SAUTEED CHICKEN, ZUCCHINI, ARTICHOKES AND TOMATOES OVER PASTA

This is a relatively simple dish to make and incredibly flavorful. My family and I eat a good deal of pasta, so I'm always looking for new ways of preparing it. I thought up this recipe while having a craving for marinated artichokes.

1 lb chicken, cut into bite size chunks
5 minced garlic cloves
2 small zucchini, cut into chunks (about the same size as the chicken)
1 (6 1/2 ounce) jar marinated artichoke hearts, drained and halved
1 (14 1/2 ounce) can diced tomatoes, drained (or you can use a couple of fresh, chopped and seeded)
1 1/2 cups dry white wine (I used Chardonnay)
2 tablespoons dried oregano
2 teaspoons salt and pepper
1/4 cup olive oil, divided

Steps:

  • In large skillet, heat one TBSP of olive oil over medium-high heat till pan is HOT.
  • Add chicken. While it's searing, sprinkle the chicken with oregano, salt and pepper.
  • When chicken is browned on all sides, remove it from the pan and add another TBSP of olive oil. When oil is heated, saute the zucchini until soft and lightly browned. Remove from pan.
  • Add another tablespoon of olive oil and add the garlic. When the garlic becomes fragrant, deglaze the pan with the white wine. Let this reduce by half.
  • Add the chicken back into the pan. Cook until chicken is almost completely cooked, then add the zucchini and artichokes and tomatoes. Heat through.
  • Finish with a drizzle of olive oil and one tablespoon of lemon juice. Serve over spaghetti with plenty of parmesan cheese.

But be assured this recipe is perfect for just two people

1 lb boneless skinless chicken breast
1 teaspoon bottled garlic (minced)
1 teaspoon onion powder
1/2 teaspoon sea salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
8 ounces frozen broccoli florets
8 ounces heavy whipping cream
3 tablespoons margarine
1/2 teaspoon sea salt
fresh ground black pepper
1/2 cup parmesan cheese (good quality shredded cheese)
1 egg (Separated)
1 teaspoon bottled garlic (minced)
8 ounces angel hair pasta

Steps:

  • Defrost baby broccoli florets.
  • Cut chicken tenders into bite sized pieces about 1/2 - 1 inch long.
  • Heat extra virgin olive oil in large skillet.
  • Add minced garlic, onion powder, 1/2 tsp sea salt, 4 grinds fresh ground black pepper and chicken pieces.
  • Cook chicken until no longer pink stirring and turning chicken constantly. About 10 - 15 minutes depending on how big you cut the chicken.
  • Once chicken is done add baby broccoli florets and heat through.
  • Remove chicken and broccoli from pan and place in large glass bowl and cover with foil to keep warm.
  • Boil salted water in large sauce pan and make Angel Hair pasta to box specifications.
  • Rinse pasta in cold water (so it doesn't stick together while making sauce) then drain well. Cover sauce pan and sit aside while making sauce.
  • Making Alfredo sauce.
  • Separate egg putting yolk in small dish.
  • Add heavy whipping cream stirring constantly making sure it doesn't scorch.
  • Stir in 1/2 tsp sea salt, 1 tsp minced garlic and 4 grinds fresh ground black pepper and 1/2 c shredded Parmesan cheese (use quality cheese).
  • Stir constantly until cheese is melted between 10-15 minutes.
  • Temper egg yolk by adding small amount of hot liquid cheese/cream mixture in dish with the egg yolk stirring constantly until well incorporated.
  • Slowly add yolk mixture into sauce pan containing the cheese/cream mixture stirring constantly.
  • Simmer over medium low heat for 3-5 minutes until it reaches desired consistency. Don't worry it will thicken up quickly while simmering.
  • Add chicken and broccoli and mix well until heated through.
  • Place equal amounts of pasta in 2 bowls and top each with Alfredo Chicken and Broccoli sauce.

