CHICKEN QUICHE REAL MEN LOVE
This recipe won 1st place in the RSC Lucky #13 contest. This quiche is more like a meat and vegetable pie with a cheese/egg custard holding it together. Because the chicken, onions and mushrooms are sauted to the point of carmelization the resulting flavors create a really tasty quiche. I hope you try it and that your family enjoys it as much as we did. This was so good the first time that I didn't make any changes and only needed to make it once, since no adjustments we necessary. My granddaughter who had never eaten any kind of quiche and was reluctant to try it, said after the first few bites, "OOOh, This is really good, I like this!" I hope you like it as well. This can easily be a main dish for dinner or for lunch. It is so full of meat and veggies that it is a meal in itself.

- Put the unbaked Pie crust in a 10 inch pie pan. Cover with plastic wrap and put aside.
- Place 4 Tablespoons of the butter in a hot skillet.
- Add the chopped chicken pieces and season with ½ teaspoon salt and ¼ teaspoon black pepper.
- Cook until golden brown. Remove meat from pan and set aside on several layers of paper towels.
- In the same skillet melt the other 4 Tablespoons of butter. Add the onions, the mushrooms,1/2 teaspoon of salt, and ¼ teaspoon of black pepper.
- Cook onions and mushrooms until carmelized, by cooking them until they are golden brown. Remove from pan and add to the chicken.
- Lightly partially cook the julliened carrots and the broccoli slaw in the skillet with any remaining drippings for about 2 minutes. Turn off heat.
- Add the drained spinach, chicken, onions and mushrooms into the skillet which already has the carrots and broccoli slaw in it.
- Add the remaining ½ teaspoon salt and the ¼ teaspoon black pepper. Gently toss the ingredients until the spinach is well mixed with the other ingredients.
- Cream the Laughing Cow Cheese in a medium sized bowl. Add the egg yolks and the milk and mix as much as possible. (If some of the cheese stays in pieces that will be okay since they will end up on the top anyway.
- Put the meat & vegetable combination into the pie crust lined pan.
- Gently pour in the milk, egg cheese mixture.
- Sprinkle the ½ cup of freshly grated parmesean cheese on top.
- Bake 375 degrees for 40-45 minutes.
MAKE-AHEAD CHICKEN QUICHE
This was one of the early recipes I developed in my first kitchen. I was about 17 or 18, right out of high school when I made this using up some left over fried chicken. This was1988 or 89 and it is still one of my very favorites. If you use a rotisserie chicken from your deli, you'll get about four cups of chicken, enough for two quiches. One for you and one for a neighbor or friend.

- Pre-heat oven to 400.
- Mix chicken, bell pepper, onion and 1/3 the cheese together. Sprinkle into pie crust.
- Whisk eggs, milk,sour cream and salt and pepper together. Pour over the chicken mixture in the pie crust.
- Top with reserved cheese.
- Bake for 30 minutes on rimmed baking sheet.
- Reduce oven temperature to 350 for 20 minutes.
- Total cooking time 50 minutes.
- Let rest for 30 minutes before serving or refrigerate and reheat.
- Quiche can be frozen prior to baking or after baking; baking first may make the quiche a little easier to maneuver in the freezer. To freeze quiche before baking: Place quiche on a tray or baking pan and freeze until firm. Wrap with freezer paper or heavy-duty (or double thickness) aluminium foil or slide quiche into a freezer bag. Seal, label and freeze for up to one month. When ready to serve, remove from freezer. Do not thaw. Unwrap and bake as usual, adding 10 to 20 minutes extra time. To freeze quiche after baking: Proceed as above. Do not thaw before reheating. Remove wrap and bake in a preheated 350°F oven for about 25 minutes, or until heated through.

- Preheat oven to 325 degree
- Place onions in saucepan, top with chicken and basil and cover with white wine, lemon juice, and chicken broth
- Bring to boil, reduce heat and poach 12 minutes
- Remove chicken from pan, allow to cool and dice
- Beat eggs and milk together
- Spread chicken, cheese, msuhrooms, and spinach in pie shell
- Pour egg mixture into pie shell
- Bake for 20 minutes (until top is golden and center is set)
SPINACH QUICHE WITH CHICKEN
Quiche works very well. Add seasonings of your family's choice for more variety. Use ham, bacon, or whatever protein. This quiche needs flavor boosters, so use your spice cabinet. Easily make this a Tex-Mex dish with diced green chiles and a touch of cumin. You could also add crumbled freshly cooked bacon to add more flavor. I served this with sliced avocado and tomatoes for a perfect light dinner.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie dish with cooking spray.

- Preheat oven to 400 degrees F (200 degrees C). Line a 9 inch pie plate with thawed pie crust. Keep in refrigerator until ready to fill.
- In medium frying pan, heat olive oil on medium-high. Add onion and green pepper. Cook three minutes, stirring frequently. Add flour and cook for two minutes, stirring frequently. - Put a rimmed baking sheet in the middle of the oven; preheat to 425˚ F. Spread the mustard on the bottom of the pie shell. Layer with the chicken, ham, scallion whites and cheese. Whisk the half-and-half, eggs, 1/2 teaspoon salt and a few grinds of pepper in a small bowl; pour over the filling in the pie shell. Gently stir the top of the mixture to make sure the filling is covered; sprinkle with the scallion greens.
- Carefully set the pie pan on the hot baking sheet. Bake until the filling is set, about 30 minutes.
