1 package (3 ounces) chicken ramen noodles
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 cup fresh broccoli florets
1 cup fresh cauliflowerets
1 cup sliced celery
1 cup coarsely chopped cabbage
2 medium carrots, thinly sliced
1 medium onion, thinly sliced
1/2 cup canned bean sprouts
1/2 cup teriyaki or soy sauce

Steps:

  • Set aside seasoning packet from noodles. Cook noodles according to package directions. Meanwhile, in a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until no longer pink. Add vegetables; stir-fry for 3-4 minutes or until crisp-tender. , Drain noodles. Stir the noodles, contents of seasoning packet and teriyaki sauce into the chicken mixture until well combined.

1 (3 ounce) package Oriental-flavor ramen noodle soup mix
2 teaspoons vegetable oil, divided
8 ounces skinless, boneless chicken breast halves, cut into 2-inch strips
2 cups broccoli florets
1 cup sliced onion wedges
2 cloves garlic, minced
1 cup fresh bean sprouts
½ cup water
½ cup sliced water chestnuts
1 teaspoon soy sauce
1 teaspoon oyster sauce
¼ teaspoon chile-garlic sauce (such as Sriracha®), or to taste
1 roma tomato, cut into wedges

Steps:

  • Bring 1 1/2 cups water to a boil in a small saucepan. Add ramen noodles, reserving seasoning packet for later use. Cook noodles at a boil for 2 minutes; drain and set aside.
  • Heat 1 teaspoon oil in a large skillet over medium heat. Cook and stir chicken in skillet until completely browned, about 5 minutes. Remove chicken from skillet with a slotted spoon to a bowl, reserving drippings in the skillet. Place a plate over the bowl to keep chicken warm.
  • Increase heat under the skillet to high. Cook and stir broccoli, onion, and garlic in the skillet until slightly tender, 3 to 5 minutes. Mix drained noodles, reserved seasoning from the ramen noodle package, bean sprouts, water, water chestnuts, soy sauce, oyster sauce, and chile-garlic sauce into the broccoli mixture; cook and stir until hot, 3 to 5 minutes. Spicy Thai Basil, Chicken & Noodle Stir-Fry image

This is a recipe I got off the Thai Kitchen red rice noodles box. It's fantastic and very authentic tasting. It's also good with regular rice noodles and Asian wheat noodles. I've made it with Italian sweet basil, and also by substituting cilantro for the basil. Both are very good. I haven't tried it yet, but I think this would be great served with crushed peanuts sprinkled on top. I'm posting the recipe here for safekeeping.

1 tablespoon sugar
1 tablespoon lime juice
1 tablespoon fish sauce
4 ounces red rice noodles (2 single-serve packages)
2 tablespoons vegetable oil
1 teaspoon garlic, minced
1 small Thai chile, minced
1/2 lb boneless skinless chicken breast, cut into thin strips
1/4 cup carrot, julienne-cut
2 tablespoons green onions, thinly sliced
1/2 cup Thai basil (or cilantro)

Steps:

  • 1. Mix sugar, lime juice and fish sauce in small bowl. Set aside. Bring large pot of water to boil. Remove from heat. Add red rice noodles, stirring to separate noodles in water. Let stand 5 to 7 minutes or until noodles are tender but firm. (If you are using Asian wheat noodles, you will need to actually cook them for 5-7 minutes rather than merely letting them soak in hot water.) Drain well. Place in serving bowl. Set aside.
  • 2. Meanwhile, heat oil in large skillet or wok on medium-high heat. Add garlic and chile; stir fry 15 seconds or until fragrant. Add chicken, carrots and green onions; stir fry 3 to 5 minutes or until chicken is cooked through.
  • 3. Stir in fish sauce mixture; stir fry 1 minute. Add basil (or cilantro); stir fry 30 seconds or until basil (or cilantro) is wilted. Add to noodles in bowl; toss to coat. Serve immediately.
  • Tip: Thai basil has dark green leaves with purple stems and has a licorice flavor. It can be found in most Asian markets. If unavailable, substitute Italian basil.

Steps:

  • Bring water to a boil. Add glass noodles and cook until transparent, 3 to 6 minutes.

440 g egg noodles (packet Wokka thin egg style shelf fresh noodles specified)
2 tablespoons honey
1 tablespoon reduced sodium soy sauce
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon olive oil
500 g chicken breast fillets (lean trimmed of fat ad cut into thin strips)
1 red onion (cut into thin slivers)
250 g snow peas (halved diagonally)
1 red capsicum (large cut into strips, bell pepper)
1 green capsicum (large cut into strips, bell pepper)
2 carrots (large cut into short thin sticks, julienned)
2 garlic cloves (minced)
2 tablespoons water
1/3 cup roasted cashews (unsalted to serve, personally I'd use more)

Steps:

  • Put the noodles in a medium heatproof bowl and cover with boiling water and set aside for 2 minutes and the drain and separate the noodles and set aside.
  • Put the honey, soy sauce and lemon juice in a small bowl and whisk to combine and set aside.
  • Brush a little oil over a large wok and heat on high until the wok is hot and then add half the chicken and stir fry for 2 minutes or until the chicken is almost cooked and transfer to a plate.
  • Brush the wok with a little more boil and reheat the work on high and repeat with remaining chicken and then remove chicken from the wok.
  • Brush the wok with the remaining oil and heat on medium high and add the vegetables and garlic and stir-fry for 2 minutes and then add the water and cook covered tossing twice for 2 minutes until the vegetable are just tender.
  • Add the noodles and chicken to the wok and toss well to combine and the sauce mixture and toss to combine and heat through and then top with the cashews to serve (personally in this case I would just add the cashews once plated up).