This is a quick and easy dish to make. Now, if you have time - marinating the chicken ahead of time in the pesto will make this even better. But if not, you can make this without the marinating process. You can also make your own pesto, however, a good quality store bought brand will work just fine for this. The chicken is simply dredged in pesto and then coated in breadcrumbs and Parmesan cheese for a nice crust. Served with a simple spinach pasta, which is tossed with tomatoes, white wine and fresh basil. Add a quick side salad for a perfect weeknight dinner.

1 lb spinach pasta (you can really use any of your favorite pastas, but the spinach is best for this)
2 (15 ounce) cans Italian tomatoes
1 small onion, diced (optional)
1 teaspoon garlic, minced
1/3 cup white wine
2 tablespoons fresh basil, chopped fine
1 teaspoon olive oil
salt
pepper
4 -6 boneless skinless chicken breasts (slightly pounded)
8 ounces pesto sauce (a good quality store bought pesto is fine, or home made if you want)
2 cups Italian breadcrumbs
1 cup parmesan cheese, grated
olive oil
parmesan cheese (optional)

Steps:

  • Chicken -- I don't like the chicken breasts too thin for this. A scallopini cut is too thin, but lately a few that I have purchased are so thick I had to pound them out a bit.
  • Marinate -- Now, if you have time, place the chicken and pesto in a large baggie and let it marinate, 30 minute and up to 4 hours. But not longer than 4 hours. If you do not have time, don't worry. It can be made right on the spot.
  • Tomato sauce -- I like to start the sauce first. I use a good Italian flavored tomato sauce, but use your favorite sauce. I also like to add a bit more onion and garlic to mine, but remember, you can really add anything you want to make it "Yours.".
  • In a small pot, add the olive oil and bring to medium heat. Then add the onion and garlic and cook 2-3 minutes. Deglaze with the wine and then add in the tomatoes and let simmer while you prepare the chicken. Before serving - after puree - if you add that step, add in the fresh basil.
  • Note: Depending on what type of tomatoes you use, you may need to puree them. I use my immersion blender or you can use a regular blender. The end result you want a fairly smooth sauce. I like a little texture, but I use big Italian tomatoes, so I like to puree mine a bit. If you use a fine diced tomatoes, you may not need to do that. It is your choice.
  • Chicken -- In a pie plate, or small dish, add the bread crumbs and parmesan cheese.
  • Now if you marinated the chicken in the pesto remove each chicken breast and lightly shake off any extra. Then dredge in the bread crumb and cheese mixture. If you didn't marinate your chicken, just add the pesto to a small bowl and dip each breast in the pesto, shake off any extra and dredge in the bread crumb and cheese mixture like above.
  • Pasta -- Cook according to package directions.
  • Pan Sear -- In a large skillet (I prefer a non-stick pan for this), heat up the olive oil of medium high heat. Add the chicken and cook on each side until golden brown. They only take approximately 5-10 minutes per side depending on the thickness of your chicken.
  • Pasta -- Drain the pasta well and toss in the tomato sauce and don't forget to add the fresh basil.
  • Serve -- Plate up the pasta and tomato sauce and then top with a chicken breast. You can garnish with extra parmesan if you want. Just add a salad and dinner. ENJOY!

3 boneless chicken breasts, cut into 2-inch pieces
3 zucchini, quartered and sliced
1 oz onion, diced
3 clove garlic, minced
olive oil
2 tsp Italian seasoning, or to taste
1 can(s) diced tomatoes, 14 oz.
salt and pepper, to taste
1/2 lb angel hair pasta
1 jar(s) pesto sauce, 8 oz.
grated Parmesan cheese

Steps:

  • 1. Put a small amount of olive oil in a large frying pan. Heat pan to medium-high and add chicken. Saute until almost done, 5 to 10 minutes.
  • 2. Add onion and zucchini and cook for 3 to 5 minutes.
  • 3. Add garlic and cook for 1 more minute.
  • 4. Add tomatoes with liquid and Italian seasoning. Cook for about 5 minutes.
  • 5. Taste. Add salt and pepper if needed.
  • 6. While chicken mixture is cooking, bring 8 cups of salted water to a boil.
  • 7. Add pasta and cook according to package directions (usually 7 to 9 minutes).
  • 8. When done, drain and put in a large bowl. Add pesto.
  • 9. Toss.
  • 10. To serve, put pasta on plates and spoon chicken mixture over top.
  • 11. Grate fresh Parmesan cheese over top. Serve immediately.

