GARLIC-ROSEMARY ROAST CHICKEN WITH JUS
Don't be put off by the recipe length- it's actually quite easy and makes a really elegant meal. The garlic is not overpowering- the chicken gets a very nice balance of flavors. We like to toss extra cloves in the bottom of the pan with the juices and mash them when they are roasted to spread on fresh crusty bread. Prep time includes brining time. Steps:
- Combine salt, garlic, and rosemary in zipper-lock bag; seal, pressing out air.
- Pound with meat pounder or rolling pin until garlic is crushed.
- Transfer to large container or stockpot, stir in 2 cups hot water, let stand 10 minutes.
- Add 1 1/2 quarts cold water, stir until salt is dissolved.
- Submerge chicken in brine and refrigerate 1 hour. Meanwhile, make paste.
- Stir all paste ingredients together in small bowl, let rest.
- Remove chicken from brine and pat dry with paper towels.
- Adjust oven rack to lower-middle position and heat oven to 450 degrees.
- Spray roasting pan and rack with non-stick cooking spray.
- Rub about 1 1/2 teaspoons of paste in cavity of chicken.
- Carefully loosen skin over breast and thigh on each side; slip half of remaining paste under skin on each side of breast, then, using fingers, distribute paste over breast and thigh.
- Rub all sides of chicken with 2 teaspoons oil and season with pepper.
- Toss 10 garlic cloves with 1/2 teaspoon olive oil.
- Scatter in bottom of pan.
- Set chicken breast-side down on prepared V-rack and roast 15 minutes.
- After 15 min, remove roasting pan from oven; decrease oven temperature to 375 degrees. Rotate chicken breast-side up; brush breast with 1 teaspoon oil.
- Add 1 cup broth and 1/2 cup water to pan and continue to roast until chicken is medium golden brown adding more water to roasting pan if liquid evaporates.
- Tip chicken to allow juices in cavity to run into roasting pan. Transfer chicken to large plate.
- Remove roasted garlic cloves to cutting board.
- Using wooden spoon, scrape up browned bits in roasting pan and pour liquid into 2-cup liquid measuring cup.
- Allow liquid to settle; meanwhile, peel garlic and mash to paste with fork.
- Using soup spoon, skim fat off surface of liquid (you should have about 5/3 cup skimmed liquid; if not, supplement with water).
- Transfer liquid to small saucepan, then add wine, rosemary sprig, remaining ¾ cup broth, and garlic paste; simmer over medium-high heat, until reduced to about 1 cup, about 8 minutes.
- Add accumulated juices from chicken and discard rosemary sprig; adjust seasonings with salt and pepper to taste.
- Carve chicken and serve with jus.

ROASTED CHICKEN JUS

- Preheat oven to 350 degrees F. In a roasting pan add chicken wings, vegetables, thyme and garlic. Season well with salt and pepper and drizzle with olive oil. Roast for 30 minutes until the wings are nice and brown.
- Remove from the oven and set over medium-high heat on the stove top. Add white wine to deglaze and scrape the brown bits off the bottom of the pan using a wooden spoon. Add the chicken stock and continue to simmer for 5 minutes to reduce the liquid until about 1 cup remains. Remove from heat and strain through a china cap, pushing some of the vegetable pulp through the strainer with the back of a ladle - this will help thicken the jus slightly. Add the cold butter cubes to the jus and swirl until it melts. Season again with salt and pepper.
ROASTED RED CURRY CHICKEN WITH APPLE JUS

- Make chicken:
- Position rack in center of oven and preheat to 350°F. Mix oil and curry paste in small bowl. Rinse chickens; pat dry. Sprinkle inside and out with salt and pepper. Place apple, garlic, cilantro and mint in cavities of chickens, dividing equally. Rub curry mixture over chickens. Tie legs together.
- Place chickens in large roasting pan. Roast until meat thermometer inserted into thickest part of thigh registers 175°F, basting occasionally, about 1 hour 15 minutes. Transfer chickens to platter. Tent with foil.
- Prepare jus:
- Shake mustard seeds in medium skillet over low heat until color darkens and seeds begin to pop, about 2 minutes. Transfer mustard seeds to medium bowl.
- Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Add shallots, thyme and brown sugar to skillet and sauté until shallots are translucent, about 3 minutes. Add chicken stock, apple juice, wine and cinnamon sticks. Boil until mixture is reduced to 1 cup, about 20 minutes. Strain into medium saucepan. Bring jus to simmer. Add apple cider vinegar, toasted mustard seeds and remaining 4 tablespoons butter and whisk just until butter melts. Season with salt and pepper. Serve jus with chickens.
ROAST CHICKEN WITH JUS