2 boneless, skinless chicken breast halves (6 to 8 ounces each), cut crosswise into thin strips
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 small red onion, halved and thinly sliced
2 garlic cloves, thinly sliced
1/2 napa cabbage (about 1 pound), thinly shredded
2 cups frozen shelled edamame
2 tablespoons rice vinegar
2 tablespoons soy sauce

Steps:

  • In a large pot of boiling salted water, cook noodles until al dente, according to package instructions. Drain, and rinse under cold water; drain again, and set aside.

  • While the noodles are soaking, you can combine the fish sauce, lime juice, sugar and sambal - in a small bowl. Stir until dissolved.
  • Heat up a wok or large skillet over high heat. Add the oil and swirl to coat the pan.
  • Add the shallots and stir-fry until brown - about 1 minute.

2 Tbsp thai fish sauce (nam pla)
2 Tbsp fresh lime juice
1 tsp sugar
1 Tbsp traditional spicy sambal
3 Tbsp grapeseed or canola oil
3 shallots, sliced 1/8 thick
1 lb ground chicken
1/2 c scallions, sliced fine
1/4 c thai or sweet basil leaves cut into fine ribbons
1 lime quartered for garnish
4 springs of thai or sweet basil for garnish

Steps:

  • 1. Fill in a large bowl with warm water. Add the noodles and soak until tender about 20 minutes and set aside.
  • 2. Meanwhile, in a small bowl combine the fish sauce, lime juice, sugar, and sambal, and stir until the sugar is dissolved.

  • Edamame are young soybeans, picked while still green and sweet. Although you can buy edamame whole (in the pod), the shelled version is more convenient. Look for shelled edamame in the frozen section of your grocery store.

1 teaspoon cornflour
1 tablespoon canola oil
3 1/2 ounces boneless skinless chicken breasts (cut into strips)
2 spring onions (finely sliced)
2 ounces baby corn (halved lengthways)
1 carrot (cut into thin strips)
1/2 red pepper (deseeded and chopped)
1 christophene (deseeded and diced. You can substitute 1/2 courgette)
1 3/4 ounces chow mein noodles
2 teaspoons sesame seeds

Steps:

  • Mix vinegar, soy sauce, tomato ketchup, orange juice and honey together. Add the cornflour and stir until well combined.
  • Heat the oil in a non-stick frying pan and stir fry the chicken strips for 3-4 minutes. (If you don't use a non stick pan the chicken will stick to the pan).
  • Add the vegetables and stir fry for 4-5 minutes.
  • Add the cornflour mixture and bring to a boil.(Another tip-Don't use an overly large pan like I did or you will find the cornflour mix spreads too thin and there won't be enough liquid cook the vegetables.).
  • Meanwhile prepare the noodles according to the packet instructions, drain and add to the pan along with the sesame seeds. Mix well.

2 - 3.5 Ounce Pkg. ounce Instant Ramen Noodles
1/3 cup Chicken Stock
1/4 cup Oyster Sauce
1 tablespoon Rice Wine Vinegar
1 tablespoon Canola Oil
1 pound Chicken Thighs, skinless, boneless
1 1/2 cups Broccoli Florets, small
1 cup Onion, diced
1 cup Red Bell Pepper, diced
1 cup Shitake Mushrooms, sliced
3 cloves Garlic, minced
1 tablespoon Ginger, grated
2 tablespoons Green Onion, Sliced
2 tablespoons Toasted Sesame Seeds
1 teaspoon Sirracha

Steps:

  • Boil a large pot of water to cook noodles until tender, 3-4 minutes.
  • In a medium bowl whisk chicken stock, oyster sauce, rice wine, sirracha.
  • Heat oil in skillet. Cook chicken 4-6 minutes. Set aside. Stir in broccoli, onion, bell pepper, mushroom and cook until tender. 4-5 min.
  • Stir in garlic and mix. Stir in Chicken and stock mix. Stir in noodles. Sauce 1-2 minutes or until heated through.

This started its life as a recipe for a beef and noodle salad-served cold, but because of missing ingredients and my general forgetfulness, I arrived at this dish. It was gobbled up by all present-even the very fussy 96-year-old. I've posted the recipe here because the guests who ate it want to recreate it. It's tasty and fast to make-and not too spicy. It's also versatile. You can double or triple it, and you can leave out ingredients, add extra ones and even switch from beef to chicken. Oyster sauce is sweet, so be careful about adding the brown sugar, too.

