A variation on Chicken Cordon Bleu or Chicken Parmesan, baked so lower in fat. Use your favorite jarred or canned sauce, or make your own. Serve with your favorite cooked pasta.

1 egg
water
1/2 cup dry breadcrumbs
1 tablespoon dried basil
2 boneless skinless chicken breasts
2 slices prosciutto ham (sliced thin)
2 pieces asiago cheese, about 1 inch square and 2 inches long
nonstick cooking spray
pasta sauce, heated
asiago cheese, for garnish

Steps:

  • Preheat oven to 325ºF. Coat an 8 x 8 inch baking dish with nonstick cooking spray.
  • In a shallow bowl, beat egg with just enough water to thin it a little. Set aside.
  • Place bread crumbs in another shallow bowl, and stir in dried basil. Set aside.
  • Place 1 chicken breast between two sheets of plastic wrap and pound with a mallet until about 1/4 inch thick, being careful not to pound holes in chicken; repeat with 2nd breast.
  • Remove plastic wrap and place 1 slice of ham on each breast.
  • Place one piece of cheese on the narrow end of each breast. Roll breast up jelly-roll fashion, and secure ends with toothpicks.
  • Dip breast in egg mixture and coat all sides. Roll in bread crumbs until well coated. Repeat with 2nd breast.
  • Place in baking dish and LIGHTLY spray with cooking spray (or an oil mister). This will help coating brown.
  • Bake for 30-35 minutes, until chicken is cooked through.
  • Remove toothpicks and place on plates. Top with some heated pasta sauce and some shredded cheese to garnish; serve.

2 1/2 cups Gold Medal™ all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter
1 cup whipping cream
3/4 cup finely chopped fresh pear
1/2 cup grated Asiago cheese
1 teaspoon chopped fresh rosemary leaves

Steps:

  • Heat oven to 450°F. Lightly spray cookie sheet with cooking spray.
  • In large bowl, mix flour, baking powder and salt. Cut in butter, using pastry blender or fork, until mixture is crumbly and looks like small peas. Freeze 5 minutes. Add 3/4 cup plus 2 tablespoons of the whipping cream, the pear, cheese and rosemary; stir just until moistened.
  • On cookie sheet, pat dough with floured hands into 7-inch round (mixture will be crumbly). Cut round into 8 wedges, but do not separate. Brush dough with remaining 2 tablespoons whipping cream.
  • Bake 13 to 15 minutes or until golden. Carefully separate wedges; serve warm.

½ cup grated Asiago cheese
½ cup light mayonnaise
¼ cup low-fat plain Greek yogurt
¼ cup dry white wine
1 ½ teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch ground nutmeg
freshly ground black pepper to taste
1 tablespoon aged balsamic vinegar, or to taste
2 tablespoons grated Asiago cheese, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

1/2 pkg puff pastry sheet, thawed
1 medium red pear, halved, cored and cut into thin slices
2 c cooked rotisserie chicken ,cut into small strips
2 Tbsp balsamic vinegar
1 c shredded asiago cheese (4 oz.)

Steps:

  • 1. Heat oven to 400^. Unfold the pastry sheet on a baking sheet.
  • 2. Arrange the pear slices on the pastry to within 1/4 inch of the edge. Arrange the chicken over the pears and brush with the vinegar. Sprinkle with the cheese.
  • 3. Bake for 25 minutes or until the crust is golden brown. Carefully remove the tart from the baking sheet to a wire rack and let cool for 10 before serving.

1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1 medium red onion, halved and thinly sliced
2 medium pears, thinly sliced

1/2 cup balsamic vinaigrette
1/2 teaspoon dried thyme

CHICKEN ASIAGO PANINI

This is a really good sandwich because not only is it flavorful, but it's easy to whip together! If you don't have a Panini grill you can use a stovetop griddle or a skillet.

1 large focaccia bread, asiago
4 Tbsp classico traditional basil pesto sauce & spread
8-12 slice fresh cooked chicken or turkey breast, thinly sliced
1 red or green bell pepper, thinly sliced
red onion, thinly sliced
cheddar & monterey jack cheese, shredded

Steps:

  • 1. Slice asiago focaccia bread horizontally (through the bread), keep bread in the round until after cooking (that's when you cut into 4 individual sandwiches).
  • 2. Spread each inside of the bread with 2 tbls. Classico pesto sauce.
  • 3. Divide chicken or turkey evenly on bottom of focaccia bread slice, add shredded cheese, red bell pepper and then the onion slices. Put top of bread on to complete the sandwich.
  • 4. In a preheated panani grill, place the sandwich, in the bottom of the grill pan and place grill press on top, press sandwich down. Grill 7 minutes until nicely browned grill marks are formed. Turn over and grill top asiago side for 4-5 minutes making sure not to burn. Slice into 4 servings and serve warm.
