Chicken and Garlic-Herb Potato Shepherds Pie

Number Of Ingredients 30

2 1/2 to 3 pounds Idaho potatoes
peeled and cut into chunks
Salt
1 tablespoon EVOO Extra Virgin Olive Oil
plus more for drizzling
2 pounds chicken breast
cut into half-inch dice
Black pepper
1 cup store-bought shredded carrots
chopped
1 cup frozen peas
1 small bunch scallions
thinly sliced
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup white wine
1 1/2 cups chicken stock
1 tablespoon Dijon mustard
6 sprigs of tarragon
leaves removed and chopped
about 2 tablespoons
1 5-ounce package of soft garlic and herb cheese
such as Boursin
2 egg yolks
1/4 cup (a handful) flat-leaf parsley
chopped
1/4 cup milk or chicken stock
enough to loosen up the potatoes
Paprika
for garnish

Steps:

  • Preheat the broiler, place an oven rack at the center of the oven
  • Place the potatoes in a medium pot and cover with cold water
  • Bring to a boil, salt the water and cook until tender, 12-15 minutes
  • While the potatoes are cooking, place a large skillet over medium-high heat with about 1 tablespoon of EVOO
  • Add the chicken, season it with salt and pepper and cook until golden brown and cooked through, 6-7 minutes
  • Remove the chicken from the pan to a casserole dish, add a drizzle of EVOO to the pan, then add the carrots, peas, and scallions
  • Season the veggies with salt and pepper and cook until tender, about 2 minutes
  • Scoot the vegetables over to one side and melt in the butter
  • Sprinkle the flour over the butter and cook for about 1 minute, stirring
  • Whisk in the white wine, cook 1 minute, then whisk in the chicken stock and cook for 1 minute to thicken
  • Season the sauce with mustard and tarragon then salt and pepper to taste
  • Pour the sauce and vegetables over the chicken in the casserole and combine
  • Drain the potatoes and return them to the hot pot, then mash with the herb cheese, egg yolks, parsley, milk or chicken stock, salt and pepper
  • Spread the potatoes over the chicken in the casserole dish
  • Put the dish under your broiler until the top is golden brown, 3-5 minutes
  • Garnish with paprika

This a fabulous one-pan meal. Serve with a salad and French bread. Just use left over fried, baked, or grilled chicken. You may substitute your family's favorite vegetable in place of corn. Potatoes and roasted garlic can be done 1 to 2 days ahead. If preference is to use dried spices, then use 1/2 teaspoon each of thyme and rosemary. Use any cheese of your choice.

8 potatoes
¼ cup butter
⅔ cup milk
1 medium head roasted garlic
1 pound cooked, shredded chicken breast meat
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
½ cup red bell pepper, diced
1 cup fresh corn kernels
1 cup shredded Cheddar cheese

Steps:

  • To prepare roasted garlic: Cut head of garlic in half and drizzle with olive oil. Wrap in foil and bake at 400 degrees F (200 degrees C) for 45 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Peel, chop and boil potatoes until tender. Drain, then mash potatoes. Add butter, milk and roasted garlic and mix in. Set aside.
  • Arrange chicken evenly in the bottom of a casserole dish, then sprinkle with spices, then layer peppers, corn and all but 1/4 cup cheese. Spread mashed potatoes on top, sealing everything in. Sprinkle with remaining cheese.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until brown around edges.

2 boneless skinless chicken breast halves (6 ounces each), cubed
4 tablespoons butter, divided
1 pouch (3.6 ounces) roasted garlic mashed potatoes
3 tablespoons all-purpose flour
2-1/4 cups 2% milk
1 teaspoon rubbed sage
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Swiss cheese, divided
1 cup fresh sugar snap peas, trimmed and chopped
1/2 cup frozen corn

Steps:

  • In a small skillet, cook chicken in 1 tablespoon butter until no longer pink; set aside and keep warm. Prepare mashed potatoes according to package directions. , Meanwhile, in a large saucepan, melt remaining butter over medium heat. Whisk in flour until smooth. Gradually add milk; stir in seasonings. Bring to a boil. Reduce heat; cook and stir for 1-2 minutes or thickened. , Remove from the heat. Stir in 3/4 cup Swiss cheese until melted. Add peas, corn and chicken. 2 left over chicken breasts, that were seasoned, grilled, and diced
2 cups left over mashed potatoes
1/2 cup corn
1/2 cup frozen peas
1/2 cup cooked asparagus, cut into 1/4 inch pieces
1/2 fresh red pepper, diced
1 (11 ounce) can cream of chicken soup
1 tablespoon curry powder
2 tablespoons butter
grated cheese
paprika

Steps:

  • Spray a pie pan with pam.
  • Layer chicken in bottom of pan.
  • Follow with all the veggies except the mashed potatoes.
  • Mix curry with soup and spread over vegies.
  • Spread potatoes over veggies to seal in all.
  • Add dabs of butter over potatoes sprinkle with paprika and cheese.
  • Bake 25 minutes 350 degrees.
  • Slice, serve, and enjoy!

12 ounces plain flour, plus
extra plain flour, for dusting
1/4 teaspoon salt
6 ounces butter, diced,plus
extra butter, for greasing
6 tablespoons cold water (about)
milk, for brushing on top
250 ml chicken stock (9 fl. oz)
25 ounces boneless skinless chicken breasts, cut into bite sized chunks
3 1/2 ounces peeled potatoes, roughly chopped
1 egg, beaten
2 3/4 ounces toasted hazelnuts, ground
2 3/4 ounces cheddar cheese, grated
2 spring onions, chopped
1 tablespoon chopped fresh sage
salt & freshly ground black pepper

Steps:

  • sift together the flour and salt into a bowl.
  • Rub in the butter until the mixture resembles breadcrumbs.
  • Gradually stir in enough of the cold water to make a pliable dough.
  • Knead lightly, cover with plastic wrap and refrigerate for 1 hour.
  • Meanwhile, to make filling, bring the stock to a boil in a saucepan, reduce heat and add the chicken and potatoes and simmer for 30 minutes.
  • Remove from the heat, cool for 25 minutes, then drain off the liquid and transfer the chicken and potatoes to a bowl.
  • Stir in the remaining ingredients.
  • Preheat oven to 375*F.
  • Grease a 9 inch pie tin.
  • Remove the dough from the fridge and on a floured work surface, roll out half the pastry to a thickness of 1/4 inch and use to line the tin.
  • Spoon in the filling.
  • Roll out the remaining pastry and use to make a lid.
  • Brush the edge of the bottom crust with water and cover with the lid, trimming the edges.
  • Cut two slits in the top to vent.
  • Add decorative shapes made from the dough trimmings if you wish.
  • Brush with milk and bake for 45 minutes.
  • Serve with a selection of freshly cooked vegetables.
