded cheddar

Steps:

  • 1. Mix all ingredients until soup is well integrated.
  • 2. Heat oven to 350. You can use a 2 1/2 qt baking dish and bake for 35-40 minutes. If you use a 9x11 dish, bake for 25-30 minutes. COVERED. Let stand for 10 minutes, then serve.
  • 3. NOTE: I have made this recipe several different ways, and here are some variations that you may prefer. You can use fresh spinach, but add 1/2 cup of chicken broth to the mix for best results. Works great with your leftover Thxgvg turkey. Give it a try! Use as much or as little meat as you like. 1/2 lb is a guesstimate. My husband likes "more meat" so sometimes I use 3 chicken breasts instead of 2. This is a great casserole to whip up for friends or family when they're not able to take the time to make homemade meals. It reheats well so you can fully cook it, or just refrigerate the mixture in a baking dish and give them directions for cooking. Please try my recipe and share your comments!

2 cups torn bread
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
4 cups packed flat-leaf spinach, washed
1 medium yellow onion, finely chopped
1 garlic clove, minced
1/4 cup white wine
2 tablespoons all-purpose flour
1 1/2 cups half-and-half
1/2 teaspoon fresh lemon juice
1 cup shredded rotisserie chicken

Steps:

  • Preheat oven to 450 degrees. In a medium bowl, combine bread with 1 tablespoon oil; season with salt. Set aside. In a medium pot, heat 1 1/2 teaspoons oil over medium-high. Add spinach; season with salt. Cook, stirring, until wilted, 2 minutes. Transfer to a colander, let cool, then squeeze out water. Coarsely chop.
  • Wipe pot clean and heat 1 1/2 teaspoons oil over medium. Add onion, garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, about 8 minutes.
  • Add wine to pot and cook until almost evaporated, about 5 minutes. Add flour and cook, stirring, 30 seconds. Gradually whisk in half-and-half. Add lemon juice and bring mixture to a boil over high.
  • Remove from heat and stir in chopped spinach and chicken; season with salt and pepper. Transfer to a 2-quart baking dish and top with bread pieces. Bake until bread is golden brown and mixture is bubbling, 8 to 10 minutes.

3 tablespoons unsalted butter
1 large onion, finely chopped
Kosher salt
2 cloves garlic, chopped
6 tablespoons all-purpose flour
2 cups whole milk
Enough chicken soup bouillon for 2 cups broth
1 1/2 pounds boneless, skinless chicken thigh or breast, chopped into 1/2- to 3/4-inch pieces
1/2 teaspoon dried thyme
Freshly ground black pepper
One 14-ounce can artichokes, drained and chopped
One 10-ounce block frozen spinach, thawed and drained
8 ounces light cream cheese
1/2 bunch fresh parsley
Pinch crushed red pepper
One 16-ounce can refrigerated biscuit dough
1 large egg, lightly beaten with a splash of water
Flaky salt, such as Maldon

Steps:

  • In a large skillet over medium-high heat, melt the butter. Add the onion and a pinch of kosher salt and cook, stirring, until soft, about 10 minutes. Add the garlic and cook for another minute.
  • Stir in the flour to evenly distribute. Add 1 cup milk, stirring continuously until thickened; repeat with the remaining 1 cup. Stir in the chicken soup bouillon, then add the chicken, thyme and a few turns of black pepper and simmer, stirring often, until the chicken is cooked through and no longer pink, 10 to 15 minutes. Add the artichokes, spinach, cream cheese, parsley, a pinch of crushed red pepper and a few turns of black pepper. Stir until the cream cheese is melted. Taste and adjust as desired.
  • Divide the spinach, artichoke and chicken mixture into eight 5-inch aluminum pans or a 9-by-13-inch casserole pan. Separate the biscuits, then top the casseroles with them. Brush them with the egg wash and sprinkle with the flaky salt and some black pepper.
  • If baking immediately, preheat the oven to 400 degrees F. Bake until the biscuits are golden brown, about 15 minutes.
  • If freezing, allow the casseroles to cool to room temperature, then cover tightly with foil and freeze. To reheat, bake at 400 degrees F for 30 minutes.

