1 1/2 cups Immaculate Baking Co.™ Organic All-Purpose Flour
2 teaspoons baking powder
1 teaspoon sea salt
1/4 cup cold butter, cut into pieces
1/2 cup shredded Cheddar cheese (2 oz)
3/4 cup cold buttermilk
1/2 cup butter
1 package (8 oz) fresh cremini mushrooms, quartered
1/2 cup chopped onion
1 teaspoon finely chopped garlic
1/2 cup Immaculate Baking Co.™ organic all-purpose flour
2 1/2 cups chicken broth
3 small red potatoes, (about 1/2 lb) unpeeled, coarsely chopped (2 cups)
1/2 cup coarsely chopped carrots
3 cups chopped cooked chicken
1 1/4 teaspoons sea salt
1/2 teaspoon black pepper
1/2 cup frozen baby sweet peas
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 400°F. Grease 13x9-inch (3-quart) glass baking dish with butter, or spray with cooking spray.
  • In medium bowl, stir together 1 1/2 cups flour, the baking powder and 1 teaspoon salt. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in cheese and buttermilk just until blended; set aside.
  • In 4-quart saucepan, melt 1/4 cup of the butter over medium-high heat until sizzling. Add mushrooms; cook 4 to 5 minutes or until tender. Remove mushrooms to small bowl; reserve.
  • Return saucepan to heat; melt remaining 1/4 cup butter over medium-high heat. Add onion and garlic; cook 2 to 3 minutes or until tender. Add 1/2 cup flour; cook and stir until flour is golden brown.
  • Slowly beat in broth with whisk. Add potatoes and carrots; cook 2 to 3 minutes or until thickened.
  • Reduce heat to medium; stir in chicken, 1 1/2 teaspoons salt and the pepper. Cook 4 to 5 minutes, stirring occasionally, until warmed through and potatoes are slightly tender. Stir in peas, cream and reserved mushrooms.
  • Pour chicken mixture into baking dish. Immediately drop biscuit dough by 12 heaping spoonfuls (about 1/4-cup each) onto hot mixture. Bake 20 to 25 minutes or until biscuits are golden brown. Cool 10 minutes before serving.

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, mix chicken and sauce.
  • In 12-inch skillet, heat oil over medium heat. Add onion, celery and carrot; cook 6 to 7 minutes or until carrot is tender. Stir in chicken mixture and broth. Add cream cheese cubes and 1 1/4 cups of the Cheddar cheese; stir until completely melted. Pour mixture into baking dish.

2 cups flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon kosher salt
6 tablespoons very cold Land O Lakes® Salted Butter
3/4 cup whole milk
4 tablespoons Land O Lakes® Salted Butter
a few sprigs of thyme
2 shallots
4 carrots, peeled and sliced thinly (about 2 cups)
4 celery stalks, chopped (about 1 cup)
1/4 cup flour
splash of dry white wine (optional)
2 cups whole milk
1 1/2 cups chicken broth
4 cups shredded chicken (I use a rotisserie chicken)
2 cups frozen peas
1 teaspoon salt
squeeze of lemon juice, black pepper, etc.

Steps:

  • Prep: Preheat the oven to 425 degrees.
  • Biscuits: Mix flour, baking powder, sugar, and salt together. Grate butter and work it into the dry mix with your hands. Add milk and stir gently with a fork to bring it all together. Turn dough out onto a clean counter. Fold it over a few times to get it into a 1-2 inch thick layer. Cut 6-10 biscuits from it using a biscuit cutter, rim of a drinking glass, or... just a knife. Let's not be too precious here.
  • Filling: Melt the butter in a large oven-safe Dutch oven or pan. Add the thyme and shallots; sauté for 5 minutes. Add the carrots and celery; sauté for 5 minutes. Add the flour; sauté for 1-2 minutes. Add a splash of wine; let it sizzle out. Slowly and gradually, add the milk and the chicken broth, stirring after each addition. The mixture should resemble a thick, creamy soup. Add chicken and peas. Season with salt, pepper, and lemon juice.
  • Bake: Arrange biscuits on top of filling. Brush biscuits with milk or butter for extra browning. Bake for 15-20 minutes, until hot, bubbly, and biscuits are cooked through.