- Preheat the oven to 375 degrees F.
- Season the chicken cavity with salt and pepper. Tie the legs together with kitchen twine and fold the wing tips under the back. Put the carrot, onion, celery, neck, and heart, if using, in the center of a roasting pan just large enough to accommodate the chicken. (Discard the liver or reserve for another recipe.) Season the butter with salt and pepper and brush the entire chicken with it. Set the bird breast-side up on top of the vegetables.
- Roast the chicken for 45 minutes. Then increase the temperature to 425 degrees F., cooking until an instant-read thermometer stuck into the chicken thigh registers 160 to 170 degrees F., about 15 minutes more. Tip the chicken so the juices run into the pan. Transfer the chicken to a cutting board and loosely tent with foil while making the jus.
- To make the jus: Set a strainer over a bowl. Strain the vegetables, giblets, if using, and pan juices into the strainer. Shake the strainer to get more juices into the bowl. Set strainer aside. Skim most of the fat from the surface of the liquid with a spoon, or alternately, use a degreasing cup. Reserve the pan juices.
- Place the roasting pan directly on a burner set at medium-high. Pour the chicken broth into the pan, and scrape the pan with a wooden spoon to loosen all the browned bits that cling to the pan. Add the reserved pan juices, increase the heat to high and boil the liquid until slightly thickened. Return the reserved vegetables to the sauce, if desired, or carefully strain jus through a fine sieve into a serving bowl. Taste and season with salt and pepper. Keep warm until ready to serve.
- Carve the chicken and serve with the jus.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a glass baking dish.
- Mix the minced garlic into the softened butter. Cut a slit into the side of each chicken breast to make a pocket, and fill with the garlic butter. Wrap each chicken breast with two slices of prosciutto to form a bundle. Place into baking dish, seam-side down, and pour in chicken stock.
- Bake chicken in preheated oven until no longer pink, about 30 minutes. Once finished, remove chicken from oven and cover with a sheet of aluminum foil. Allow to rest for 10 minutes.
- Meanwhile, bring the cooking liquid from the chicken, the orange juice and the sugar to a simmer in a saucepan over medium-high heat. Stir in cranberries, and cook until they begin to pop, about 10 minutes. Strain through a mesh sieve, pressing to expel all of the juice. Discard the solids. To serve, cut each breast into several slices, place the slices onto serving plates, and drizzle with cranberry jus.

- Sprinkle chicken all over with 2 teaspoons coarse kosher salt. Place chicken, breast side up, on rack set in roasting pan. Refrigerate uncovered overnight.
- Place parsley sprigs and 1/2 lemon in chicken cavity. Tie legs together. Place reserved heart and gizzard and garlic cloves under rack in roasting pan. Drizzle 2 teaspoons oil over chicken breast. Let stand at room temperature 30 minutes.
- Position 1 rack in bottom third and 1 rack in center of oven; preheat to 400°F. Place broccoli rabe and potatoes in large bowl; sprinkle with salt and pepper. Add 1/4 cup oil; toss to coat. Transfer vegetables to large rimmed baking sheet and spread out in even layer.

- Heat oven to 450 degrees. Sprinkle chicken generously on all sides with salt and pepper.
- Heat oil in heavy 12-inch ovenproof skillet over medium-high heat until hot but not smoking. Add chicken and brown well on both sides, about 6 to 8 minutes total. Turn the chicken skin side up, put the skillet into the oven and roast until the chicken is just cooked through, about 15 to 17 minutes. Being very careful of the hot pan, remove it from the oven, transfer chicken to a platter, and tent with foil to keep warm.

FRENCH CHICKEN IN A POT WITH DRUNKEN JUS AND MASHED CAMEMBERT POTATOES

- Remove the giblets, then wash and dry the chicken. Tuck the wings back and underneath the backbone until they stay in place. Season liberally with kosher salt or sea salt and lots of black pepper.
- Preheat the oven to 275 degrees F.
- Heat a large Dutch oven over medium to medium-high heat.
- Add 1 tablespoon extra-virgin olive oil to the hot pot and brown the chicken breast-side down first, turn using a wooden spoon or closed tongs placed in cavity.
- Once the bird has browned on both sides, remove the chicken to a plate and add the onion, celery, carrot, garlic, rosemary, bay leaf, salt, and pepper, and cover the pan. Sweat the vegetables to make a little pan juice, 5 to 6 minutes, stirring occasionally. Place the bird atop the vegetables and cover the pot. Transfer to the oven with the rack at the oven bottom, and roast about 1 1/2 hours, until a thermometer reads a minimum of 165 degrees F at the thickest part of the bird.
- About 15 to 20 minutes before the chicken comes out of the oven, place the potatoes and turnips in a pot, cover with water, bring to a boil, and cook to tender. Drain, and mash with milk, and ripe camembert cheese. Season the potatoes with salt, pepper, and nutmeg, to taste. Cover and turn off the heat to keep potatoes warm.
- Place the chicken on a carving board and cover with foil.
- In a large pot, bring a few inches of water to a boil for the green beans. Salt the water, and boil the beans 5 to 6 minutes for tender-crisp. Drain and dress with butter.
- Pour the pan juices and scrape the solids through a strainer into a bowl and return the pan to stovetop over medium heat. Press down on straining solids to collect all of the pan juices. Add the wine to the hot pan, and scrape up the drippings. Pour in the juices and reduce over a rapid simmer for about 10 minutes to concentrate the flavors. Add the lemon juice and turn off the heat. Transfer to a gravy boat or serving dish.
- Carve the chicken and serve with pan juices, potatoes, and beans.
BRICK ROASTED CHICKEN WITH CHESTNUT STUFFING AND CHICKEN JUS

