- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
- Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

- Bring water to a boil in a saucepan. Stir stuffing mix into the water, place a lid on the saucepan, and remove pan from heat. Let sit until the stuffing is thickened, about 5 minutes. Fluff stuffing with a fork.

- Place half the sauerkraut in a 3 1/2 quart electric slow cooker. Drizzle on about 1/3 cup of the dressing.
- Top with 3 chicken breast halves and spread the mustard over the chicken. Top with the remaining sauerkraut and chicken breasts.

- Preheat grill on medium heat!
- Rinse the chicken breast very well under cold water, pat dry.Mix all the ingredients in a small bowl, season both sides of the breast with all the spices. Grill for 10-15 minutes or until juices begin to run clear, remove from grill.
- In a 3-4 QT casserole dish, make a layer of kraut on the bottom of the dish,about 1-11/2 inch deep. Put the chicken breast on top of the kraut.Add the rest of the kraut on top of the chicken breast. Depending on how much you like the taste of the thousand island dressing, spread it across the top layer of the kraut.Bake for 45-60 minutes covered.
- The last 10 minutes of cooking, layer the cheese on top of the thousand island dressing.Remove lid, return to oven. Bake until the swiss cheese starts to turn a little golden in color.Remove and let rest for 5-10 minutes. Serve hot.
BAKED CHICKEN REUBEN IN A CAST IRON SKILLET
I have been making baked chicken reubens like this for years, the cast iron skillet heats evenly and with all the moisture in the kraut along with the chicked it works to perfection. I used a 9 inch skillet (Grisswold) along with the cast iorn lid.

- Wash chicken well and pat dry. Sprinkle on the salt and pepper on each side of the chicken. In the cast iorn skillet with the oil, brown both sides of the chicken on medium heat. When browned on both sides, pour the kraut over the browned chicken. Add the thousand island dressing on top of the kraut.
- Spread the dressing across the kraut so it blended well. Place the swiss cheese on top of the kraut and bake at 325 for 1 hour or until desired doness. Sprinkle the fresh parsley on top of the cheese.
- Depending on your oven, it could take 45 minutes to be baked in the cast iorn skillet because of the even heat from the cast iron along with the cast iron lid. Serve hot! Goes great with mashed potatoes.

REUBEN STUFFED CHICKEN BREAST - A LIGHT RECIPE
As I am trying to uncover new recipes that are healthy, flavorful and dinner party worthy, I pieced a few things together to come up with this one. It turns out quite tasty and moist. Great for your family or for company. I made this with some swiss laughing cow wedges and thinly slices peppered dried sausage and the result was OUTSTANDING! I think I'll use the substitute from now on.

- Preheat oven to 375.
- Rinse sauerkraut to your taste.
- Cover chicken breasts in plastic wrap and pund pretty thin.
- Lay chicken breast flat.
- For each breast:.
- Spread Dijon mustard on one side (the side facing up) evenly.
- Add 2-3 pieces of ham, 1 - 2 pieces of cheese (Depending on the size of the breast - You want good ham and cheese coverage on the chicken.).
- Top with sauerkraut, evenly.
- Carefully roll each breast; secure with a toothpick if necessary and transfer to a baking dish.
- Lightly coat each breast with olive oil or olive oil spray.
- Salt & Pepper to taste.
- Bake for 45 minutes or until the chicken is cooked and juices run clear.
- To serve, let stand in baking dish for 5 minutes. Then, transfer to warm plates and top with some of the chicken juice from baking dish.
- Note: Even if sauerkraut is not your favorite, you may find if you rinse it very well (my personal preference), it takes on a really mild flavor in this dish and just gives it a little texture and saltiness.