8 slice bacon, crispy fried and crumbled
3 Tbsp butter
2 large chicken breast halves, skinless and boneless (cut in half to have 4 pieces)
1/2 c all purpose flour
1/2 c milk
1 large egg
1 c panko bread crumbs
1/4 c parmesan cheese, grated
3 Tbsp all purpose flour
(1-oz) packet ranch salad dressing & seasoning mix
2 c milk, 2% ( you can use whole milk if you prefer)
1 c cup shredded cheddar cheese
salt and pepper to taste
1 (16-oz) package penne pasta, cooked to directions
sliced green onions for garnish if desired

Steps:

  • 1. Fry bacon in a large skillet over medium heat until crispy; drain on paper towels. Reserve 2 tablespoons of bacon grease for frying chicken. NOTE: save the rest for another recipe! I never discard good bacon grease.
  • 2. I use extra-large skinless chicken breast (from SAM's) that I slice in half. Pound the chicken between two sheets of plastic wrap to about 1-inch thickness; coat chicken for frying.
  • 3. Using three cake pans or bowls; add flour to one; season with salt and pepper. Add egg and milk to 2nd pan and then panko and parmesan to third pan; seasoned with salt.
  • 4. Coat both sides of chicken with flour, coat both sides in the milk/egg mixture and then coat in panko.
  • 5. Add butter to the reserved bacon drippings, and then add chicken to the same skillet. Cook until golden browned and done; remove from pan and set aside. Let chicken rest for 5 minutes before cutting/slicing it. This will help keep the chicken moist and from becoming too dry.
  • 6. Add 3 tablespoons flour and ranch dressing mix into pan. Add additional butter if needed. Stir in the milk, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.
  • 7. Cook pasta according to package directions in boiling salted water; drain and return to pot. Stir in all but a little of the sauce and 1/2 of the bacon.
  • 8. Plate pasta, slice chicken to go on top; drizzle with remaining sauce and top with remaining bacon and sliced green onions if desired.
  • 9. Enjoy!

  • 1. Take ¼ cup of dried sun dried tomatoes and soften them up in some water per package directions. 2. Heat extra virgin olive oil in a large skillet over medium-high heat. Add flour, salt & pepper and whisk to make a nice roux. Don't let it get too brown. 3. Add chicken broth and lemon zest to the same skillet and cook for 2-3 minutes, or until the chicken broth has reduced a bit. Add artichoke hearts, capers, chili pepper flakes, (drained) sun-dried tomatoes, lemon juice and butter. 4. Cook pasta in salted boiling water until al dente. Drain and return to hot pot. 5. Continue to cook the sauce over medium high heat until the sauce has thickened and add the chicken - cook until chicken is warmed through. 6. This is a super easy, ultra tasty recipe that calls for white wine, a packet of Italian dressing mix, chicken and pasta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta. I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. I also used 2 freshly chopped roma tomatoes, rather than the sundried.

