1 tube (11 ounces) refrigerated thin pizza crust
1 package (8 ounces) cream cheese, softened, cubed
1 cup shredded Mexican cheese blend, divided
2 teaspoons ground cumin
1-1/2 teaspoons garlic powder
1/2 teaspoon salt
2 cups ready-to-use fajita chicken strips, cubed
1/2 cup salsa
1/4 cup green enchilada sauce
Optional toppings: Shredded lettuce, chopped tomatoes and sliced ripe olives

Steps:

  • Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 5 minutes., Meanwhile, in a small saucepan, combine cream cheese, 1/2 cup cheese, cumin, garlic powder and salt over medium heat; cook and stir for 5 minutes or until blended. Remove from heat. Add chicken; toss to coat. , Spread over crust. Drizzle with salsa and enchilada sauce; sprinkle with remaining cheese. Bake until crust is golden and cheese is melted, 8-12 minutes longer. Serve with toppings of your choice.

1 pkg (13.8 oz/283 g) refrigerated pizza crust
1/2 medium onion
1 jalapeño pepper
8 oz (250 g) Colby & Monterey Jack or marble cheese blend (about 2 cups/500 mL grated), divided
2 cups (500 mL) diced cooked chicken breasts
1/2 cup (125 mL) mild green taco sauce
3 garlic cloves, pressed
1/2 cup (125 mL) grape tomatoes
1/2 cup (125 mL) loosely packed fresh cilantro

Steps:

  • 1. Preheat oven to 425°F (220°C). Lightly brush Large Bar Pan with vegetable oil using Chef's Silicone Basting Brush. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Bake 12–-14 minutes or until crust is golden brown. 2. Meanwhile, coarsely chop onion and jalapeño with Food Chopper. Grate cheese with Ultimate Mandoline fitted with grating blade. In Classic Batter Bowl, combine onion, jalapeño, 1/2 cup (125 mL) of the cheese, chicken, taco sauce and garlic pressed with Garlic Press; mix well using Small Mix 'N Scraper®. 3. Remove pan from oven to Stackable Cooling Rack. Sprinkle 1 cup (250 mL) of the cheese evenly over crust; top with chicken mixture and remaining cheese. Bake 6-–7 minutes or until crust is deep golden brown and cheese is melted. Remove pan from oven to cooling rack. 4. Slice tomatoes lengthwise into quarters using Utility Knife. Coarsely chop cilantro. Sprinkle tomatoes and cilantro over pizza. Cut pizza into 12 rectangles with Pizza Cutter. Serve using Mini-Serving Spatula. 1 loaf (1 pound) frozen bread dough, thawed
4 ounces string cheese
2/3 cup chopped onion
1 tablespoon canola oil
2 cups cubed cooked chicken
1 can (4 ounces) chopped green chilies
2 tablespoons taco seasoning
1/2 cup enchilada sauce
1 cup shredded part-skim mozzarella cheese
1 cup shredded Mexican cheese blend

Steps:

  • On a lightly floured surface, roll dough into a 15-in. circle. Transfer to a greased 14-in. pizza pan. Cut string cheese in half lengthwise; place around edge of pan. Fold excess dough over string cheese; pinch to seal. Prick dough thoroughly with a fork. Bake at 350° for 5 minutes. , Meanwhile, in a large skillet, saute onion in oil for 3-4 minutes or until tender. Add the chicken, green chilies and taco seasoning; cook 2-3 minutes longer or until heated through. , Spread enchilada sauce over crust. Sprinkle with mozzarella cheese and chicken mixture; top with Mexican cheese. Bake 18-20 minutes longer or until cheese is melted and crust is golden brown.

This is a recipe I got from hosting a Pampered Chef party last year. After everyone at the party loved it, I knew I had to add it into our rotation at home. Great flavors and can be adjusted for personal preference. Plus very easy. Since I don't have every PC item used, I omitted the product names in the actual recipe.

1/2 cup green taco sauce
3 garlic cloves, minced
1/2 cup grape tomatoes
1/2 cup cilantro, loosely packed
1 (13 7/8 ounce) can Pillsbury refrigerated classic pizza crust
1/2 medium onion
1 jalapeno pepper
1 1/2 cups Kraft Shredded Monterey Jack Cheese
2 cups cooked chicken breasts, cubed (I use boiled chicken breast, but could easily use a store bought rotisserie)

Steps:

  • Preheat oven to 425.
  • Unroll pizza dough onto greased metal 9X13 baking pan or large round pizza pan.
  • Gently press and stretch dough to cover pan.
  • Bake pan with pizza dough 10-14 minutes, or until golden brown.
  • While dough is baking, coarsely chop onion and jalapeno (remove seeds).
  • In medium bowl, combine jalapeno, onion, 1/2 of the cheese, chicken, taco sauce and garlic. Mix well. (if a little dry feel free to add more taco sauce).
  • Once pizza dough is done, sprinkle other half of cheese over crust, then top with chicken and cheese mixture evenly. If desired sprinkle additional cheese over top of chicken mixture.
  • Bake another 5-7 minutes or until cheese is melted and dough is deep golden brown.
  • While pizza is baking, slice tomatoes lenghtwise into quarters and chop cilantro. Sprinkle tomatoes and cilantro over finished pizza as desired.

