Steps:
- Cook noodles according to package directions, omitting salt if desired.
- Drain and keep warm.
- Meanwhile, combine broth, water, chicken, mushrooms, ginger, and soy sauce in large saucepan; bring to boil over high heat.
- Reduce heat and simmer until chicken is almost cooked through, about 6 minutes.
- Add snow peas, baby peas, and spinach and cook until snow peas are crisp-tender, about 2 minutes.
- Stir in noodles.
- Remove and discard ginger.
- Ladle soup evenly into 4 serving bowls; sprinkle with scallion.

CHICKEN SOBA BOWL
Steps:
- 1. In a large bowl, whisk together orange juice, lemon juice, soy sauce, sesame oil, serrano pepper, lemongrass or lemon zest, and ginger. 2. Fill a large skillet 3/4 full with water, add a sprinkle of salt and bring to a simmer. Add chicken tenders and cook 5 to 7 minutes or until chicken is tender. Drain chicken and shred directly into bowl with dressing. 3. Bring a large pot of salted water to a boil. Add soba and shiitakes; cook 3 minutes. Add bok choy and broccoli; cook 1 to 2 minutes or until noodles are al dente. 4. Drain noodles and vegetables and add to bowl with chicken and dressing. Toss gently to combine. Garnish with basil if desired.

- In a sealable container combine the chicken and marinade and
- toss to coat. Set aside to marinade for about 30 minutes (or overnight).
- Place the chicken on a preheated grill or sauté pan and cook, basting with leftover marinade for 8-10 minutes a side. When cooked through the chicken will be firm, opaque and when poked with a fork the juices will run clear.
- Remove from heat and set aside before cutting. Meanwhile heat oil over medium heat and sauté the onions and mushrooms, until they have begun to brown and caramelize, about 6 minutes.
- Stir in the soy sauce, brown sugar and sriracha until well combined.
- Add the carrots and cook for another minute before stirring in the broth, water and miso. Cook gently stirring until the miso has fully dissolved.
- Add in the cabbage and soba noodles and cook until the noodles are just tender, about 5 minutes.
- Stir in the spinach and ladle into individual bowls.
- Slice the chicken and place on top garnished with sesame seeds and cilantro to serve.