1 package (10 ounces) frozen chopped spinach (cooked)
5 tablespoons butter (divided)
3 tablespoons all-purpose flour
1 teaspoon seasoned salt
1 1/2 cups milk
1/2 cup fresh grated Parmesan cheese
1/2 cup heavy cream, light cream, or half-and-half
Salt and freshly ground black pepper (to taste)
2 cups cooked diced chicken
1 cup fine soft breadcrumbs

Steps:

  • Heat the oven to 350 F. Lightly butter a 2-quart baking dish.
  • Drain the cooked spinach in a colander, squeezing or pressing to get as much of the water out as possible. Spread the spinach in the bottom of the prepared baking dish.
  • In a medium saucepan over medium-low heat, melt 3 tablespoons of butter. Add the flour and seasoned salt to the butter and cook, stirring, for 2 minutes. Gradually add the milk and cook, stirring constantly, until thickened. Stir in the Parmesan cheese and cream. Cook, stirring until the cheese has melted. Taste and add salt and pepper, as needed. Add the chicken to the sauce and stir to blend.
  • Pour the chicken and sauce mixture over the spinach layer in the baking dish.
  • Melt the remaining 2 tablespoons of butter in the microwave or in a saucepan on the stovetop. Toss the butter with the soft breadcrumbs. Spread the crumbs over the casserole.
  • Bake the casserole for 20 to 25 minutes, or until the topping is nicely browned. To brown the topping a little more, turn the broiler on and broil for a minute or two before you take it out of the oven.

CHICKEN AND SPINACH RIGATONI CASSEROLE

Quick, easy and delicious. The recipe calls for 4 garlic cloves, but I only added 2 and should have added 3-4 cloves. I also added more parmesan because of preference. This is a hit with the kids. My friend Kathy sent me this recipe and now I am indebted to her forever.

10 ounces rigatoni pasta (uncooked)
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 teaspoons vegetable oil
1 large onion, chopped
4 garlic cloves, minced
1 lb boneless skinless chicken breast, chopped
1 (20 ounce) can whole tomatoes, undrained, coarsely chopped
3 tablespoons tomato paste
1 1/4 teaspoons dried basil
3/4 teaspoon oregano
1/4 teaspoon hot red pepper flakes, crushed
1/2 cup parmesan cheese, grated

Steps:

  • Cook pasta according to pkg directions and drain.
  • Place spinach on paper towel and squeeze until barely moist.
  • Add oil to a large non stick skillet and place over medium heat until hot.
  • Add onion and garlic and sauté until tender.
  • Add chicken and cook until it loses its pink colour, stirring constantly.
  • Stir in tomatoes, tomato paste, basil, oregano and crushed red pepper flakes.
  • Bring to a boil and then reduce heat.
  • Simmer 5 minutes, uncovered stirring occasionally.
  • Combine pasta, spinach, chicken mixture and 1/4 cup cheese in a bowl; stir well.
  • Spoon into 13 X 9 baking dish coated with cooking spray.
  • Sprinkle with remaining 1/4 cup parmesan cheese over the top.
  • Bake at 350° for 20 minutes.
  • Makes 8 servings.

3/4 pound boneless skinless chicken breasts, cubed
1 small onion, chopped
1/2 cup chopped green pepper
1 jar (26 ounces) spaghetti sauce
1 package (16 ounces) frozen leaf spinach, thawed and squeezed dry
1 jar (6 ounces) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
2 cups shredded part-skim mozzarella cheese, divided

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick saucepan coated with cooking spray, saute chicken until no longer pink; set aside., In the same pan, saute onion and green pepper until crisp-tender. Add the spaghetti sauce, spinach, mushrooms and olives. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain pasta; add chicken and pasta to the pan. 1 can chicken broth (14.5 ounces)
3 Tablespoons butter
3 cups stuffing mix
3 cups cooked and cubed (or shredded) turkey
2 cups fresh baby spinach (roughly chopped)
½ cup dried cranberries
¾ cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Spray an 11x7" baking pan with non-stick cooking spray.
  • In a large saucepan, bring broth and butter to a boil. Remove from heat.
  • Add in stuffing mix and stir together until all stuffing is moist.
  • Add in cooked turkey, chopped spinach, and cranberries.
  • Dump turkey and stuffing mixture into prepared pan. Sprinkle cheese on top.
  • Bake (uncovered) for 10-15 minutes or until cheese is melted.
