Dill chicken salad is healthy and easy to make. It's great on a croissant, a wrap, a salad, or on its own.

1.5 pounds boneless skinless chicken breasts, cooked and diced or shredded ((3 to 4 cups))
½ cup diced celery ( (1 to 2 stalks))
1 cup plain Greek yogurt
¼ cup mayonnaise ( (I like the kind made with olive oil))
¼ cup minced fresh dill
2 tablespoons minced green onion ((about 1 green onion))
1 tablespoon dijon mustard
1 teaspoon apple cider vinegar
½ teaspoon kosher salt, or to taste
¼ teaspoon coarse ground black pepper, or to taste
Bread, wraps, or croissants for serving, if desired

Steps:

  • In a large bowl, combine cooked chicken and celery.
  • In a small bowl or large measuring cup, combine yogurt, mayonnaise, dill, green onion, dijon mustard, apple cider vinegar, salt and pepper. Taste and season with more salt and pepper if desired.
  • Stir dressing into chicken and celery until everything is coated evenly.
  • Serve immediately with bread, wraps, or croissants or store in a covered container in the fridge for 3 to 4 days (see note).

2 cups shredded cooked chicken breast
1 cup seedless red grapes, halved
1/2 cup chopped cashews
1 celery rib, chopped
1/3 cup grated Parmesan cheese
1 green onion, chopped
1/2 cup mayonnaise
1/3 cup buttermilk
2 teaspoons lemon juice
1 teaspoon dill weed
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
4 croissants, split

Steps:

  • In a small bowl, combine the first six ingredients. In another bowl, whisk mayonnaise, buttermilk, lemon juice and seasonings. Pour over chicken mixture; mix well. Spoon chicken salad onto croissant bottoms. Replace tops.

2 boneless skinless chicken breast halves (1/2 pound)
1/4 cup creamy ranch dressing
1/2 teaspoon yellow mustard
1/4 cup chopped cucumber
1/4 cup chopped tomato
2 tablespoons chopped cashews
2 croissants, split
1 tablespoon butter, margarine, mayonnaise or salad dressing
Lettuce, if desired

Steps:

  • Arrange chicken, thickest parts to outside edge, in 2-cup microwavable casserole or on microwavable plate. Cover tightly and microwave on High 3 to 4 minutes or until juice is no longer pink when centers of thickest pieces are cut. Uncover and refrigerate about 10 minutes or until cool enough to handle.
  • Cut chicken into 1/4-inch pieces. Toss chicken, dressing, mustard, cucumber, tomato and cashews. Cover and refrigerate about 1 hour or until chilled.
  • Just before serving, spread cut sides of croissant halves with butter. Spread chicken mixture over bottoms of croissants; top with lettuce and tops of croissants.

Summer may be all about lighter recipes, but that doesn't have to mean light on flavor! I made this recipe at my first job and fell in love with the combination of the buttery flakiness of a toasted croissant with a creamy filling that makes it a perfect comfort food for the warmer seasons. I love the way the two textures combine with summer ripe Roma tomatoes, hot cherry pepper relish and a balsamic glaze to create serious #sandwichgoals.

Kosher salt and freshly ground black pepper
Four 6- to 8-ounce boneless, skinless chicken breasts
2 ribs celery, diced
2 scallions, white and pale green parts only, sliced thin
1/4 cup dried cherries
1 teaspoon Dijon mustard
1 teaspoon granulated sugar
1 cup mayonnaise
1/2 cup walnuts, toasted
Romaine lettuce leaves, for serving
4 fresh croissants, sliced and lightly toasted, cut-side up, in the broiler
Sliced Roma tomatoes, for serving
Hot cherry pepper relish or giardiniera, for serving
Balsamic glaze, for drizzling

Steps:

  • In a large Dutch oven or pot, stir 1 tablespoon salt into 6 cups cold water. Add the chicken and heat over medium heat until the water hits a temperature of 170 degrees F. Take the pot off the heat, cover, and let the chicken sit in the warm water until its internal temperature hits 165 degrees F, 15 to 20 minutes. Transfer the chicken to paper towels to dry. Once cool enough to handle, pull the chicken apart with your hands or forks until shredded but still chunky.
  • Meanwhile, in a large bowl, mix the celery, scallions, cherries, mustard, sugar and salt and pepper to taste. Let this mixture sit for at least 10 minutes or up to 1 hour to extract all that flavor. Add the mayo and mix until incorporated. Adjust the seasoning if necessary.
  • Add the shredded chicken and walnuts to the mayo mixture. Adjust the seasonings. Let it sit in the fridge for at least 1 hour before serving, overnight preferred.
  • Place a piece of lettuce on the bottom half of a croissant followed by a scoop of chicken salad, one or two tomato slices, a spoonful of hot cherry pepper relish or giardiniera and a little drizzle of balsamic glaze. Close the top of the croissant. Assemble 3 more sandwiches. Cut the sandwiches in half and eat!

  • Place chicken, onion, and celery in a large bowl and toss to combine.
  • In a smaller bowl mix mayonnaise and dill.
  • Stir mayonnaise mixture into chicken and add salt and pepper to taste.
  • Serve on bread or with crackers.