- Preheat oven to 450 degrees.
- Cut backs, collarbones and wing tips from chickens and reserve.
- In a bowl combine oil, garlic, marjoram, and lemon zest. Place chicken in marinade and marinate for up to 12 hours.
- In a hot skillet Chef heats oil and places chicken skin side down. Wrap a brick or weight in foil and place on top of each piece of chicken. Reduce heat and brown chicken slowly. When skin is evenly browned, turn chicken over, pour off fat, and replace brick on top of chicken. Place skillet in oven for about 20 minutes or until chicken is cooked through.
- Preheat oven to 400 degrees.
- Add oil and butter to a hot casserole. Sweat carrots, onions, and celery and cook until soft, but without color. Remove from heat and add marjoram and thyme. In a bowl combine focaccia, vegetables, hot stock, cider, and chestnuts. Season with salt and pepper to taste. Mix well. Place in covered baking dish and bake for 30 minutes.

- Heat a large sauté pan over high heat and add the oil. Season both sides of chicken breast with salt and pepper, to taste. Sear the chicken, skin side down, 4 to 5 minutes. Reduce the heat to medium, flip the chicken, cover the pan and cook on second side for 7 to 8 minutes. After second side has been cooked, add the wine, garlic, and herbs and continue to cook until the liquid is reduced by half. Transfer the chicken to a serving platter and allow it to rest. PAN FRIED CHICKEN, PARSLEY PAN JUS

- Preheat the oven to 375 degrees F.
- To bread the chicken, blend the flour, salt and pepper in a small bowl. Then dust the chicken on both sides with the seasoned flour, coating well. In a saute pan over medium-high heat, add the grapeseed oil and allow to heat. Then add the floured chicken, skin-side down, cooking until slightly browned. This will take 4 to 5 minutes, then flip and repeat the process on the bottom side, again for 4 to 5 minutes. Once browned, finish the chicken in the oven until the internal temperature reaches 160 to 165 degrees F, about 6 minutes. Once cooked, remove from the oven, keep the chicken warm on a covered plate and discard any excess oil from the pan.
- Return the pan to medium heat, splash or deglaze with the wine, allowing to dissipate. Next, add the onions, stir and cook until the onions are slightly translucent, 3 to 4 minutes. Next, add the lemon juice and garlic, stir again and cook until warmed. Finally, remove from the heat, stir in the parsley and butter to finish the sauce. Serve over the chicken.
LEMON AND GARLIC ROAST CHICKEN WITH JUS

- Preheat oven to 475 degrees. Rinse, pat dry and season chicken inside and out with salt and pepper. Set aside Place cut vegetables in a roasting pan, tossing with olive oil and salt and pepper. Stuff the cavity of the chicken with garlic, lemon and sage. Melt butter with a 1 teaspoon salt and 1/2 teaspoon fresh cracked pepper. Brush onto chicken. Place chicken on top of vegetables. Roast at 475 degrees for 40 minutes, until skin is browned. Turn oven down to 400 degrees and roast until finished, when chicken is at least 165 degrees. Drain juices from chicken into the pan. Remove chicken and veggies from pan. Tent with foil. Place roasting pan on high heat on stove-top. Add wine and boil, scraping bottom to loosen browned bits. Remove lemon from chicken cavity and squeeze into jus. Discard lemon. Add 1 tablespoon butter and minced sage and cook for 2 minutes, until combined. Serve chicken and vegetables with jus spooned over top.
ROASTED CHICKEN WITH TARRAGON AU JUS