1 1/4-1 1/2 lbs chicken breasts, cut into postage stamp-size squares and sliced 1/8 of an inch thick (chicken thigh meat is okay if you prefer dark meat)
1 tablespoon peanut oil
2 tablespoons oyster sauce
2 teaspoons mild curry powder
1 tablespoon brown sugar (optional, use if you like sweet because the oyster sauce is already sweet)
1 lebanese cucumber, sliced thinly
1 red onion, sliced thinly
1 red bell pepper, sliced thinly (capsicum)
1 long red chile, seeded and chopped finely
1/4 cup chopped of fresh mint (or more)
1/3 cup chopped unsalted peanuts or 1/3 cup unsalted cashews
1 lb hokkien noodles
1/2 cup rice vinegar
2 tablespoons fish sauce
2 tablespoons caster sugar (finely ground sugar)
2 teaspoons fresh ginger, finely chopped (optional)
1 additional long red chile, seeded and chopped
2 tablespoons chopped fresh coriander leaves (or more)

Steps:

  • Combine the sliced chicken, peanut oil, oyster sauce and curry powder and brown sugar (if used) in a bowl. If possible, leave this mixture (covered and in the fridge) to marinate for a few hours or overnight. But if time is short, just keep going.
  • Make the cooking sauce -- made up of the last six ingredients listed. If you keep the meat overnight, make and keep the sauce (separate and refrigerated) overnight, too.
  • Stir fry the chicken, in batches. Set aside.
  • Stir fry the vegetables-cucumber, onion, bell pepper and chili-until just tender.
  • Add the mint, nuts and cooking sauce, and cook for one minute.
  • Add the chicken and heat until warm again.
  • In a separate pan, cover the noodles with boiling water for a few minutes-until they are hot.
  • Drain the noodles and combine with chicken and cooking sauce mixture.
  • Enjoy!

This recipe is originally a broccoli stir fry from BBC Good Food. I've taken out the broccoli and ammended some other ingredients to suit. It's a quick, easy and low-fat recipe that we make more or less once a week!

2 boneless skinless chicken breasts, cut into strips
1 tablespoon olive oil
2 blocks thin egg noodles
1 tablespoon fresh ginger, grated
1 -2 garlic clove, minced
6 -10 spring onions, sliced into half inch pieces
3 tablespoons light soy sauce
200 ml chicken stock
1 pinch black pepper

Steps:

  • Firstly, cook the noodles as per the directions on the packet, drain and leave to one side.
  • Warm the oil in the pan and fry the garlic and ginger, stirring for about 30 seconds.
  • Add the chicken and stir around the pan. Meanwhile prepare the stock and add the soy sauce to the stock, stir and leave to one side. Check the chicken is cooked/brown before moving on.
  • Add the spring onions and stir briefly.
  • Then add the stock, stir. Then add the noodles abit a time and mix everything together.
  • Add a good pinch of black pepper, toss everything together until nice and hot and serve.

Today is February 5, 2011. We just made this soup for lunch today. It was a big hit with the children and adults! This is an easy recipe full of veggies! Enjoy!

Number Of Ingredients 6

2-4 large chicken legs/with thighs
1 large onion (chopped)
3 cup(s) stir fried veggies of choice
3 package(s) ramen chicken noodle soup
1/2 teaspoon(s) each: salt and pepper
1 teaspoon(s) each: poultry seasoning and garlic powder

Steps:

  • Put chicken legs in a large sauce pan. Fill the pan 3/4 full with water. Bring to a boil for 15 minutes on high. Reduce heat and simmer on medium - low for 35 minutes (or until the chicken is done and tender). Remove the chicken from the pan, let cool. Add the onion and stir fry vegetables to the pan. Cook until the vegetables are done to your liking, while the veggies are cooking, remove the meat from the bones. Add the meat to the pan and add seasonings inclucing the packets from the ramen noodles. Add the ramaen noodles. Cook about 5 - 10 minutes more.
  • This is an easy and tasty soup.

1 1/2 pound(s) skinless chicken (i use chicken breasts) the recipe calls for chicken thighs
1 quart(s) water to cook noodles in
2 package(s) chicken flavored ramen noodles
1/4 cup(s) oil
2 - cloves garlic (minced)
1/4 cup(s) chicken broth (warmed)
1 medium onion (thinly sliced)
2/3 cup(s) carrots (thinly sliced)
1 cup(s) celery (thinly sliced)
2 cup(s) cabbage (thinly sliced)

Steps:

  • cook chicken and cut into small strips. set aside. cook noodles for 2 minutes drain and set aside. (DO NOT ADD FLAVOR PACKET AT THIS TIME). In large pan or wok heat oil. Add garlic, onion, carrots and celery. stir fry until almost soft. Add flavor packet. stir into vegies. Add cabbage and cook until cabbage is almost done. Add chicken then add noodles and warmed chicken broth. serve.
