CHICKEN ROULADES WITH ROASTED PEPPERS AND SOPPRESSATA



Chicken Roulades with Roasted Peppers and Soppressata image

4 (8-ounce) boneless chicken breast halves, skin on
4 ounces thinly sliced soppressata
1 (6-ounce) jar sweet roasted peppers

Steps:

  • Preheat oven to 350 degrees. Remove tenders from chicken breasts and set aside. (Tenders are the small muscles running the length of the breast, about 1/2-inch in diameter, under each chicken breast half.) Place breasts skin-side-down on flat surface; flatten slightly with cleaver or mallet. Sprinkle with salt and freshly ground pepper. Cover chicken with overlapping slices of soppressata. Place roasted red pepper in center of chicken. Place chicken tender on top of pepper. Roll chicken breasts tight, jelly-roll style, to completely envelop the filling. Place roulades in shallow baking pan. Bake 25 minutes, then place under broiler for 30 seconds to crisp skin. Remove from oven, let rest 5 minutes. Cut each into 6 slices. Serve with pan juices immediately.

2 chicken breast halves
Kosher salt and freshly ground black pepper
1 tablespoon olive oil, plus 1/2 cup olive oil, divided
1 green bell pepper, cored, seeded and thinly sliced
1 red bell pepper, cored, seeded and thinly sliced
1 carrot, thinly cut into sticks
2 Idaho potatoes, sliced 1/8-inch thick

Steps:

  • Preheat the oven to 350 degrees F.
  • With a meat mallet, pound chicken breast halves until thin. Put each half on a large piece of plastic wrap and season chicken with salt and pepper, to taste.
  • In a saute pan over medium heat, heat 1 tablespoon oil and saute the vegetables until tender. Divide the vegetables in half and arrange in center of each chicken breast. Roll each chicken into a log and wrap tightly in the plastic wrap. Tie the ends of the wrap into a knot. Cover the bottom of a shallow baking dish with water and add the chicken. Bake until cooked through, about 20 to 30 minutes.
  • Meanwhile, heat a large saute pan over medium-high heat, add the remaining 1/2 cup of olive oil. When the oil is hot add the potatoes and fry until golden brown. Remove from the oil to paper towels to drain. Season with salt and pepper, to taste.
  • Remove the chicken from the oven to a cutting board. Discard the plastic wrap and slice. Arrange the potatoes on serving plates and top with the chicken.

These flavor-packed protein pinwheels can be prepped in advance then seared and baked right before serving, which means an easy but impressive meal is only minutes away.

4 chicken breasts (at least 6 ounces each; see Cook's Note)
3 cups packed basil leaves
2 tablespoons shredded Parmesan
3 cloves garlic, chopped
2 tablespoons pine nuts, toasted
1/4 cup olive oil, plus more for sauteing
Kosher salt and freshly ground black pepper
12 thin slices fresh mozzarella

Steps:

  • Preheat the oven to 350 degrees F.
  • Place one chicken breast between 2 pieces of parchment paper or wax paper and pound it with a meat tenderizer (or the bottom of a heavy skillet) until it is 1/4 inch thick. Repeat with the remaining chicken breasts.
  • Combine the basil, Parmesan, garlic and pine nuts in a blender. Pulse for 15 seconds, then with the blender running, stream in the oil. Scrape down the sides of the blender as needed and continue blending until the pesto is pureed. Taste and season the pesto with salt and pepper.
  • Spread one-fourth of the pesto on one side of each of the chicken breasts, then top the pesto with 3 slices of mozzarella per chicken breast. Beginning at the shorter end, tightly roll up each chicken breast and secure it with a toothpick. Sprinkle the outsides of the roulades with salt and pepper.
  • Heat a large ovenproof skillet over medium heat and add 2 to 3 tablespoons oil. Once the oil is hot, add the roulades and sear them on all sides until they're browned, about 10 minutes.
  • Transfer the skillet to the oven and bake the roulades until they are cooked throughout and reach an internal temperature of 165 degrees F, 5 to 8 minutes.
  • Remove the roulades from the oven and let them rest for 5 minutes. Remove the toothpicks, then slice and serve.
