1 (10 1/2 ounce) can chicken gumbo soup (undiluted)
4 hamburger buns, toasted

Steps:

  • Crumble beef in 2 quart microwave casserole dish.
  • Cook on High power (100%) for 3-5 minutes, stirring to break up meat.
  • once or twice.
  • Drain hamburger Add the remaining ingredients.
  • except for the buns.
  • Blend well and heat on High power for about 3 minutes, or until very hot and heated through.
  • Spoon meat mixture onto buns and serve.

I'm showing you how to make what I like to call Sloppy Chickens, which are a cross between a pulled pork sandwich and a classic ground beef Sloppy Joe, except this chicken version is way easier than both of those. And don't let the name fool you, we're not going to need to pull any chicken, since as you'll see, it actually pulls itself. Garnish these with more green onion if desired.

1 tablespoon vegetable oil
4 cloves garlic, minced
½ large yellow onion, diced
1 tablespoon brown sugar, or to taste
2 teaspoons kosher salt, or to taste
1 teaspoon ground black pepper
1 pinch cayenne pepper, or to taste
2 pounds boneless, skinless chicken thighs
¾ cup ketchup
1 tablespoon Dijon mustard
½ teaspoon Worcestershire sauce
1 tablespoon hot sauce, or to taste
1 cup water
2 tablespoons thinly sliced green onions
½ cup diced jalapeno pepper
4 medium hamburger buns - split, toasted and buttered

Steps:

  • Add vegetable oil to a saucepan, and then add (in this order) garlic, yellow onion, brown sugar, kosher salt, black pepper, cayenne, chicken thighs, ketchup, Dijon mustard, Worcestershire sauce, and hot sauce.
  • Place over high heat and wait until you can hear the garlic sizzling in the bottom of the pan, about 30 seconds. Let garlic sizzle for about 30 seconds before adding the water. Stir everything together and wait for the mixture to boil.
  • Reduce heat to medium-low and simmer, uncovered, until the chicken falls apart, about 1 1/2 hours.
  • Stir in the green onions and peppers and cook until the peppers just turn tender, 3 to 5 minutes more. Taste for seasoning.
  • Remove from heat and serve on toasted hamburger buns.

1 onion
2 (10 ounce) cans chicken gumbo soup
1/3 cup catsup
1 teaspoon salt

Steps:

  • In skillet, cook chopped onion until soft.
  • Add ground beef, crumbling and breaking it up while cooking it.
  • When meat is brown, remove from heat and drain fat.

6 chicken breasts
3 baking potatoes or 6 medium red potatoes, washed and cut in half and then sliced to about 1/2 inch thick

  • Add 1 1/2 cans Sloppy Joe Mix and remaining ingredients. Cook on high 4 hours or until the chicken shreds. I adopted this recipe because my niece makes this with hamburger for large family gatherings, she makes it for every graduation picnic she has! It is very good, the rice helps to stretch the meat and takes on the color and flavors infused in her Sloppy Joes. My niece got her recipe from her mother-in-law, I can't wait to tell her about this version!

Number Of Ingredients 7

1 tablespoon(s) vegetable oil
2 pound(s) ground chicken (pork or beef)
1 - chopped green bell pepper
1 - chopped onion
30 ounce(s) sloppy joe sauce
2 cup(s) cooked rice
12 - hamburger buns

Steps:

  • Heat oil in large skillet over medium-high heat until hot.
  • Add chicken; cook and stir 4 to 6 minutes or until no longer pink.
  • Stir in pepper and onion; cook 1 to 3 minutes.
  • Add sloppy joe sauce.
  • Cook over medium heat about 8 to 10 minutes; stirring occasionally.
  • Stir in rice; cook until thoroughly heated.
  • Spoon over hamburger buns.