1/4 cup vegetable oil
1 onion, chopped

CHICKEN TENDERS
3 boneless, skinless chicken breasts, bite sized pieces
2 c all purpose flour
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp cajun seasoning
1/2 Tbsp salt
3 eggs beaten
1/2 c milk
vegetable or canola oil for frying
PASTA & SAUCE
2 Tbsp butter
1 box (12 oz.) bow tie pasta
1 small red onion, cut into thin strips
2 tsp minced garlic
1 can(s) (6 oz.) tomato paste
2 c alfredo sauce (jarred, mix, or homemade)
1 roasted red bell pepper, cut into thin strips
2 Tbsp white wine
cajun seasoning to taste
salt to taste
2 green onion, thinly sliced
1 c shaved parmesan
1/4 c fresh basil, coarsly chopped

Steps:

  • 1. Mix together flour, salt, and seasonings in a shallow bowl with wire wisk. In a separate bowl, wisk together milk and eggs until well blended.
  • 2. Coat a deep frying pan with about an inch and a half of oil. Heat over medium heat. When oil is hot, roll chicken in flour mixture, then dip in egg, then roll again in flour mixture. Fry in hot oil until golden brown. Repeat until all the chicken is done; set aside on an oven safe pan/plate and keep warm in the oven until pasta and sauce are done.
  • 3. Cook bow tie pasta according to package directions. While pasta is cooking start preparing sauce.
  • 4. To prepare sauce, heat butter over in a deep skillet over medium heat and add red onion, garlic to the pan. Saute until softened. Pour in alfredo sauce, tomato paste, butter and wine. Simmer over medium-low heat for Until well blended. Add Cajun seasoning. When pasta is done, drain and mix with sauce.
  • 5. To plate: Spoon pasta onto a plate or pasta bowl. Lay a few strips of chicken over the top. Sprinkle with sliced green onion, and shaved parmesan. Serve.

1 lb chicken breast, boneless and skinless
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1 (16 ounce) can tomatoes, chopped and drained
1 (8 ounce) can tomato sauce
2 tablespoons splenda no calorie artificial sweetener
1 1/2 teaspoons italian seasoning
1/3 cup green olives, sliced
1/8 teaspoon black pepper
3 cups noodles, cooked

Steps:

  • Cut chicken into bite size pieces.
  • Spray large skillet with olive oil cooking spray.
  • Saute chicken, onions, and green peppers for 6-8 minutes.
  • Stir in drained tomatoes and tomato sauce.
  • Add Splenda, Italian seasoning, olives, and black pepper.
  • Simmer for 10-15 minutes, stirring occasionally.
  • For each serving place 1/2 cup pasta on plate and spoon 2/3 cup chicken mixture over top.

If you wish you may make this a day ahead and let it mellow in the fridge or just make and serve. It may be doubled. Personally I like spicy and would add an additional tsp of Cayenne. This recipe is not very spicy. Use your favorite pasta or if you prefer serve with rice. Tip: To cube the chicken have it half frozen before cutting. You may substitute regular vinegar but balsamic is best.

1 lb boneless skinless chicken breast, cut into bite size cubes
3 tablespoons flour
salt & pepper
1/2 cup shallot, chopped
1/4 cup red pepper, sweet, chopped
3 garlic cloves, crushed
1 1/2 teaspoons cayenne, pepper dry crushed
5 tablespoons sun-dried tomatoes packed in oil, chopped
1 (19 ounce) can black beans, drained & rinsed
2 tablespoons honey
2 tablespoons balsamic vinegar
1 cup chicken broth
1/2 cup dry white wine
8 tablespoons asiago cheese, grated
6 cups cooked pasta

Steps:

  • Season your chicken with salt/pepper then dust the cubes with the 3 tbsp of flour.
  • Brown the cubes in a non stick pan.
  • Add shallots, stir fry with chicken for approx 5 minutes.
  • Add red pepper, cayenne, garlic, sun dried tomatoes, Honey, and vinegar.
  • Add drained rinsed beans, stir.
  • Add chicken broth and white wine, get any little pieces up from the pan.
  • Simmer for approx 10-15 minutes with lid on medium heat or until the sauce has a nice consistency.
  • Distribute the hot cooked pasta on 4 plates top with the chicken/bean mixture.
  • Sprinkle 2 tbsp of Asiago cheese over each serving.
  • And enjoy.

