Vietnamese Chicken and Long-Grain Rice Congee image

Congee is a much overlooked soup and a comfort food of a lot of Asian peoples. This recipe is flavorful, light, and goes down real easy when you are feeling a little out of the weather. It looks harder than it actually is. I usually just throw things together, go away, and wander into the kitchen later to see if it's done.

⅛ cup uncooked jasmine rice
1 (2.5 pound) whole chicken
3 (2 inch) pieces fresh ginger root
1 stalk lemon grass, chopped
1 tablespoon salt, or to taste
¼ cup chopped cilantro
⅛ cup chopped fresh chives
ground black pepper to taste
1 lime, cut into 8 wedges

Steps:

  • Place chicken in a stock pot. Pour in enough water to cover chicken. Add ginger, lemon grass, and salt; bring to a boil. Reduce heat, cover, and gently simmer for 1 hour to 1 1/2 hours.
  • Strain broth, and return broth to stock pot. Let chicken cool, then remove bones and skin, and tear into bite-size pieces; set aside.
  • Stir rice into broth, and bring to a boil. Reduce heat to medium, and cook for 30 minutes, stirring occasionally. If necessary, adjust with water or additional salt. The congee is done, but can be left to cook an additional 45 minutes for better consistency.
  • Ladle congee into bowls, and top with chicken, cilantro, chives, and pepper. Squeeze lime juice to taste.

Chicken Enchiladas with Green Sauce and Long-Grain Rice image

Number Of Ingredients 22

2 tablespoons olive oil
1/2 large onion, sliced
2 cloves garlic, minced
2 boneless chicken breasts, thinly sliced
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 teaspoon dried chili flakes
2 cups Green Sauce, recipe follows
8 to 10 corn tortillas
1 cup oil
3 cups shredded Cheddar/mozzarella mix
1/4 cup chicken broth
1 roasted Anaheim chile, skin removed, stemmed and seeded, roughly chopped
7 tomatillos, roughly chopped
1 garlic clove
1 teaspoon dried oregano
1 teaspoon salt
1 tablespoon white pepper
3 cups water
2 cups long-grain rice
1/2 cup roughly chopped cilantro leaves
1/2 lime, juiced

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet heat 2 tablespoons olive oil over medium heat, add the sliced onion and minced garlic, saute for about 2 minutes. Then add the chicken slices and cook until chicken is a nice golden brown. Turn the heat up a touch and add the bell pepper slices and dried chili flakes. Once chicken is no longer pink remove from the heat and place the mixture into a bowl.
  • In a small skillet add 1 cup oil. When oil is warm submerge a tortilla for 10 to 15 seconds or until soft. This will soften them and make rolling a lot easier. Drain on paper towels and repeat this process until all tortillas have been softened. Pour 1 cup of Green Sauce on bottom of the baking dish to cover. Divide the chicken mixture evenly among the tortillas, roll them up. Place seam side down on top of the sauce in the baking dish. Pour the remaining green sauce over them and spread the cheese mix evenly over the top. Bake for about 20 minutes until golden brown. Remove from the oven and serve with long-grain rice.
  • For the Green Sauce:
  • Pulse all ingredients in a food processor until a nice salsa consistency is reached.
  • For the Rice: Pour 3 cups of hot water in a large saucepan and bring to a boil. Rinse the rice well in a bowl under cold water and drain. This will remove surface starch and will be less sticky. Place the rinsed and drained rice into the saucepan, cover and cook until al dente, about 10 to 15 minutes. Add fresh cilantro and lime juice and serve.

1 tablespoon vegetable oil
1 tablespoon margarine
1 lb chicken breast, boneless and skinless, cut into cubes
1/2 cup onion, finely chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 cup water
3/4 cup long grain rice
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • In a large skillet heat oil and margarine.
  • Add chicken and onion cook and stir until chicken is lightly browned and onions are tender.
  • Stir in remaining ingredients.
  • Transfer to a greased 1-1/2 quart casserole dish.
  • Bake at 370°F for 1 hour or until rice is tender.

3 tablespoons hoisin sauce
1 tablespoon ketchup
1 1/4 teaspoons hot chili sauce ( Sriracha sauce or Huy Fong sauce)
1 1/2 teaspoons canola oil
1 1/2 cups sliced onion rings
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
3/4 teaspoon curry powder (optional)
1 lb boneless skinless chicken breast, cut into 1-inch thick slices
parsley, chopped fine garnish for rice
chopped cashews or almonds or peanuts, for garnish

Steps:

  • Prepare rice omitting salt and any oil and garnish with parsley when finished cooking and fluffed. While rice is cooking, combine hoisin, ketchup and Sriracha in a small bowl. Heat oil in large non-stick skillet over medium-high heat. Add onion; sauté 3 minutes or until tender. Add ginger, garlic and curry (if using) and chicken; sauté for 6 minutes or until chicken is done. Stir in hoisin mixture; cook 1 minute, tossing to coat. Sprinkle with your choice of chopped nuts. Serve over rice and enjoy!

1/2 large onion, sliced
