CHICKEN FAJITA TORTILLA SOUP

2 tablespoons extra-virgin olive oil
2 packages chicken tenders, 1 1/2 to 2 pounds
1 tablespoon coriander, a palm full
2 tablespoons chopped fresh thyme leaves, 5 to 6 sprigs
Salt and freshly ground black pepper
1 large onion, quartered and thinly sliced
1 large bell pepper, quartered and thinly sliced
1 jalapeno, seeded and thinly sliced
One 28-ounce can fire roasted diced tomatoes
1 quart chicken stock
1 bag white corn tortilla chips
1 cup shredded Pepper Jack or sharp white Cheddar
1 ripe avocado, diced
1 lime, juiced
4 scallions, chopped
Handful fresh cilantro leaves or fresh flat-leaf parsley, chopped

Steps:

  • Heat a large skillet with extra-virgin olive oil, 2 turns of the pan, over medium-high heat. Add chicken, begin to brown 4 minutes, add coriander, thyme, salt and pepper, to taste, onions, bell pepper and jalapeno, season with salt and pepper, to taste. Cook 8 to 10 minutes, stirring frequently. Add tomatoes and stock, heat through.
  • While the soup is working, lightly crush some tortilla chips and divide among 4 bowls. You need a couple of handfuls per bowl. Top the chips with a little cheese. Toss the avocado with lime juice. Top the chips with ladles of soup. Garnish soup with avocado, scallions and cilantro or parsley.

6 flour tortillas
2 tablespoons oil
3 bell peppers, sliced
1 large white onion, sliced
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon salt
2 lb rotisserie chicken, shredded
10 slices cheddar cheese, halved
10 slices pepper jack cheese, halved
sour cream, for serving
guacamole, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C). Grease a bundt pan with nonstick spray.
  • Invert a 3-inch (8-cm) diameter bowl in the center of two tortillas. Use a knife to cut around the bowl and discard the centers.
  • Invert a 2-inch (5-cm) diameter bowl in the center of two tortillas. Use a knife to cut around the bowl and discard the centers.
  • Invert a 1½-inch (4-cm) diameter bowl in the center of one tortilla. Use a knife to cut around the bowl and discard the center.
  • Heat the oil in a medium skillet over medium-high heat. Add the bell peppers and sauté until softened, about 5 minutes. Add the onion and toss to combine.
  • Add the chili powder, cumin, garlic powder, and salt. Toss to combine.
  • Add the chicken and cook until the onions are translucent and the chicken is warmed through.
  • Place one of the tortillas with the 3-inch (8-cm) hole on the bottom of the greased bundt pan. Arrange a layer of cheddar cheese slices around the tortilla.
  • Stack the second tortilla with a 3-inch (8-cm) hole over the cheese layer. Top the tortilla with half of the fajita mixture.
  • Layer one of the tortillas with a 2-inch (5-cm) hole on top of the fajita layer. Top with a layer of Pepper Jack cheese.
  • Layer the second tortilla with a 2-inch (5-cm) hole on top of the Pepper Jack layer. Add the remaining fajita mixture.
  • Layer the tortilla with a 1½-inch (4-cm) hole and top with the remaining cheddar and Pepper Jack.
  • Layer the last tortilla on top of the last cheese layer.
  • Cover the top of the bundt pan with a 12-inch (30 ½-cm) round cake pan or aluminum foil and bake for 45 minutes.
  • Let cool for at least 30 minutes.
  • Invert the bundt pan onto a cutting board.
  • Slice the Chicken Fajita Party Ring and top with sour cream. Serve with guacamole.

1 ounce fajita seasoning mix (1 packet)
1 ounce taco seasoning (1 packet)
2 tablespoons chopped fresh thyme leaves (5 to 6 sprigs)
salt & freshly ground black pepper
1 large onion, quartered and thinly sliced
1 large bell pepper, quartered and thinly sliced
1 jalapeno, seeded and thinly sliced (I did NOT seed my jalapeno)
28 ounces diced fire-roasted tomatoes (I used two 14.5oz cans of Hunt fireroasted diced tomatos)
1 quart chicken stock
12 ounces white corn tortilla chips (1 bag)
1 cup shredded monterey jack pepper cheese (I used Monteray jack) or 1 cup sharp white cheddar cheese (I used Monteray jack)

6 spinach tortillas
2 tablespoons butter, melted
1 tablespoon canola oil
1 pound boneless pork loin chops, cut into thin strips
1 envelope fajita seasoning mix
1 medium onion, thinly sliced
1 medium sweet red pepper, thinly sliced
1 medium green pepper, thinly sliced
4-1/2 cups shredded lettuce
1 medium tomato, chopped

Steps:

  • Place six 10-oz. custard cups upside down in a shallow baking pan; set aside. Brush both sides of tortillas with butter; place in a single layer on ungreased baking sheets. , Bake, uncovered, at 425° for 1 minute. Place a tortilla over each custard cup, pinching sides to form a bowl shape. Bake for 7-8 minutes longer or until crisp. Remove tortilla from cups to cool on wire racks., In a large skillet, heat oil over medium-high heat. Combine pork and seasoning mix; add to the skillet. Cook and stir until meat juices run clear. Remove pork with a slotted spoon., In the drippings, saute onion and peppers until crisp-tender. Place lettuce in tortilla bowls; top with the pork, pepper mixture and tomato.