BASIL CHICKEN OVER ANGEL HAIR PASTA

I am having a "clean out the pantry/freezer/fridge" week and did a search for some of the ingredients I had on hand. This recipe came up and it was perfect for what I needed. If you find that you want it to have a little more sauce, during the simmering step, add a little bit of Italian Salad Dressing. Delicious!

1 (8 ounce) package angel hair pasta
2 teaspoons olive oil
1/2 cup finely chopped onion
1 garlic clove, chopped
2 1/2 cups chopped tomatoes
2 cups boneless chicken breast halves, cooked and cubed
1/4 cup chopped fresh basil
1/2 teaspoon salt
1/8 teaspoon hot pepper sauce (I used Nando's)
1/4 cup parmesan cheese

Steps:

  • In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
  • In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
  • Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.

8 pieces chicken, bone in, skin on on off (drumsticks or thighs, or both)
1/2 cup all-purpose flour
2 teaspoons dried oregano
salt & freshly ground black pepper
4 tablespoons olive oil
2 tablespoons unsalted butter
1 medium onion, peeled and sliced
4 cubanelle peppers, cored and sliced (or any peppers you have)
8 garlic cloves, finely chopped
1 teaspoon italian seasoning, dried
1 chicken bouillon cube
1/4 cup water, plus more for cleaning chicken
crushed red pepper flakes, to taste
1 (14 1/2 ounce) can diced tomatoes (liquid drained)
1 (14 1/2 ounce) can diced tomatoes with juice
1/4 cup white vinegar
parmesan cheese
basil chiffonade (stack the basil leaves and roll into a tube, then cut across the ends of the tube to form strips)
1/3 cup olive oil, plus more for drizzling
8 garlic cloves, finely chopped
salt and crushed red pepper flakes, to taste
2 cups reserved pasta water
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Soak chicken in vinegar and enough water to cover chicken. Let soak for a few minutes. Rinse well, pat dry and transfer to large bowl. Season chicken 1 teaspoons oregano, and salt black pepper to taste.
  • In another bowl combine the flour, 1 teaspoons oregano and salt and black pepper to taste. Mix well.
  • Dredge the chicken in the seasoned flour. Shake off excess flour.
  • Heat a large dutch oven or heavy skillet (oven safe) over medium/high heat. Add olive oil and butter, when butter melts add chicken pieces (4 pieces at a time). Brown chicken on both sides, transfer chicken to a plate.
  • Pour off half of the grease in the pan and discard. Add onions, peppers and garlic, cook stirring for 1 minute. Add crushed red pepper flakes and chicken bouillon cube, cook stirring 1 more minute.
  • Add water, bring to boil. Stir in diced tomatoes and Italian seasoning. Add chicken pieces back to pan. Cover and bake for 45 minutes. Remove cover and raise temperature to 375 degrees F. Cook for an additional 15 minutes.
  • Meanwhile, heat a large pot of salted water to boil for the pasta. Cook pasta according to package "al dente" reserving 2 cups of the pasta water before draining.
  • In a large deep skillet, heat olive oil over medium heat. Add garlic and cook, stirring for 2 minutes (do not burn garlic). Add crushed red pepper flakes and cook, stirring 1 minute. Add pasta water and salt to taste. Bring to a boil and reduce sauce to about half.
  • Add the drained pasta to the sauce and remove from heat. Toss adding a final drizzle of olive oil and Parmesan cheese.
  • Serve Chicken Cacciatore over the Angel hair Aglio Olio. Garnish with pamesan cheese and basil.
  • Note: You can add mushrooms (I didn't have any), and you can substitute the 1 cup of water and chicken bouillon cube for 3/4 cups dry white wine (I just prefer the flavor of the bouillon cube or chicken stock over wine). Plus I'd rather drink the wine as I'm cooking ;-).

