CROCK POT, SAVORY, GARLIC, SOUR CREAM CHICKEN
Another dish I just threw together one day, with things I had on hand in the pantry...the sauce is so good as a gravy over mashed potatoes, or rice. This is what for dinner tonight, at my kids request! The chicken will melt in your mouth..

Steps:
- Slice the onion into thin slices, layer on the bottom of a sprayed crock pot..then smash the cloves of garlic and throw them in with the onions.
- Wash the chicken, and lay them on top of the onions and garlic. salt and pepper the chicken, and sprinkle the garlic powder on the chicken.
- in a medium bowl, mix the soups, and the chicken stock. Now pour over the chicken. Put the lid on the pot, and cook on high for 1 hour,then turn the pot to low, and cook for 3 more hours. Check for tenderness, if the chicken is fork tender remove the chicken from the pot to a plate.
- Mix the sour cream into the soups and stir till combined, add the parsley. If the sauce is too thin,at this point I take 1 tbsp of flour and add just a tiny bit of water to make a paste. Whisk the paste into the sauce, it should thicken right up. Return the chicken to the pot, and keep warm till ready to serve. I like to serve this with rice, or mashed potatoes, using the sauce as gravy. A side of veggies, and you have dinner..
SOUR CREAM CHICKEN
I like this sour cream chicken because you can make it ahead of time. Simply chill the chicken and sour cream mixture together overnight. Then coat with bread crumbs the next day. - Nancy Stec, Upperco, Maryland

- Preheat oven to 350°. In a shallow bowl, combine first seven ingredients. Place bread crumbs in a separate shallow bowl. Coat chicken with sour cream mixture, then coat with bread crumbs., Arrange chicken on a rack in a foil-lined 15x10x1-in. baking pan. Bake, uncovered, 30 minutes. Drizzle with butter; bake 15-20 minutes or until juices run clear.

Steps:
- Bring large pot of water to boil & add salt.
- Add potatoes & cook until tender, about 15 minutes, then drain & set aside.
- Put butter in deep skillet or flameproof casserole dish, then turn heat to medium-high & wait about a minute for butter to melt.
- Add chicken, skin side down, & brown well, rotating & turning pieces as necessary, 10-15 minutes, then remove chicken from skillet & set aside.
- Reduce heat to medium-low & add garlic, scallions & dill, stirring until garlic is softened, about 1 minute.
- Add potatoes to skillet, stirring to coat with herb mixture.
- Add chicken pieces & stir again.
- Turn heat to low & add sour cream.
- Simmer another 10 minutes, before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat vegetable oil in a skillet over medium heat. Brown chicken on both sides and transfer to prepared baking dish. Season with salt, pepper, and paprika to taste.
- Combine mushroom soup, onion soup mix, sour cream, lemon juice, and dill weed. Pour over chicken.

This is one of my husband's favourite meals. The sauce is to die for and also goes great with a nice steak.

Steps:
- Cook fillets until brown, place in an ovenproof dish covered with foil and transfer to the oven to keep warm.
- In the same pan the chicken was cooked in, add garlic and stir over heat until fragrant.
- Stir in the mustard, cream and stock.
- Bring to the boil and simmer uncovered for approx 10 minutes until sauce reduces and thickens.
- Stir in chopped parsley.
- Serve fillets topped with garlic cream sauce and your choice of vegetables.

- Pat chicken dry, and season both sides with salt and pepper.
- In a medium bowl, stir together the sour cream, chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken and turn to coat. (Chicken can sit in the marinade for up to 8 hours. Refrigerate, then let come to room temperature before cooking.)
- In a shallow bowl or lipped plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.
- Working one at a time, press the chicken breasts into the panko, using your fingers to pack the panko onto both sides of the chicken, and place on a large plate or a sheet pan.
- Line a plate with paper towels. Heat 1/8-inch canola oil in a large skillet over medium-high. Drop a piece of panko in: If it sizzles, the oil's ready. Add a chicken cutlet (or two, if they can fit comfortably), and cook until golden brown, 3 to 5 minutes per side. Transfer to the paper towel-lined plate and sprinkle with salt. Repeat with remaining chicken, adding and heating more oil as needed, and removing excess panko from the pan with a slotted spoon.
- Serve chicken with more chives and lemon wedges for squeezing.
