Easy Shake and Bake Chicken With Mozzarella and Tomato Sauce image

this is easy and my family loves it, you may increase the pasta sauce and cheese if desired to suit taste

6 boneless skinless chicken breasts
0.75 (142 g) package shake and bake original chicken coating mix (save the rest for another time)
1/2-1 teaspoon garlic powder
1 teaspoon fresh ground black pepper
1/2 teaspoon seasoning salt
1 1/2 cups pasta sauce, divided (can use more)
6 slices mozzarella cheese (can use shredded cheese)

Steps:

  • Remove about 1/4 of the package of seasoning mix and save for another time.
  • Place the coating mix in the shaker bag and add in the garlic powder, black pepper and seasoned salt; shake the bag to combine.
  • Add in one breast at a time to the bag and shake to coat with the crumb mixture.
  • Place the coated breasts into a greased 11 x 7-inch baking pan (or use a pan large enough to hold the chicken).
  • Set oven to 375 degrees F (set oven rack to lowest position).
  • Bake for 20 minutes.
  • Remove from oven and drizzle about 1/4 to 1/3 cup pasta sauce over each breast then place a slice of mozzarella cheese or about 1/3 cup shredded cheese on top.
  • Return to oven and bake for for about 10-15 minutes or until the chicken is completely cooked.

You can most certainly use skin on chicken pieces for this recipe, but adjust baking time. This is easy and delicious! If you prefer a spicy sauce, then add in some crushed red pepper flakes to the tomato sauce, also if you want more sauce, then add about another 1-1/2 cups tomato sauce.

8 boneless skinless chicken breasts
3 eggs, beaten
seasoning salt
pepper
cayenne pepper (optional)
1 teaspoon garlic powder
3 cups dry breadcrumbs
1/2 cup parmesan cheese
oil (for frying)
1 (14 ounce) can tomato sauce (can use more sauce)
1 large onion, sliced
3 cups grated mozzarella cheese
1/4 cup parmesan cheese (or to taste)

Steps:

  • Grease a shallow baking dish.
  • Place the sliced onions in bottom of the dish; set aside.
  • In a shallow bowl or dish, combine the bread crumbs, 1/2 cup Parmesan cheese, seasoning salt, pepper, cayenne pepper (if using) and garlic powder.
  • Coat the chicken is eggs, then in bread crumb mixture.
  • Brown the chicken in hot oil in a frypan until browned, and place on top of the onions in the baking dish.
  • Pour the tomato sauce over chicken.
  • Sprinkle with mozzarella cheese, and then Parmesan cheese.
  • Bake, covered in a 350 degree oven for about 30 minutes, uncover, and bake for another 30 minutes.

1 package Chicken Helper™ Oven Favorites® Cheddar & mozzarella
2 tablespoons margarine or butter, cut up or softened
2 3/4 cups boiling water
1 pound boneless skinless chicken breast halves
1 cup (8 ounces) spaghetti sauce
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 400°F for 13x9-inch glass, dark or nonstick pan (or 425°F for shiny metal pan). Stir uncooked Pasta, Sauce Mix, margarine and boiling water in pan until margarine is melted.
  • Place chicken in pan. Tear off notched corner of Cheddar Cheese Sauce Topping pouch. Squeeze cheese sauce over each chicken breast. Sprinkle bread crumb Topping over cheese-topped chicken.
  • Cover pan with aluminum foil. (If using metal pan, be careful when placing in oven--it will be hot.) Bake 30 to 35 minutes or until pasta is tender and juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Remove from oven; carefully remove foil. Stir pasta; pour spaghetti sauce over top. Sprinkle with cheese; return to oven 3 to 5 minutes or just until cheese is melted.