1/4 cup olive oil
3 cloves garlic, crushed
1 pound boneless chicken breast, cut
into strips, maybe 1/2 inch
3 cups broccoli florets, cut
into pieces
1 cup oil packed sun dried tomatoes
sliced thin, don't drain.
1 1/2 teaspoons dried basil
Pinch red pepper flakes
1/2 cup white wine
1 1/2 cups chicken broth
1 tablespoon butter
Bow tie pasta cooked and drained
Parmesan Cheese, freshly grated.

Steps:

  • Parboil your broccoli and drain set aside. In large skillet, heat your oil over medium heat. Saute garlic until golden stirring frequently. Add your chicken strips and saute until almost cooked. Add your broccoli,saute a minute. Now ad your sun dried tomatoes, I also add some of the oil from the jar, your basil, red pepper flakes, salt and pepper. Mix. Add wine, broth, and butter. Cook 5-10 minutes. Serve over cooked bow tie pasta(make sure each plate gets some sauce) topped with lots of freshly grated cheese.

8 oz spaghetti or linguini
3-4 boneless chicken breasts, pounded thin
1 tbsp blackening spice (homemade recipe here)
2 tbsp extra virgin olive oil
4-5 garlic cloves, minced
1 tbsp butter
1 tbsp flour
1/4 cup tequila
1 cup chicken broth or stock
1/4 cup lime juice
1 tbsp dried parsley

Steps:

  • Cook pasta according to package directions. Coat chicken in blackening seasoning. Heat 1 tbsp oil in a large skillet over medium high heat. Add chicken and brown 4 minutes on each side. Reduce heat and cook until chicken is no longer pink (mine took another 4-5 minutes). Remove chicken to a plate and reserve. Add remaining tbsp of olive oil and tbsp of butter to the pan. Add garlic and sauté over medium heat 1-2 minutes. Sprinkle flour and cook one more minute. Deglaze pan with tequila, cook 1-2 minutes. Add chicken broth and lime juice, bring to a boil. Simmer 5 minutes or until thickened, add parsley. Add drained pasta to the skillet and heat through. Add chicken back to the skillet and heat through. Serve immediately.

  • In 12" skillet over medium heat, add olive oil.
  • Add onion and garlic and cook until tender, stirring occasionally.
  • With a slotted spoon, remove onion and garlic to a small bowl.
  • In remaining drippings in skillet over medium high heat cook chicken pieces until slightly browned.
  • Add parsley, onion, tomato sauce, wine, salt, ground cayenne red pepper, basil, pepper and chicken broth.
  • Bring to a boil, reduce heat to low, cover and simmer 10 minutes.

4 thick chicken breasts
4 strips bacon
1/4 lb brie
1/2 lb broccoli florets(frozen or fresh), chopped
1/2 lb rice noodles
4 tsp. honey
lime juice
Raspberry gravy:
4 Tbsp butter
4 Tbsp rice flour (or tapioca flour, or other gluten-free thickener)
2-3 cups half-n-half
1/4 cup raspberry preserves
1/4 cup chopped walnuts
2 Tbsp honey
Salt

Steps:

  • Preheat the oven to 375 degrees. Fry bacon until crispy, crumble and set aside. Choose thick chicken breasts and slice a hole in the center being careful not to slice all the way through. Cut brie into thin chunks and stuff into the chicken along with bacon crumbles. Use olive oil to grease a baking pan and place chicken inside. Dribble honey and lime juice over the chicken and bake for 1 hour. While that cooks, boil water for the rice noodles (they only take about ten minutes once the water boils). Add a tiny bit of olive oil so the noodles don't stick together. In a saucepan, create a roux by melting 4 Tbsp butter, then adding 4 Tbsp rice flour until thoroughly blended (still over the heat). Slowly add the half-n-half to thicken the gravy. Once thickened, blend in the copped walnuts, raspberry preserves and honey. Salt to taste. The broccoli can be microwaved or steamed in a pot. I usually microwave it with a tsp of water and some butter.