- Preheat oven to 400 degrees. Place the chicken in a small roasting pan. Rub 1 tbsp of the butter over the chicken and season with salt and pepper. Roast for about 1 hour 20 minutes, rotating the pan once, until the skin is browned and crisp and the chicken is cooked. Meanwhile, in a medium saucepan, melt 1 tbsp of the butter. Add the wingtips, neck, gizzard, onion, and carrot, season with salt and pepper and cook over moderate heat until browned all over, about 10 minutes. Add the wine and simmer over moderately high heat until reduced to 2 tbsp, about 4 minutes. Add the stock and bring to a boil. Simmer over low heat for 20 minutes. When chicken is done, tilt it to release the juices from the cavity into the pan. Transfer the chicken to a carving board and keep warm. Pour the pan juices into the saucepan with the stock, scrapping any browned bits. Add the tarragon sprigs and simmer the stock over moderate heat for 5 minutes. Strain the jus through a sieve into a small saucepan and skim the fat from the surface. Boil over high heat until reduced to 3/4 cup about 4 minutes. Stir in half of the tarragon leaves and season with salt and pepper.

Steps:
- Finely chop yellow onion in a food processor with ginger and garlic; add all the dry spices and the chopped parsley with salt to the food processor.
- Score the chicken breasts with a sharp knife and apply marinade generously (this can be done the night ahead and allowed to sit in the fridge--it makes the chicken to absorb all the flavours and will make it more juicy when cooked).
- CHICKEN:-.
- In a hot pan or a skillet roast every breast of chicken skin side down to get a golden color and then allow to cook in the oven for about 12-15 minutes.
- SAUCE:-.
- On the side prepare a sauce using the same pan add chopped shallots and deglaze the pan using white wine or lemon juice or just the chicken broth.
- Add the saffron allow to simmer for about 15 minutes and thicken with cornstarch check for seasoning.
- Finish with a 1 tablespoon of frozen butter (keep warm).
- SMASHED POTATOES:-.
- Boil potatoes in a large stock pot with sufficient liquid to cover the cover it completely till completely cooked.
- In a pan heat butter and add ginger, garlic and leeks and sauté till translucent.
- Add the buttermilk and allow to come up to temperature (do not boil as buttermilk will split).
- When potatoes are completely cooked, drain and allow to sit for 5 minutes.
- Add the buttermilk mixture an spinach leaves and mash with a potato masher.
- Season with salt.
- PLATING-.
- Scoop a portion of potatoes with a ice-cream mould or cookie cutter in the center of the plate.
- Place chicken breast on top.
- Drizzle sauce over the chicken breast and all over the plate.
- Could garnish with a fresh sprig of parsley or cilantro.

- Spatchcock chicken, sprinkle with salt
- Heat 1 TBSP oil in medium sauce pan; add chicken wing pieces and backbone. Cook stirring until browned about 10 min. Add carrot, celery, shallot and cook 4 minutes. Add wine and reduce. Add stock and bring to boil. Reduce for about 25 minutes. strain mixture
- while stock is reducing, heat 2 TBSP oil in cast iron skillet; arrange chicken skin side down and sprinkle with pepper. Cook about 20 min over medium high heat. Flip chicken and cooked to 160 degrees. Let rest until temp rises to 165.
- Return stock to pan and add butter. Stir in parsley and lemon juice. Season with salt. Serve chicken over polenta and pour source over.

- Season chicken, if desired, with salt and pepper. Melt 1 tablespoon I Can't Believe It's Not Butter!® spread in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked. Remove chicken from skillet and keep warm.
- Bring shallots, garlic and vinegar to a boil in same skillet over high heat and cook 2 minutes. Add broth and return to a boil. Reduce heat to medium and cook, stirring occasionally, 8 minutes or until liquid is reduced to about 1 cup. Remove from heat. Stir in remaining 2 tablespoons Spread with wire whisk.
- Meanwhile, combine olives with parsley in small bowl; set aside.
- Serve chicken over couscous, then top with sauce and olive mixture

- Preheat oven to 375 degrees. Spread chicken wings in a single layer on 2 large rimmed baking sheets; roast in oven until golden brown, 1 hour and 15 minutes to 1 hour and 30 minutes, turning every 30 minutes.
- Heat oil in a 20-quart stockpot over high heat. Add onions, carrots, celery, leeks, and celery root; cook stirring until caramelized, 10 to 15 minutes. Add tomato paste and cook, stirring until caramelized, 5 to 7 minutes. Add wine and cook until thick and syrupy.
- Place thyme, bay leaves, and peppercorns in a piece of cheesecloth; using kitchen twine, tie to enclose. Add cheesecloth packet to stockpot along with chicken wings and feet. Bring to a simmer over medium heat; simmer, uncovered, for 5 hours, skimming off impurities and fats that rise to the surface every 30 minutes. Strain through a fine mesh chinoise sieve into a large saucepan; simmer until reduced to 4 cups. Strain again and use immediately or let cool completely before storing in an airtight container, refrigerated, until ready to use.
