I have a friend, George, who is an amazing cook. We sit by the phone waiting for a dinner invite from him. We went and had this delicious chicken at his house, and I was so amazed at how easy it was to fix. We're having it tonight for dinner! enjoy!

4 medium boneless chicken breasts
1/2 c ranch dressing (can be low fat also!)
2 tsp flour
1/4 c each, parmesan cheese and grated cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees. Mix ranch dressing, flour together. I use a small plastic container that I got when i purchased lunch meat at the grocery store.
  • 2. Dredge chicken breast in mixture, and place in 9x13 pan, or stoneware, and repeat. sprinkle the grated cheeses on top.
  • 3. place in oven, bake for 35-45 minutes until juices run clear. cheese on top should be slightly browned. I serve with salad and vegetables. Delicious and so so easy! Kids love this recipe too!@

I am posting this recipe to honor Judy- Jude and also for the "Cookathon" in memory of her (Jan. 09). One of her favorite chicken recipes was "George's Oven-Fried Chicken" and this is the other one. It was created by her father and I often call it KFC Judy D's Father's Recipe(s). Instant Potato Flakes are used and it has a nice taste.

1 (3 -4 lb) cut up whole chickens
1 egg
2 tablespoons milk
1 cup instant potato flakes
1 teaspoon garlic salt
1 teaspoon paprika
1/8 teaspoon cayenne pepper
1/4 cup grated parmesan cheese
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 400 degrees.
  • Wash chicken pieces and pat dry, set aside.
  • Beat egg and milk in a bowl.
  • In another bowl, mix potato flakes and the rest of the spices and parmesan cheese.
  • Melt butter in a shallow baking pan (13"x9"x2").
  • Roll chicken first in egg mixture, then in the potato flake mixture.
  • Next roll coated chicken pieces in the butter as you place them into the pan (skin side up).
  • Bake at 400 degrees for 45 to 50 minutes or until juices from meat run clear when pierced with a fork.
  • Note: If you use garlic powder just be sure to add 1 teaspoon of salt; Judy used seasoned salt per her dad's little crib note on the recipe. I often use more spices to make it taste a little like Kentucky Fried Chicken. This recipe was written up pretty much as I had received it from Judy. Enjoy!

4 skinless chicken pieces
½ cup Greek olive oil
1 lemon, juiced
1 ½ tablespoons freshly ground black pepper
1 teaspoon salt
1 ½ tablespoons dried oregano
1 dash cinnamon
1 dash poultry seasoning
½ cup olive oil for frying
1 lemon, cut into wedges

Steps:

  • In a medium bowl, combine chicken pieces with 1/2 cup olive oil, lemon juice, pepper, salt, oregano, cinnamon, and poultry seasoning. Allow the chicken to soak in the oil and seasonings for five minutes. In fact, rub the marinade into the chicken using your hands.
  • Heat 1/2 cup olive oil over low heat in a 1 1/2 inch deep frying pan with a lid to fit (to keep the juices in the chicken). Carefully lay the chicken pieces in the frying pan. Put the lid on the pan, and cook until chicken is done, about 20 minutes, flipping pieces occasionally. Increase heat to medium-high, and cook just long enough to make the outside of the chicken brown.
  • Serve hot, garnished with lemon wedges. Squeeze some lemon on the chicken for delicious added flavor.

2 1/2-3 lbs broiler-fryer chickens, cut up
1/4 cup shortening
1/4 cup butter or 1/4 cup margarine
1/2 cup gold medal flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper

Steps:

  • Heat oven to 425 degrees.
  • Wash chicken and pat dry.
  • Mix flour, salt, paprika, poultry seasoning and pepper.
  • Place in a 13"x9"x2" pan with shortening & butter in the oven, melt the shortening & butter.
  • Place chicken skin side down in melted shortening & butter.
  • Bake uncovered for 30 minutes.
  • Turn chicken; cook 30 minutes longer or until thickest pieces are fork tender and juices run clear when pierced.
  • NOTE:. This recipe is basically written as is, which I had received from Judy. She has also substituted skinless chicken pieces. And I have often added more spices, to make it similar to Kentucky Fried Chicken -- and used boneless chicken as well. Enjoy, it is a very good recipe and a withh a nice KFC taste as well.

1 1/2 pounds chicken
1 packet fajita seasoning
2 green peppers, sliced
2 red peppers, sliced
1 medium onion, sliced
2 teaspoons olive oil
1 package tortilla
Shredded cheese
Salsa

Steps:

  • Cut chicken into strips and marinate with fajita seasoning in a plastic bag. Preheat the George Foreman grill until the indicator light turns off, and cook the strips for 6-8 minutes or until cooked through. Coat peppers and onions with olive oil and grill for 5 minutes or until done. Line a tortilla with strips, cheese, salsa, peppers, and onions - be careful not to overfill! Fold in half and place on grill, making sure the open side is facing up so the fillings don't run down the incline. Cook 3-5 minutes until slightly browned, and serve with sour cream.

This is a very good, but quick recipe. You can do these in a frying pan, but the George Foreman grill does it so much better! One night I was making these, and the thought of using the grill came to me. The family loves them.

2 green peppers
2 red peppers
1 medium onion
1 1/2 lbs chicken or 1 1/2 lbs steak
shredded cheese
salsa
1 (1 lb) package tortilla (fajita size)
seasoning (your preference, or an packet of fajita seasoning)
1 teaspoon oil

Steps:

  • Heat up George Foreman grill.
  • Slice onions and peppers into thin strips.
  • Saute in large frying pan with oil.
  • Cut steak or chicken into small strips.
  • Cook to your liking in a large pan.
  • Put a small amount of meat in tortilla, a small amount of the onion pepper mixture, a sprinkle of cheese, and a dab of salsa.
  • Be careful not to overfill!
  • Fold in half and place on George Foreman grill.

4 ounces sage derby cheese, cut into 4 equal pieces
fresh ground black pepper
8 slices bacon or 8 slices streaky bacon
2 tablespoons butter

Steps:

  • For each breast, remove the loose fillet from the underside and flatten that, along with the breast, between sheets of plastic wrap, using a rolling pin or mallet.
  • Place a piece of cheese on each breast and cover with the fillet; season well with the pepper and make sure the chicken wraps around the cheese.
  • Preheat oven to 400 degrees F.
  • Cut the bacon in half lengthwise; use 4 pieces to wrap around each packet the long way.

This is a recipe from a book published by Ford Motor Company in 1954. The recipe is from a famous eating establishment called Fraunces Tavern that is located in New York. The tavern was built in 1719 and takes its name from Samuel Fraunces, the tavern's original proprietor, who was steward to George Washington. Washington's farewell to his officers took place here on December 4, 1783. Today the tavern still doles out food and drinks. A museum is also maintained here. GEORGE'S WHITE CHICKEN CHILI RECIPE

Carrol Shelby's White Chicken Chili Mix 1 box
1 1/2 lbs boneless skinless chicken breasts
1 1/2 cups chicken broth
1 7oz can diced chilies
1 bag frozen white corn
2 15oz cans Great Northern white beans
1 lb Jack cheese, shredded
1 onion

Steps:

  • Follow the basic instructions on the box. After the chicken cooks a bit I add the onion and chilies and cook them both together. Cut the amount of water in half and use the chicken broth for the other half. Add the corn and shredded Jack when you add the packets. The cheese takes a lot of stirring to get it mixed in. Use the cayenne packet to taste, I use about half. I use half the Massa packet, but that is cooks preference depending on how thick you want the final product. I found it takes longer than the 15 minute uncovered period to obtain the thickness I like.