5 boneless skinless chicken breasts, rough-cut
1/2 small leak, diced
1 small yellow onion, diced
1 cup baby carrots cut into circles
4 garlic cloves, minced
3 1/2 cups water
2 bay leaves
2 sprigs of thyme
6 bouillon cubes
1/2 Stick of butter
2 tbsp olive oil
2 cups Bisque Quick
3/4 c milk
1 tbsp chopped parsley
Salt and pepper

Steps:

  • In a large pot, heat the butter and oil. Sauté the vegetables and season with salt and pepper. When they are aromatic and glossy remove from the pot. Salt and pepper the chicken. Add a tablespoon of olive oil and sear the chicken for 8 to 10 minutes. Once the chicken is lightly browned, add the vegetables back to the pot as well as water, bouillon cubes, thyme and bay leaf. Bring the mixture to a boil and then simmer for 15-20 minutes. Pour the chicken mixture into a deep baking dish and set aside until the bisquick mixture is ready. Mix the bisquick and milk to create a very loose dough mixture. Add the parsley to the dough mixture and spoon over the top of the baking dish and chicken mixture. Make an egg wash by mixing water and egg and brush over the top of the bisquick biscuits. Bake for 20-25 minutes at 325 degrees. Serve chicken pot pie in a large soup bowl and top with leftover parsley leaves for garnish.

This is another easy and inexpensive meal. This started off as a simple receipe I found and ended with alot of my own adjustments. If you reheat the leftovers later, the consistency does get thicker.

1 lb chicken breast, cut into bite-size pieces
1 cup frozen carrots
1 cup frozen peas
1 teaspoon salt
2 tablespoons pepper
6 biscuits (medium size)
12 ounces cream of chicken soup
1 cup cheddar cheese
1/2 cup celery
1/2 cup water

Steps:

  • Brown the chicken. Cook the biscuits according to the directions on them.
  • Add all the ingredients except for the biscuits and cheese. Add 1/2 C water. Stir until blended.
  • Cover and simmer 15 minutes or until everything seems thick enough to your preferred taste. Remove from heat.
  • Add the cheese and cover for 5 minutes or until the cheese is melted some. Stir.
  • Serve on warm biscuits.

1 cup cooked chicken breast, diced (any leftover chicken works)
1 (10 1/2 ounce) can reduced-fat cream of chicken soup
2/3 cup shredded low-fat cheddar cheese
1 1/2 c. frozen veggies, thawed (I used 1 c. corn, peas and carrots & 1/2 c. broccoli)
1 teaspoon dried parsley flakes
1 teaspoon of minced onion
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Cook the chicken however you like, then cut into small pieces Separate biscuits and place each biscuit in a cup of a lightly greased 12-hole muffin pan, pressing dough up sides to edge of cup. In a medium bowl, combine chicken, chicken soup, veggies, cheddar cheese, parsley flakes, and black pepper. Mix well to combine. Evenly spoon chicken mixture into prepared biscuit cups. Bake for 12 to 15 minutes or until golden brown. Remove from oven. Place muffin pan on a wire rack and let set for 2-3 minutes. Serve at once.

1/3 cup butter
1/3 cup onion, diced
1/4 cup sliced celery
1/2 cup sliced carrots
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1/3 cup flour
1 1/4 cup chicken broth
3/4 cup milk
1/2 pound cooked chicken (a rotisserie chicken is great for this!)
1/2 cup corn
1/2 can diced potatoes
2 packages Pillsbury biscuits (any variety)
1/4 cup melted butter
1 Tablespoon Poppy Seeds
1/2 cup frozen peas (optional)
1/2 cup green beans (optional)

Steps:

  • In a saucepan over medium heat, combine butter, onions, celery and carrots and cook until soft and translucent about 7 - 10 minutes. Add salt, pepper & celery seed. Mix until incorporated. Add flour and whisk well. This should look like a thick paste. While whisking continually, slowly add chicken broth. Thick paste will slowly thin out. Continue whisking and add milk. Add chicken, corn & potatoes (add peas & green beans if using instead of corn) Mix well. Preheat oven to 325*F Open package of biscuits. Take 1 biscuit and using your fingers, open it up and divide it as you would a hot biscuit you are about to butter. Take 1/2 and stretch it out and place into a greased muffin tin, creating a cup. Place 1/4 cup or less of filling and pour into biscuit cup. Take second half of biscuit and stretch out a little bit and put on top of filling, tucking edges inside muffin tin pocket. Continue until all biscuits are used. Brush melted butter onto top of biscuit and sprinkle with poppy seeds. Bake for 15 minutes or until biscuits are fully cooked and tops are golden. Serve immediately. Any remaining chicken pot pie filling can be frozen or eaten as a chowder the next day for lunch (my favorite way to eat it leftover!)
