LEMON HERB CHICKEN PASTA WITH GREEN PEAS, SNAP PEAS AND SPINACH



Lemon Herb Chicken Pasta with Green Peas, Snap Peas and Spinach image

Kosher salt and freshly ground black pepper
1 pound vegetable penne pasta
4 boneless skinless chicken breasts
5 tablespoons olive oil
3 cloves garlic, finely chopped
1 large shallot, finely chopped
1/2 cup freshly squeezed lemon juice
1 1/2 cups trimmed and sliced sugar snap peas
One 10-ounce bag frozen peas
3 cups baby spinach
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley, plus additional leaves for serving

Steps:

  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.
  • Sprinkle the chicken with salt and pepper. Add 2 tablespoons olive oil to a large pan over medium-high heat. Cook the chicken until the internal temperature reaches 160 degrees F, about 5 minutes per side. Remove the chicken and slice it into strips.
  • Add 1 tablespoon olive oil to the pan. Add the garlic and shallot and sprinkle with salt and pepper. Cook until fragrant, 1 minute. Add the lemon juice and sugar snap peas and cook, 2 minutes. Add the reserved pasta water and the frozen peas. Cook until the peas are just cooked through, 2 minutes more.
  • Add the cooked pasta, spinach, sliced chicken, chopped basil, chopped parsley and the remaining 2 tablespoons olive oil. Toss all the ingredients together to coat, season with additional salt and pepper and garnish with parsley leaves. Serve immediately.

4 boneless skinless chicken breast halves, cut into 1-inch pieces
2 tablespoons vegetable oil
1/2 cup chopped onion
1 medium green or sweet red pepper, chopped
1 garlic clove, minced
2 cups frozen peas
1 cup chicken broth
1 cup half-and-half cream
2 teaspoons Italian seasoning
Salt to taste
8 ounces pasta, cooked and drained
1/2 cup grated Parmesan cheese
1 cup coarsely chopped walnuts, toasted

Steps:

  • In a 5-qt. Dutch oven, saute chicken in oil over medium heat until browned. Add onion, pepper and garlic; saute until tender. Add peas, broth, cream, Italian seasoning and salt; bring to a boil. Reduce heat; simmer for 10 minutes. Add pasta and Parmesan cheese; simmer for 5 minutes. Garnish with walnuts.

12 ounces fettuccine pasta
1 cup reserved Lemon Sauce, see Roasted Chicken with Lemon Sauce
1 package (10 ounces) frozen peas, thawed
1 reserved cooked chicken half, skin removed, meat shredded (1 1/2 cups)
1 tablespoon cold butter
1/3 cup grated Asiago or Parmesan cheese, plus more for garnish, if desired

Steps:

  • In a large pot of boiling salted water, cook fettuccine until al dente, according to package instructions. Drain; set aside.
  • Add lemon sauce to pot. Bring to a boil; reduce to a simmer. Add peas and chicken; cook until warmed through, 2 to 3 minutes. Stir in butter until incorporated.
  • Remove from heat. Add pasta and cheese; season with salt and pepper. Toss to combine. Garnish with more cheese, if desired.

1 (8 ounce) package seashell pasta
1 tablespoon butter
2 tablespoons chopped spring onions
1 (12 ounce) package Quorn™ Chicken-Style Recipe Tenders
1 cup sweet peas
3 tablespoons pesto sauce, or more to taste

Steps:

  • Place the vegetable broth into a saucepan, and bring to a boil. Stir in the pasta, and boil over medium-low heat until tender, about 8 minutes. Drain pasta, and reserve broth.
  • Heat the butter in a skillet over medium heat, and stir in half the spring onions; cook and stir until the onions begin to soften, 2 to 3 minutes, then add the vegetarian chicken-style pieces. Cook until vegetarian pieces are browned, about 3 minutes per side, then stir in remaining onion and green peas. Pour 1/2 cup of reserved vegetable broth into the skillet. This came my way via an e-mail recipe share. It was originally a dinner cooked in the oven at 350 for an hour but I made it in the crockpot with wonderful results. I tweaked the cheese to suit my tastes so you can reduce it if you're not a cheese lover.

1 (16 ounce) jar alfredo sauce
1 lb frozen peas (thawed)
2 cups mozzarella cheese (shredded)
6 -8 cups cooked pasta (buttered)

  • Cut chicken into strips and place into greased crockpot.
  • Combine alfredo sauce, peas and cheese and mix well.
  • Spoon peas mix over chicken.
  • Cover and cook on low for 5-6 hours.

The combination of jerk flavourings with creamy pasta seems strange, but it's actually delicious! You can adjust the amount of spice to suit your taste. It is very quick to prepare.