1 package (17.3 ounces) frozen puff pastry, thawed
6 tomatillos, husks removed, quartered
2 cans (4-1/2 ounces each) chopped green chilies, divided
1/2 cup minced fresh cilantro, divided
2 cups shredded cheddar cheese
1 medium red onion, chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon olive oil
3 garlic cloves, minced
6 ounces sliced deli chicken, chopped
1/2 teaspoon ground cumin
1/8 teaspoon ground coriander
1/4 teaspoon ground ancho chili pepper
1/3 cup sour cream
1 teaspoon Louisiana-style hot sauce with lime

Steps:

  • Unfold puff pastry sheets and place on greased baking sheets. Bake at 400° for 12-15 minutes or until lightly golden brown., Broil tomatillos 4-6 inches from the heat for 5-10 minutes or until skins are golden brown; cool completely. , Place 1 can green chilies, 1/4 cup cilantro and tomatillos in a food processor; cover and process until blended. Spread over puff pastry crusts and sprinkle with cheese., In a large skillet, saute onion and jalapeno in oil until tender. Add garlic; cook 1 minute longer. Stir in the chicken, cumin, coriander and remaining green chilies; heat through. Stir in remaining cilantro. Spoon mixture over cheese. DOUGH/CRUST
1 cup warm water
1-1/4 teaspoons active dry yeast
1/2 teaspoon sugar
1 teaspoon salt
1-1/4 cups all-purpose flour
1-1/4 cups whole wheat flour
CHICKEN MIXTURE
2 cups rotisserie chicken, chopped (or use leftover chicken)
1/2 package fajita seasoning mix
1/2 cup chicken broth, low sodium
1/2 jalapeño, seeded minced
1 (7oz) can mild diced chilies
1 (14.5 oz) can ranch beans, well drained of liquid
GREEN ENCHILADA SAUCE
1 (12oz) can green enchilada sauce (or homemade)
1 tablespoon cornstarch
TOPPINGS
10 cherub tomatoes, cut length wise in half (or use other variety, but seed them)
1/2 can black olives, sliced
3-4 green onions, chopped
1 yellow/orange pepper, seeded and chopped
1 cup monterey jack cheese, shredded
3/4 cup mozzarella cheese, shredded
fresh cilantro, finely chopped
OPTIONAL
avocados
lettuce
salsa/taco sauce
sour cream, light/fat free

Steps:

  • 1. In a small measuring cup, heat water to 115°F. Dissolve yeast and sugar in water, allow yeast to proof. Add flour and salt to the bowl of a stand mixer with dough hook attached. With mixer running on low, slowly add yeast mixture. If needed, add 1-2Tbsp olive oil to dough. Shape into a smooth ball and transfer to a lightly greased large bowl. Cover and allow to rise in a warm location until doubled in size, roughly one hour.
  • 2. In a large skillet, heat chopped chicken. Add fajita seasoning (only 1/2 a package or about 2-3 tablespoons). Simmer for about 5 minutes. Add jalapeño, chilies, and drained beans. Heat through. Set aside.
  • 3. Preheat oven to 425 degrees. Reserve 1/3 cup of enchilada sauce in a small bowl. In a small saucepan, heat remaining enchilada sauce to a boil. To the reserved enchilada sauce, whisk in cornstarch. When sauce in pan is boiling slowly add cornstarch sauce, whisking until thick and bubbly. Turn to low, stirring occasionally.
  • 4. Lightly grease a round pizza pan. Gently press the proofed dough into the pan. With a fork, poke holes all over the crust ( this is to help prevent bubbles). Bake for 10 minutes in preheated oven. Remove from oven and proceed with toppings.
  • 5. Layer green enchilada sauce, 1/2 cup Monterey Jack cheese, carefully scoop chicken mixture over cheese (make a thin layer over all over pizza), generously sprinkle peppers, green onions, and olives over entire pizza. Top with remaining cheese and chopped fresh cilantro.
  • 6. Bake for 8-10 more minutes or until the cheese is melted. Remove from oven and let sit 5 minutes. Serve with chopped avocado, lettuce, salsa/taco sauce, and sour cream!

SOUR CREAM & CHICKEN ENCHILADA PIZZA



Sour Cream & Chicken Enchilada Pizza image

1 can creamy chicken Verde soup
8 oz container sour cream (divided in half)
4 oz can diced green chili (divided in half)
1 prepared pizza crust
1 lb bag shredded Kraft Monterey Jack Cheese
1 cup cooked chicken breast, cubed

Steps:

  • Preheat oven to 450°F. In a small saucepan combine creamy chicken Verde soup, half of the sour cream, and half of the diced green chili, until heated through.
  • Place prepared pizza crust onto an ungreased pizza pan. Spread sauce mixture on top of crust all the way to the edges. (You may have some remaining sauce left over). Top the sauce covered crust with 3/4 of the Kraft Shredded Cheese, cubed chicken breast, and the remainder of the diced green chili. Then finish with topping with the remainder of the shredded cheese.
  • Bake for about 12 minutes. Let cool for about 5 minutes and then slice. Top with remaining sour cream (optional).