175 g dried spaghetti or 175 g linguine
1 boneless skinless chicken breast, cut into 1-inch cubes
2 tablespoons olive oil
2 garlic cloves, minced
1/3 cup chicken broth, homemade or low-sodium
1/4 cup 35% cream
2 tablespoons cream cheese
2 tablespoons bottled jerk sauce (Or jerk marinade or seasoning -- I like Walkerswood Jerk Seasoning and PC 'memories' jerk marinade, )
1/2 cup frozen sweet peas
2 cups raw spinach, washed and trimmed
1/8 cup freshly grated parmesan cheese (optional)

Steps:

  • Cook the pasta in lots of salted water.
  • While the pasta is cooking, make the sauce:.
  • Heat 1 Tbsp oil in a large skillet over med-high heat.
  • Sprinkle the chicken cubes with salt and pepper, then saute them in the oil until browned on the outside. Take the pan off the heat and remove the chicken. Don't worry if it is not cooked all the way through.
  • Add 1 Tbsp to the pan and turn the heat to med-low.
  • Add the garlic and cook for 30 sec -- do not allow it to brown.
  • Add the chicken broth, the cream cheese, the cream and the jerk sauce. Simmer for about 5 minutes, until the cream cheese melts and the sauce thickens slightly. Taste, and add more jerk sauce if you want more spice.
  • Add the chicken, and simmer for 1 more minute, until all chicken is cooked through.
  • Add spinach and frozen peas, and cook for 30 seconds to 1 minute, until peas are warm.
  • By now the pasta should be cooked. Do not drain the pasta. Rather, use tongs to remove it from the water and put it, still dripping, into the sauce. (The drips of pasta water are starchy and help thicken the sauce.).
  • Turn off the heat under the sauce.
  • Toss, adding salt and pepper to taste. If using parmesan, add it now, and toss.
  • Serve!

My wife and I invented this dish while we were dating and today, our kids LOVE it. It's a simple dish that's easy to prepare and VERY tasty. For the Cajun Seasoning, we use Chef Paul Prudhomme's Poultry Magic® but your favorite cajun seasoning can be substituted.

1 -1 1/2 lb chicken breast, cut into small pieces
5 1/2 ounces of dried spaghetti or 5 1/2 ounces angel hair pasta
1 1/2 cups fresh peas or 1 1/2 cups frozen peas
1/3 cup butter
4 tablespoons cajun seasoning

Steps:

  • Cook pasta according to manufacturer's package directions.
  • After pasta is cooked - Slice off a piece of butter and put into a hot skillet.
  • Add chicken to the skillet and cook chicken until golden brown, stirring frequently.
  • Turn the heat up to high, add cooked pasta, peas and remaining butter.
  • As soon as the butter is melted, add the Cajun Seasoning and stir to distribute completely.
  • Cook for another minute or two and serve.

Number Of Ingredients 12

1 pound boneless skinless chicken breasts sliced 3/4 inch
2 tablespoons unsalted butter
1 shallot finedly diced
2 cloves garlic minced
1 tablespoons flour
2 cups chicken broth
1.5 cups half and half
8 ounces linguine broken in half
1 1/4 cups peas cooked
1 basil bunch chiffonade
1 lemon juice and zest
1/2 cup parm cheese grated

Steps:

  • 1. melt 1 T butter in dutch oven over med high heat. Add chicken and season gnerously with salt and pepper. Cook until golden brown on all sides about 4-6 min. Remove chicken to a plate.
  • 2. Add remaining T of butter. Once melted, add shallot and season with salt and pepper. Cook until softened about 2 min Add garlice and cook about 1 min. Add in flour and cook, stirring for another minute. Add in chicken broth and half and half. Whisk to combine. Add back inthe chiciken along with the pasta dna a large sprig of basil. Bring to a slow boil, stirring occasionally, then immediately reduce toa simmer. Cover and cook for 10-15 min. Remove basil and discard.
  • 3. Add in peas, lemon juice and zest. Cook for an additinal minute. Stir in parm and chopped basil. Taste and adjust for seasoning with salt and pepper.

1/4 tsp. Pepper
1/2 lb Bacon
3/4 lb Chicken breasts, boneless
1 cup Peas, frozen
2 tbs. Parmesan cheese

Steps:

  • Cook pasta. Meanwhile, cut bacon into 1'' pieces. Cut chicken into 1/2 wide strips. Fry bacon until crisp. Remove and drain. Pour off all but 3 Tablespoons of fat. Fry chicken in fat over Medium-High heat until brown. Add peas, bacon, salt and pepper. Cook about 1 minute. Remove from heat. Add drained pasta and grated parmesan cheese. Toss and serve.
